Dates paan recipe – Must try paan recipe for this festival season. No cook dates paan recipe using betal leaves | Vethalai, gulkand, and other easily available ingredients.

Usually, I make one paan dish for all my guests when I host any big gatherings at home. This year, when we had Maha Periyava Paduka Pooja at home, I made this Dates paan for my guests. It was a huge hit among all. Our friend who runs a restaurant here got so impressed, asked me to make dates paan for a big event hosted at their restaurant. Yet another huge hit.

I also made this for Varalakshmi Pooja and everyone loved it. As Navaratri is approaching, I thought of sharing this recipe with you all. So that you can make this for the guests. All you need is good-quality dates, tutti frutti, gulkand, and store-bought Mukhwas. You can make this in advance and store it in the refrigerator.

Ingredients

  • 3 paan leaves | vethalai| betel leaves
  • 18 Pitted dates
  • 2 tbsp gulkand | rose petal jam
  • 2 tbsp tutti fruiti
  • 2 tbsp mukhwas | mouth freshner

Instructions

  • I used this mixed mukhwas for this
  • In a bowl add the mukhwas, you can add sweetened fennel seeds, jeera mittai, supari
  • I used 4 varieties
  • Add 2 tbsp tutti fruiti
  • Add 2 tbsp Gulkand | Rose petal jam
  • Wash the paan leaves well and pat dry them. Take out the stem part and finely chop it. I used 3 medium sized paan leaves, do not add more
  • Mix well
  • Filling is ready
  • Take one pitted dates
  • Stuff little filling into it
  • Close it
  • Repeat for the rest
  • Dates paan is ready

3. I have once added slightly crushed M & M and skipped the mukhawas. Kids enjoyed this version.

Apple almond kheer is a delightful no sugar added Indian style dessert fit for any festival. Flavoured and thickened with almond flour it is a quick and easy recipe that is perfect for beginners.

I amΒ  not good when it comes to viral recipe trials. By the time I decide buy the ingredients and try it, the trend is over!
Clearly,it needs much more devotion and promptness. So that is an area we shall leave it to the enthusiastic experts. However there is one recipe I have been wanting to try and was waiting for the apple season to come. Enjoy my version of the apple kheer with no added sugar.Β 

What is apple kheer?

Made with full fat milk that’s slow cooks rice grits,Β  kheer is a must tryΒ  dessert. This is traditionally served in festivalsΒ  and grand IndianΒ  weddings. We have added a whole collection of kheer in our post- Payasam pathaman and kheer
Apple kheer a fusion dessertΒ  that embodies the idea of a kheer but has apples and almond flour to flavour and thicken. It is not a super sweet version , rather one to share at dinners or home gatherings.

Is this diabetic friendly apple kheer?

I make this with no added sugar or sweetener, just the sweetness from the apples making it a bit more on the diabetic friendly Indian dessert side. Please be aware that the apples are sweet enough, so moderate the portion size.

Ingredients to make almond apple kheer

Apple: crunchy sweet apples are the base flavour for this kheer. Personally, I like pink lady or red apples to make this kheer. I would avoid tart green apples as they can be too sour and may split the milk.

Butter or ghee:To kick off the caramelization and the colour on the apples, unsalted bautter or a small amount of ghee is helpful.You can use coconut oil if you are making it vegan.Β 

Almond flour: the almond flour gives a rabdi like feeling to the kheer. I use the blanched almond flour. If you don’t have these you can grind a few almonds or soak them and grind with the milk. Instead of almonds you can used any nuts of your preference like cashews, pistachios. Melon seeds or puffed makhana(lily seeds) powder also taste good and thicken the kheer easily.

Milk: full cream milk is best suited for this recipe. It has the right consistency and doesn’t easily split the milk when adding the sauteed apples. I would avoid almond milk to make this kheer among the plant based ones as it easily splits. You could use coconut or soy as well.

Sweetener: I have actually not added any in this recipe as the apples were super sweet and we like a mild sweetness for our kheer. You can add sugar as the milk boils. If adding jaggery syrup or maple syrup add it after you remove from heat. Alternatively date paste will be lovely in this kheer.

Spices: the common sweet spices used in Indian desserts are saffron and cardamom. I have used a few strands of saffron and powdered cardamom to finish the recipe.

Let’s make almond apple kheer

It does take a few steps to make this kheer, however, it is not a hard recipe to follow some absolutely recommend beginners to try it.

To prep the Apple: the Apple can be chopped like I have done or grated to have a smoother kheer. It is optional to peel the apple as this will be all about mouth feel. I leave the peels in as it gives a good bite.Β Once prepped add the apples to a pan with a touch of unsalted butter. On a low heat let this mix cook down and caramelize. Ensure that this is a low heat process. You can cover the apples for a minute if you feel they are dry. This captures the water from the juices allowing the apples to steam.

Boil the milk: in a separate sauce pan,Β  boil the milk. As it bubbles and boils, stir in the almond flour.
Thicken the milk the almond flour is the thickening agent. When the milk has started boiling and rising a bit, lower the heat to a simmer. Sprinkle the almond flour on the boiling milk. Stir well ensuring it is lump free. Let this cook down for about 5 to 6 minutes with stirring in between.

Add the apples: add the cooked apples into the mix and mix well. You can take off the heat at this point.

Flavouring the kheer: sprinkle cardamom powder and a few kesar strands and mix well.Β  At this stage my kheer is done. If you prefer to add sugar or jaggery syrup do so at this stage and mix well.

Ingredients

to caramelize the apples

  • 2 medium apples sweet variety
  • 1 tsp ghee

to make the kheer

  • 3 cups milk
  • 2 tbsp almond flour.
  • 1 small green cardamom
  • 2-3 strands saffron

Instructions

  • Wash and chop the apples into small bits ( or grate them).
  • Add these into a frying pan along with a tsp of ghee.
  • Set this on a low heat and let this slowly cook and caramelize.
  • Saute this a few minutes once so it does not catch the bottom.
  • Into the saucepan add the milk and boil on a low heat.
  • Once it bubble up and boils stir in the almond flour with now lump and let this cook down on a simmer.
  • Add the cardamom and saffron at this stage.
  • When the almond flour swells and reaches a rabdi consistency, add the caramelized apples and remove from heat.
  • Mix well and let the kheer sit for 10 minutes.
  • You can serve the warm kheer at this point or cool and chill for later.

Is this a vegan kheer?

If you are using plant based milks the recipe can easily be turned vegan. Coconut milk or soy tastes good. For sauteeing and caramelizing the butter, coconut oil is best.Β 

Can we make this with other fruits?

Of courseΒ  you can change the fruits to make a variety of kheer. Mango ,jackfruit or plantain banana will be my first choice.
You can try dates and dried figs too. When using sweet dry fruits adjust the sugar accordingly.

Kavuni arisi Sakkarai Pongal – Karuppu kavuni arisi sakkarai pongal – Traditional South Indian sakkarai pongal made using black rice with step by step pictures and short video

Karuppu kavuni arisi is known for its health benefits. It has a unique purplish hue and is very rich in nutrition. We usually make sakkarai pongal using raw rice or sometimes with millet, samba wheat, or aval. I have posted Kavuni Arisi Curd Rice recipe on my Instagram page and YouTube channel.

Kavuni arisi is usually soaked overnight before cooking, as it has a hard texture. But in this recipe we are pulsing the rice into kurunai and cooking it immediately. The rice gets cooked in this way, without soaking. This recipe is similar to the popular Chettinad Kavuni arisi sweet.

I have posted a recipe for kavuni arisi payasam, and I even made it for a big group of guests a few months back. It was a huge hit among the guests. It is long overdue to post karuppu kavuni arisi dosai and appam on jeyashris kitchen. Do try this Karuppu kavuni arisi sakkarai pongal for neivedyam and let me know how it turned out.

Ingredients

  • Β½ cup karuppu kavuni arisi
  • 2 tbsp yellow moong dal
  • 2 cups water to cook the rice
  • ΒΎ cup jaggery
  • Β½ cup water to melt the jaggery
  • 2-3 tbsp ghee
  • ΒΌ tsp cardamom powder
  • A tiny pinch edible camphor
  • Few cashew nuts

Instructions

  • In a bowl add Β½ cup black rice
  • Add water and wash well 3-4 times
  • Drain the water and pulse this 3-4 times
  • Transfer it to a bowl
  • Add 2 tbsp yellow moong dal and add add 2 cups of water
  • Pressure cook for 6-7 whistles in medium flame.
  • Once done mash this well
  • In a pan add ΒΎ cup jaggery and add Β½ cup water
  • Let the jaggery dissolve, filter the impurities.
  • Add the cooked and mashed black rice to the pan
  • Mix well
  • Add ΒΌ tsp cardamom powder and add 1-2 tbsp ghee
  • Mix well.
  • Let this boil for a minute
  • Add a tiny pinch of edible camphor
  • Add ghee roasted cashew nuts
  • Mix well
  • Switch off the flame
  • Kavuni arisi sakkarai Pongal is ready

β€’ No need to soak the rice, since we are pulsing the rice, it gets cooked fast.
β€’ The jaggery quantity was perfect, you can add 1-2 tbsp extra if you want it sweeter.

  • In a bowl, add Β½ cup black rice

  1. In a heavy-bottomed pan, heat the ghee on medium heat. Add the desiccated coconut and roast it lightly for about 2-3 minutes. Stir continuously to ensure it doesn't burn. The coconut should just start to turn golden and release its aroma.
  2. Lower the heat and add the sweetened condensed milk to the roasted coconut. Mix well until the coconut and condensed milk are thoroughly combined.
  3. Add the cardamom powder to the mixture. Continue to cook the mixture on low heat, stirring constantly, until it thickens and starts to leave the sides of the pan. This should take about 5-7 minutes.
  4. Remove the mixture from heat and let it cool slightly. It should be warm but cool enough to handle with your hands.
  5. Grease your palms with a little ghee to prevent sticking. Take small portions of the mixture and roll them into smooth, round balls.
  6. Roll the shaped ladoos in the extra desiccated coconut to coat them evenly.
  7. Allow the coconut ladoos to cool completely. They will firm up as they cool. Store them in an airtight container. They can be kept at room temperature for a couple of days or refrigerated for longer shelf life.

  • Ensure you stir the mixture continuously while cooking to prevent it from sticking to the pan and burning.
  • If the mixture feels too dry, add a little more condensed milk. If it’s too sticky, incorporate some extra desiccated coconut.

Karthigai Deepam is a highly celebrated festival in Southern India, particularly in Tamil Nadu. It is a time for people to honour Lord Shiva as a divine flame during the Tamil month of Karthigai (November-December). This festival is also known as the Festival of Lights and is a grand affair.

As part of the celebration, people illuminate their homes with lamps to symbolize the triumph of light over darkness and ignorance. It is a beautiful sight that fills everyone’s hearts with hope and inspiration. The day is marked with prayers, rituals, and the lighting of a massive lamp on the hill of Arunachala in Thiruvannamalai, an awe-inspiring sight.

Sweet Karthigai Adai is a delectable treat that adds to the joy of the festival. It is prepared with great care and devotion, using rice, lentils, jaggery, coconut, and cardamom.   1. Add rice, toor dal, and chana dal in a bowl. Add enough water and wash it thoroughly 2 to 3 times. Add fresh water and soak rice and dal for 2 to 3 hours.
  2. Once soaked, transfer rice and dal to a mixer jar. Add little water and grind it to a smooth paste.
  3. To the batter, add salt, jaggery, cardamom powder and grind to a smooth batter.
  4. Transfer the batter to a bowl. Add coconut bits and mix all thoroughly. Adjust the batter consistency if required.
  5. Adai is usually made thick. If you want thinner adai, add the water and make it like crispy dosa.
  6. Heat a pan, pour a ladle of batter, and spread it in a circular motion, as shown. Drizzle a spoon of ghee. Let it cook.
  7. Now flip to the other side and drizzle another spoon of ghee. Once cooked again, flip to the first side and cook for a few more minutes till it gets crispier. Now transfer to a plate. Vella adai is ready.
Recipe Notes
  • Soak lentils and rice for at least 2-3 hours.
  • Grind the batter to a smooth paste, and keep it slightly thicker than the dosa batter consistency.
  • Adai can be made immediately after grinding. You need not ferment the batter.
  • If you want to use the remaining batter, refrigerate it for later use. (approx two days)

Delicious Karthigai Vella Adai is ready to serve God as Prashad.

Karupatti Mysore Pak is a delicious and unique variation of the traditional Indian sweet Mysore Pak. What sets it apart is the use of karupatti, which is a type of palm jaggery made from the sap of palm trees. This rich, dark jaggery imparts a distinct flavour and aroma to the Mysore Pak, making it a favourite among those who appreciate traditional South Indian sweets.

There are so many varieties of Mysore Pak nowadays available in shops, and Karupatti Mysore Pak is one of them. So this time, I wanted to try this recipe for the upcoming Diwali. I am glad that I gave it a try, and this turned out to be super yummy. I have already posted regular soft Mysore Pak. Using the same recipe, I have tweaked this recipe, and it turned out like we get in the Sri Krishna Sweets shop.

Follow the below steps to get the perfect soft carrot Mysore Pak:

  • Keep flame to medium-low for the entire process.
  • Do not leave it unattended.

Karupatti Mysore Pak Recipe | Palm Jaggery Mysore Pak - Diwali Sweet
Melt in the mouth soft karupatti ghee mysore pak.

Instructions
  1. Grease a plate with ghee and set aside. To get a proper square I have used a cake ring.
  2. Now heat a heavy bottom non-stick Kadai, add Bengal gram, and dry roast it on low flame for about 5-6 minutes until a nice aroma comes. Don't let the color change.
  3. Now transfer the Bengal gram to another bowl and allow it to cool. If you leave it in Kadai, it will turn brown due to residual heat in it. In a bowl add roasted Bengal gram, 1/2 cup ghee, mix it without any lumps, and set aside.
  4. In a sauce pan, add water and palm jaggery. Cook until the palm jaggery is melted completely. Remove it from the stove.
  5. Now heat a pan and filter and add the prepared jaggery water. Boil the jaggery until you get the one string consistency. If you take the jaggery syrup between the thumb and the index finger a single string will form, that's the correct consistency.
  6. Now add the Bengal gram oil mixture to the jaggery syrup and mix well.
  7. Now add the remaining 1/2 cup ghee in intervals (2 tbsp at a time) to avoid drying and mix well. Keep stirring continuously until all the ghee is used.
  8. At this last stage, you can see foam forming, and now if you scoop, it will not stick to Kadai. The mixture will not be sticky anymore. Switch off the flame and pour the mixture into the greased plate.
  9. Just allow it to cool for a while and once it starts to get set, cut it into the desired shape.

  • Keep flame to medium-low for the entire process.
  • Please do not leave it unattended.

In the Chettinad region of Tamil Nadu, a traditional sweet dish called kummayam is made during the month of Aadi. This dish resembles halwa and is made by roasting urad dal, moong dal, and raw rice. To add sweetness, jaggery or palm jaggery is used, and it is typically flavoured with ghee.

In the Tamil solar calendar, Aadi is the fifth month, which holds immense significance in Tamil culture. This is because it marks the onset of the monsoon season and the annual freshes of the rivers. The 18th day of the month is celebrated as the Aadi festival, a time to honour the importance of water, the source of all life.

During the month of Aadi, people make kummayam for various reasons:

Aadi Kummayam Recipe | Chettinadu Special Aadi Kummayam
Kummayam - a delicious and nutritious sweet from the region of Chettinad.

Instructions
  1. Dry roast whole urad dal, moong dal, and rice separately until it turns aromatic and golden brown. Place it on a plate and let it cool completely.
  2. Transfer the dals and rice to a blender or food processor and grind into a fine powder. Sieve the powder to remove any large pieces.
  3. In a small saucepan, heat the jaggery and 3/4 cup of water over medium heat. (Water ratio is 1:3). Stir until the jaggery melts and the mixture comes to a boil. Remove from the heat and let cool slightly.
  4. Heat a tbsp of the ghee in a large skillet or wok over medium heat. Add the kummayam powder and cook, stirring constantly, for about 5 minutes, or until fragrant.
  5. Add the jaggery mixture and cook, stirring constantly, until the kummayam thickens, about 10 minutes more.
  6. Finally add the remaining tbsp of ghee and stir for another minute. Remove from the heat and let cool completely. Kummayam is ready.

Sweet Potato Payasam recipe

Sweet potato payasam, also known as Sakkaravalli kizhangu paysam, is a sweet kheer made with sweet potato, moong dal, and jaggery as its main ingredients. I was planning to post my mom’s version of sweet potato curry with jaggery. Though i am not a big fan of this, but mom makes it very nice, and my sister, my mom, and my grandma will feast on this during the festival time. It will taste more like a halwa. I will post this sometime. I just casually tried, as a few sweet potatoes have been lying in my kitchen for a week. Since many of us will have this veggie left over after Pongal festival, I thought we could use it for making payasam for kannu pongal. Check out my

Sweet Potato payasam

Ingredients

  • 2 Sweet Potato
  • ΒΌ cup Moong dal
  • ΒΎ cup Jaggery
  • Cashew nuts few
  • 2 tsp Ghee
  • Β½ tsp Cardamom powder
  • Β½ cup Milk optional

Instructions

  • Peel the skin of the sweet potato, wash it, and chop it into big chunks.
  • In a pressure cooker add 1 tsp of ghee and add the moong dal and roast it for 2 minutes in a low flame. Now add the sweet potato and saute it for a minute.
  • Add 2 cups of water to this and pressure cook this for 3-4 whistles.
  • In a pan add the jaggery and add 1/2 cup of water and boil it till the jaggery melts. Filter the impurities and allow this to boil for 3-4 minutes.
  • Meanwhile, mash the cooked sweet potato and moong dal mixture.
  • Add 1 cup water as it will be thick. Add the jaggery water to this.
  • Fry the cashew nuts in ghee and add this to the payasam. Add cardamom powder. Mix well.
  • Once it is completely cool add milk. Ensure the milk is not hot. Let it be cool.
  • I didn't add milk to the payasam. Adding milk gives a nice creamy texture to the payasam.

Notes

1. I added 1/2 cup of jaggery but I found the payasam is less sweet so I have increased the quantity in the ingredients list.
2. The payasam tends to thicken more so add milk if you are consuming it later.
3. Ensure the milk is cool, and the kheer is also cool. This is to avoid the payasam getting curdled.
4. You can add 1/2 cup of first coconut milk instead of milk to this sweet potato payasam.
