Everyone loves potatoes in every form, especially mashed potatoes around the holiday season. They’re a fixture at every meal, and we’re going to level them up times two.

This recipe levels up the flavor with caramelized onions, garlic, and herbs that add an amazing flavor to these mashed potatoes. And we’re going to add some pureed white beans for extra protein and heartiness.Β

You’ll get protein from the beans, nutritional yeast, and non-dairy milk. You can add even more protein by serving it with crispy lentils or tofu bacon bits.

It’s fall, and it’s time for some comfort food. And what’s more comforting than this casserole, which has a stewy mushroom gravy with beans and veggies, topped with potatoes smothered in garlic butter? There are lots of fall herbs, like fresh thyme and sage, and it all comes together really quickly.Β

This is a super easy one-pan casserole. No need to sautΓ© or stand around the kitchen for long periods of time cooking the onions and mushrooms. Everything goes right into the baking dish, and the oven does all the work.Β 

Once the mushroom and onions are cooked, add the beans, herbs and stew ingredients and top them with some sliced potato and bake, and thats it. You get all the fall flavors and a dish that reminds of mashed potatoes and mushroom bourguignon w/o all the work.

It’s comforting, stewy, and perfect for a fall dinner with your family, served with a side salad, garlicky dinner rolls, or some crusty bakery bread. Or serve it however else you like!

Sesame Crusted Tofu Bowls

This Crispy Sesame crusted Tofu is Quick and super delicious! Tofu cubes are tossed in the peanut sauce then coated in sesame seeds and baked until crispy. Serve over greens dressed in peanut sauce, in a wrap or over noodles! Peanut-freeΒ  & soy-free version included.

I’ve developed a full-blown obsession with these sesame-coated tofu bowls!

I don’t know whether it’s the nutty, crunchy sesame-crusted baked tofu that does it for me or the totally addictive peanut sauce…it’s most likely the combination of both because I would not want to do without any of these additions.

I love that the sesame-crusted tofu is baked in the oven and turns out super crispy without having to add any flour or breadcrumbs the to coating.

Before coating the tofu in sesame, we toss the tofu cubes in some of our peanut sauce to allow the seeds to stick to them properly. This works way better than egg wash AND adds a bunch of flavor to our baked tofu.

These bowls are perfect for meal prep and the spicy peanut dressing keeps in the fridge for a whole week.

Porterhouse Steak smoked and topped with Bacon Tallow Butter


Ingredients


Instructions

  1. Prepare drum smoker for indirect cooking at 275Β°F using lump charcoal for fuel.
  2. Drizzle each side of the porter house steaks with olive oil to lightly coat and season with a layer of Prime Beef rub followed by the Steak Rub. Allow the steaks to rest at room temperature for 20 minutes.
  3. Place the steaks on the smoker and insert a probe thermometer into the center of one steak to monitor internal temp.
  4. Smoke the steaks until the internal temperature reaches about 118Β° flipping half way through for even cooking.
  5. Take half of the bacon tallow/drippings and mix with 1/2 stick of melted butter. Season with a dash or two of Prime Beef and Steak Rub. Rest in the refrigerate until ready to use.
  6. Remove the lid from the drum and baste each steak with the bacon drippings. Flip the steaks and continue cooking (with the lid off to sear the steaks) until the internal temperature reaches about 125-128Β°F.
  7. Remove the steaks from the grill, top each with a big dollop of the bacon tallow butter and rest for 7-10 minutes before serving.

Irish Soda Bread

We are going through a history where the world is witnessing a pandemic episode of Covid-19.Β  As the world reels in the #StayAtHome concept lots of new ideas are popping up on internet to keep oneself busy and sane. One of them being Baking YES... Baking Breads, Cakes, Muffins, Brownies, Pastries is at its peak and is being enjoyed thoroughly across the globe as we silently fight against the Virus and pray that it dies down.


Irish Soda Bread



I venture into baking once in a while. This time it was so tempting for me to justΒ  not to ignore the call of baking a bread. But sigh!! I had to be patient as I did not have yeast in my pantry. Going to grocery stores at the drop of the hat is a big NO NO now, to add to it I kept forgetting to add that ingredient on my list of next home delivered order.

So I was left with no option but to look for something that used no Yeast. Something that was quick, simple and no fermentation recipe for my bread as I craved to make one!

And voila came across Irish Soda Bread in a 5 year old magazine which I was browsing while having my tea.
As befitting many of the bestΒ breadsΒ in the world – Irish Soda BreadΒ is a traditional Irish speciality- it was made with only the most basic of ingredients: flour, bakingΒ sodaΒ (used as a leavening agent instead of yeast), soured milk to moisten and activate theΒ soda, and salt.
Irish Soda bread remains an international favorite.Β Β Before baking, a cross was cut on the top with a knife, to ward off the devil and protect the household.Β 
Something about it, when you mark that X just before the bread goes in the oven, makes you smile and you know it will come out right :)





You are going to love it I promise.

Made this in like 50 mins [included baking time] and it was ready to be relished with your butter/jam/marmalade.....

Here goes the recipe:

Ingredients:

  • 1 1/2 cup +2 tbsp - all purpose flour
  • 1/4 cup whole wheat flour
  • 2 tbsp regular rolled oats
  • 1/2 tsp baking pwd
  • 3/4 tsp baking soda ( preferably fresh)
  • 3/4 tsp salt
  • 2 tbsp cold u salted butter cut in small cubes
  • 3 tbsp honey
  • 1 1/4 cup buttermilk
  • 1 egg
  • 2 tsp orange zest ( optional)
  • 1/2 cup nuts or dried currents or cranberry


Preparation:

  • Take all dry ingredients in 1 bowl and mix it with cold butter. Keep mixing the flour with butter till all cubes crumbles n become one with the flour ( you can flatten the butter with a spatula or use hands as you mix the butter with flour)
  • Then in another bowl take egg, honey, buttermilk and whisk till everything comes together. Add nuts, zest and give a stir.
  • Pour this mix into dry flour ingredients. Bring everything together with a spoon.
  • On a parchment paper transfer the dough n knead it gently (sprinkle flour on top if needed) should be soft and little sticky.
  • Give the dough any size you want like rectangle or round or square. Then with a knife make X sign on the loaf.
  • Bake it on 350F/180C for 40-45 min ... Let it cool down before u slice and enjoy this beautiful loaf of bread.

Some chopped peanuts on top provide crunch and if you use salted, toasted ones, you get a nice contrast of sweet and salty. These are seriously delish along with a cup ofΒ Β Chai !

This easy peanut butter cookie recipe needs no flour and uses only 6 ingredients and take just 5 minutes to put together! It could not be easier and within minutes you will end up with the most decadent cookies.
