Mango Ice-cream Recipe

(Stuffed mango ice-cream)

Mango Kulfi: Stuffed Mango Icecream: Kulfi in a mango:Β Mango IcecreamΒ is basically rabri filled inside the mango. So, basically, the idea behind this unique version of kulfi is to have a different flavor in each bite. When you have the first bite of this ice cream, you feel the real taste of mango and when you take the second bite, you feel the fusion of kulfi and mango which will increase the level of taste.

Mango IcecreamΒ is one of the most common icecreams which our mothers used to make as the availability of this King of fruit is high during summers. There are a lot of variations in this icecream like some make it by adding cornflour, some make mango shake and then deep-freeze it to set but this kulfi in a mango version is a little different and much tastier as well.

I saw this type ofΒ Mango IcecreamΒ in the market in my hometown. A shopkeeper is cutting down pieces of mango, I curiously saw and strange that he had cut down the seed also and people are enjoying it. Then my mother told me the procedure. This incident happen when I was 10 years old.Β From that time I always want to make this. Now, during every Mango season, I prepared it about 5-6 times and narrates the story to my husband every time.

Let us discuss the recipe in detail: Firstly,Β Use full-fat milk then only it enhances the flavors of Rabri. While making Rabri, I add Bread Crumbs to have instant Rabri but you can skip it and follow the traditional method to make rabri.

Secondly,Β Use of flavors totally depends on you, whether you want to use cardamom powder, rose water, or kewra water. All three tastes are good. Along with flavors, these have a nice aroma as well.

Thirdly,Β Make sure to place the mango correctly in the freezer, it is better to put mango in a glass and then in a freezer. Also, once it sets properly, take it out 5-6 minutes before cutting.

Last but not least,Β this much icecream is sufficient for 2 persons. So, adjust the quantity as per the number of people. Some of the amazing mango desserts are listed below:

Step by step instructions

  • Take milk in a wok and bring it to boil on high flame.
  • Once it starts boiling, reduces the flame to medium. Scrap the sides. Reduce the milk to half.

  • Meanwhile, add green cardamoms to it. This will enhance the taste.

  • As the milk starts thickening, add sugar to it. Mix well.

  • Add chopped nuts. This step is optional. If adding, make sure to chop them finely.

  • Now, add bread crumbs to it. This will immediately give a thick texture to the milk.
  • When the milk reaches the desired thickness, turn off the flame. Allow it to cool down completely.

  • Take a mango, cut its top part. Keep it aside.

  • With the help of a knife, cut slowly from the sides of the seeds. We have to remove the seed without cutting the mango.

  • With thumb and first finger, remove the seed. It will be a little difficult for the first time.

  • Rabri cooled down completely.

  • Fill it in the mango.

  • Cover the mango with the top. Keep it in the freezer for 6 hours or till set.

  • After 6 hours, take the mango out from the freezer. Remove its peel.

This nectarine fizz is perfect to celebrate new beginnings. The combined flavours of sweet nectarine, lemon and mint are delicious to be served in a mocktail or spiced up to be a cocktail version.
Every new year brings something different, new learning. It is the anticipation that keeps us going. The Learning spirit and the overall smiles that come out of it. I look forward to this part of the year when get my loved ones talking and good vibes going. To celebrate this time,Β  we have nectarine fizz. It is a simple drink made with fresh nectarine, mint, simple syrup and sparkling water.

Understanding nectarines

The smooth-skinned slightly tangy sweet fruit that classically appears during summer is the nectarine. This soft stone fruit is similar to peaches. What they miss is the fuzzy skin. This prunus species is slightly smaller than a peach in size with soft flesh. Usually, you get them as yellow flesh or white flesh both taste almost the same.

How to choose a nectarine?

Nectarines are soft fleshed sweet fruit. This is under the category of stone fruits. The red-skinned fruit is firm to hold, but the ripe fruit is slightly yielding to a small press. You can also look for the freaked look on the skin for the ready-to-eat ones.

Ingredients for the nectarine fizz.

Nectarine: chooses your nectarine, wash and slice off the flesh. The seed is kind of clingy but hard. Remove it. You will need about half a nectarine per person for this stonefruit mocktail.
Mint leaves:Β  the freshness of the fizz is from the mint. If you don’t have any choose rosemary and add this while boiling the simple syrup to flavour it.
Simple syrup: this is a boiled solution of one part sugar and one part water. This is easier to use than stirring sugar without diffusing the soda! If you are using rosemary then add a couple of stalks to the boiling syrup to infuse. Cool and store it in the fridge.
Club soda: infused carbonated water what I have used. It has a slight tang with a touch of saltiness. You can use sparkling water in its place.Β

Ingredients

  • 1 medium necatrine
  • 1.5 tbsp simple syrup
  • 1.5 tbsp lemon juice
  • soda water
  • ice cubes

Instructions

  • Slice the flesh of the seed and add the soft flesh to the blender.
  • Add the simple syrup, lemon juice and mint leaves and blend smooth.
  • Add ice to the serving glass and pour 1/4 of the content into the glass.
  • Pour the soda water over, till it is almost full.
  • Stir gently.
  • Share with family and friends and enjoy.

We are putting a platter together to nibble as we watch the fireworks. On the platter, we have crackers, sliced Foccacia, cream cheese with chives, strawberries,Β  some blackberries, grapes, olives and sundried tomato and cashew dip. The nectarine fizz drink will go well with it. So that’s our plan.
