A perfectly baked banana raisin loaf cake that’s so moist and speckled with raisins. Soft and moist banana cake sweeten up with brown sugar for a healthy and simple breakfast, snack, or dessert! This banana raisin cake recipe makes a sweet yet nourishing treat that is easy to put together and delicious to eat.

This soft and moist banana raisin loaf cake is insanely delicious and ridiculously easy to make with a few easy steps. This is one of my favourite cake style snacks. Serve fresh out of the oven with a cup of tea or coffee and even ideal for a light simple breakfast, dessert or as tasty snack!

The cake has a wonderful aroma as it bakes and even when you have a slice after a day. It’s a moist, soft, scrumptious cake with beautiful crumb which are to die for. The flavour of bananas is robust and the bits of the raisin you get in every bite takes it to another level.

Banana and raisin go very well together. This whole wheat banana raisin cake has a burst of flavor. The aroma from the banana and juicy bite of the raisin in each bite of the cake is drool worthy. This banana raisin loaf is insanely delicious that you can’t stop with just one slice! This scrumptious cake does not last more than 24 hours at my house.

Not a fan of raisins? You can try any other kind of dried fruit you enjoy. Or, skip them all together. You can even try it with your favourite nuts or chocolate chips!

There are two main reasons why I like banana cake. One is taste, and the other is the simplicity of any banana cake recipe. And this banana raisin cake recipe is easy-to-make and tastes fantastic.

USE OVERRIPE BANANAS

When buying bananas, it is best to choose firm and unscarred bananas so you can monitor and figure out the best ways to use your bananas. I always let them over ripe at home when I want to use them kn my bakes. Over ripe bananas are perfect in recipes such as muffins, bread, and cakes. I always recommend to use overripe bananas in baking especially in cakes, muffins to make the very best banana cake with super moist, soft and flavorful outcome, The riper the bananas, the more moist your cakes will be and the more banana flavor it will have! The outcome of the cakes will be tender and packed with full of flavor.

HOW EASY IS THIS BANANA RAISIN LOAF CAKE?

This banana raisin cake recipe is super simple, easy and fuss-free. It doesn’t require a stand mixer or a hand mixer. There is no fancy equipment required. Just a bowl and a spatula or hand whisk does the work. The batter takes less than 15 minutes to throw together and gets perfectly baked in 35 minutes. This is one of the easiest banana cake recipe and the result is absolutely amazing. I am sure you’ll fall in love with it. ● Mash the banana with fork. You can also use blender or mixie.
● In a mixing bowl beat the egg.
● Mix together the beaten egg, brown sugar, mash banana, essence, oil.
● Sieve in the flour, baking powder, baking soda, salt and mix.
● Add in the milk to loosen the batter.
● Add in the rasins and quick mix.
● Transfer the batter to prepared loaf pan and tap the pan for couple of times.
● Top up with rasins and bake as per the recipe.

LETS TALK INGREDIENTS

It is a very basic banana bread recipe. It uses ingredients most commonly found in our pantries.

Whole Wheat Flour – For a healthier version used whole wheat flour.

Banana – Used over ripe bananas. Over ripe bananas are best to use in baking.

Brown Sugar – Brown sugar yields soft and moist cakes. It adds an awesome flavor and texture to the cake. No doubt a healthier option too as compared to refined sugar.

Milk – Used whole milk. Recommend to use whole milk for extra richness, taste and texture.

Oil – I have used refined sunflower oil. You can use any flavorless oil. I prefer using oil than butter for a soft and moist outcome.

Leavening agents (Baking powder & baking soda) – There’s a combination of baking powder and baking soda in this banana raisin loaf cake to give it the perfect amount of lift.

Egg – I have used only 1 large egg and that does the work as banana itself is a perfect substitute of egg.

Vanilla Essence – Used vanilla essence. You can choose extract over essence.

Salt – A dash of salt to balance out the sweetness.

Raisins – The slightly sweet and tartness from the raisin in this banana cake is amazing. You can feel it in every bite of the cake.

INGREDIENTS SUBSTITUTION IN BANANA RAISIN LOAF CAKE

● Whole wheat flour can be substituted with all purpose flour (maida) or you can use 50-50 ratio.
● You can use white sugar instead of brown sugar.
● You may also use other healthier sweeteners are jaggery, cane sugar, honey etc.
● You may use butter instead of oil or any flavorless oil will work.
● To make it vegan use any dairy free milk or just even water for the liquid.
● To make an eggless version you may choose anyone of these
☆ Use 1 tbsp vinegar or lemon juice and use ½ cup milk altogether.
☆ Use ¼ cup curd/yogurt instead of egg.
● You may use black raisins instead of the regular rasins.
● You may use vanilla extract instead of essence.

BANANA RAISIN LOAF CAKE VARIATIONS

● If you want nutty taste and texture, add nut in the batter also once the batter is ready. Lightly coat the nuts with flour and just throw in the batter and give a quick gentle mix.
● Use nut of your choice like pecans or walnuts etc. You can also use mixed nuts as per your palate preference.
● You may also replace the raisins with chocolate chunks or chocolate chips to make it banana chocolate chips cake.
● You can spice up the cake by adding cinnamon powder. The sweet aroma of the cinnamon adds extra flavor to your cake which will make you drool.
● You can use rum soaked raisins which will take your loaf cake to a different level. Its yummilicious!
● You can also soak the raisin in fruit juice. Any juice you love.
● You can put this batter into muffin tins and make banana raisin muffins.

To make muffins, line a muffin tin with paper liners or just grease it with oil or butter and fill each cup to roughly ¾ full, and bake for 20 minutes. Makes 12 muffins.

HOW TO STORE BANANA RAISIN LOAF CAKE?

Let the cake cool down completely and store it in airtight container. Banana raisin cake can be kept for upto 2-3 days at room temperature depending upon the temperature of your place. If you need to store it a couple days longer then I suggest storing it in an airtight container in the refrigerator.

HOW TO FREEZE BANANA RAISIN LOAF CAKE?

Cling wrap the cake and put it in a ziploc bag or airtight container then store in the freezer. I prefer to freeze sliced cake so it is much easier to take out the required servings and thaw them for breakfast or snacking. Freeze them for upto 3 months. It goes more than 3 months but best to use it within three months. To thaw the cake, remove from the freezer and allow it to come to room temperature and serve. You can also pop it in the microwave for few seconds and serve.

Serves – 8-10

☆ 1 cup = 240 ml
☆ 1 tablespoon = 15 ml
☆ 1 teaspoon = 5 ml
☆ Pan size = 7×4×3 inches

Ingredients to make banana raisin loaf cake:

1 cup whole wheat flour (125 gms)
2 ripe banana (½ cup mashed banana)
½ cup brown sugar (90 gms)
1 large egg
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
¼ cup oil (60 ml)
¼ cup whole milk (60 ml)
1 tsp vanilla essence
50 gms raisins or more + some extra for garnish

Step by step pictorial instructions to make banana raisin cake:

PREPARING THE OVEN AND PAN

Preheat oven at 180° C for 10 minutes with both the filaments (rods) switch on.

Grease the loaf pan with oil or butter and place a parchment paper. You can grease the pan and dust it with little flour if you dont have parchment/butter paper. Also you can use any shape pan as per your availability and preference.

PREPARING THE WET INGREDIENTS

Peel the banana and mash them using a fork or masher. You can also use a mixie or blender to do the work. Preferably use over ripe banana for better outcome.

In a mixing bowl add in the egg and beat it well. Add in the brown sugar and mix well until combined. Add in vanilla essence and mash banana. Mix well to combine.

PREPARING THE BATTER

Sieve in the whole wheat flour, baking powder, baking soda, salt into the wet ingredients. Add in the oil. ( oil can be added while preparing the wet ingredients. I missed to add it before hence added at this stage). Mix to incorporate into a thick batter. Add milk in batches and make into a semi-thick smooth batter. Add in the raisins and give a gentle quick mix.

BAKING THE LOAF CAKE

Pour the batter onto the prepared pan. Tap the pan for couple of times to release any air bubbles trapped inside. Sprinkle some raisins on the top.

Place the cake pan in the middle rack with both filaments (rods) on. Bake the cake at preheated oven @180° C for 35 minutes. A toothpick or skewer inserted should come out clean. Baking time will differ depending upon your oven temperature and settings. Start checking the doneness of the cake before the above mentioned time.

Remove the cake from oven and allow to stand for 10 minutes. Run a knife around the cake pan and demould the cake. Transfer the cake onto a cooling rack and allow to cool down completely. Slice and enjoy!

NOTES:

● Always preheat oven before starting to bake.
● All ingredients should be at room temperature.
● Whole wheat flour can be substituted with all purpose flour or can bake with 50-50 of both.
● Brown sugar can be substituted with regular refined sugar.
● If you like more sweeter bread, increase the sugar quantity.
● Oil can be substituted with butter.
● Use whole milk for extra richness, taste and texture.
● Other healthier sweeteners like jaggery or cane sugar can be used.
● Every oven reacts differently so baking time may vary.
● Both rods to be switch on.
● If you wish to bake without egg use either of these mentioned below –
☆ Use 1 tbsp vinegar or lemon juice and use ½ cup milk altogether.
☆ Use ¼ cup curd yogurt instead of egg

Even though the title says this avocado toast is for breakfast, I will share my secret with you! I love this avocado toast so much that I have it for lunch at least thrice a week!

It is best paired with eggs if you want to have it for breakfast. For lunch with avocado toast, I usually pair it up with grilled/air fried chicken and loads of salad.

What is avocado toast?

As the name suggests, avocado toast is the most humble yet most delicious and nutritious meal of crunchy toast with mashed avocado spread over it!

The creamy avocado complements the crusty bread so beautifully that it creates an unforgettable eating experience that will keep dragging you to it again and again.

I get these chicken tenders from my online meat provider where they sell it under the name of chicken supreme and I have been using this portion for quite some time now.

After perfecting this recipe a few times, it's high time now to share this weeknight-ideal high protein meal idea with you all!

What are high protein grilled chicken tenders?

Chicken tender is that easy-to-cook portion of chicken that I frequently use for my quick & healthy dinners! I have described what exactly chicken tenders mean in detail below.

Grilling these chicken tenders is super easy and can be done using a stove-top grilling pan or an electric griller similar to what I have used.

Those stunning grill marks look so tempting that you will love to make these grilled chicken tenders on repeat; more so because it’s way too easy to make!

Petite Fillet with Garlic Peppercorn Sauce

Let's get the recipe out of the way first since people hate scrolling through the typical food blogger stuff to get to the recipe. This is a simple white sauce variation that is creamy, savory, and as the name implies - it has a peppery kick.

Creamy Garlic Peppercorn Sauce

A creamy and delicious sauce that's delicious on steaks, burgers, and grilled vegetables. We took ours to another level by using Bourbon Barrel Smoked Pepper.

INGREDIENTS

  • 3 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallot
  • 1/2 teaspoon kosher salt
  • 1 1/2 teaspoon coarse black pepper
  • 2 tablespoons all purpose flour
  • 1 cup cream or half and half
  • 1/4 cup shredded parmesan cheese
  • salt to taste once finished

INSTRUCTIONS

  1. Preheat a small sauce pot to medium/low heat, melt the butter.  Then add saute the garlic, shallot, salt and pepper and whisk frequently until the garlic starts turning golden brown - about 2 minutes.
  2. Make a light roux by whisking in the flour and continuing to whisk until it smells nutty, about 2-3 minutes.
  3. Slowly add the cream, whisking continuously, until combined into a sauce.
  4. When the sauce begins to slightly simmer, whisk in the parmesan and stir occaisionally until the cheese is melted.
  5. Tasted and add more salt as desired.

Yield: 2-4 Servings

Prep Time: 00 hrs. 5 mins.

Cook time: 00 hrs. 15 mins.

Total time: 20 minutes

We weren't planning on cooking yesterday afternoon but when I saw a pair of Certified Angus Beef brand petite fillet at Food City, things changed.

Food City also had a pack of snow crabs for a low price so on the spur of the moment, we decided to make a mini-turf and surf for the afternoon's NCAA Elite 8 basketball games.

We didn't have a lot of time because the skies were turning dark and Spring storms were popping up. I fired up one of our Big Green Eggs and got to prepping the food. I seasoned the steaks simply with Bourbon Barrel smoked salt and smoked black pepper.  Did the same for the asparagus.

As you can see, one fillet was much more petite than the other. One was a heavy 5 ounces while the other barely weighed in at 3 ounces.

While the crab legs heated up in our steamer, I raced against time to grill the steaks. My plan was to grill the smaller one about 3 min per side and the larger one about 4 min per side.

My set up for the Big Green Egg was a Kick Ash Basket full of Jealous Devil lump charcoal and a pre-heated cast iron grate from Craycort. Notice how the angle of the grates go in 3 directions? Each of those are inserts that you can lift out to add fuel or wood OR you can drop in an accessory insert like a griddle plate or veggie wok.

Once the steaks were flipped, I added a bit of asparagus to the heat of the hot coals.

Remember that plan to let the larger fillet go for a couple of minutes longer? The weather had other ideas about that and I'm fine with a rare fillet so I pulled it early.

Asparagus is one of my favorite veggies to pair with steaks because prep is literally a snap and they cook quickly.


Surf and turf for the games! My filet was rare due to the cooking time being cut short but like I said, I was fine with that. 

Every bite was delicious! Since we normally opt for ribeye or strip, Alexis couldn't get over how tender the steak was. Not a bad meal for an afternoon when we weren't planning on cooking in the first place.

A chorizo, avocado, and pepper jack cheeseburger is a delicious twist on the classic American cheeseburger. This burger features a juicy patty made from ground chuck and topped with gooey melted pepper jack cheese. We crown it with creamy avocado and flavorful chorizo. The combination of smoky, spicy, and creamy flavors creates a mouthwatering burger experience that's sure to satisfy any craving.

Alexis was craving a griddle-cooked burger while I wanted mine grilled. No problem. I used my modular cast-iron grate from Craycort, which let me swap a grate section out with a griddle plate as shown below.

Not that you need a recipe for a burger, but here is what we did.

Avocado, Chorizo, and Pepper Jack Cheeseburger

Six-ounce burgers topped with pepper jack cheese, avocado, and chorizo on a brioche bun.

INGREDIENTS

  • 18 ounces fresh ground chuck
  • Fire and Smoke BBQ's The Classic for seasoning
  • 3 brioche buns, toasted
  • 3 slices Tillamook pepper jack cheese
For the avocado mash
  • 1 avocado, peeled and pitted
  • 1/2 tablespoon fresh lemon juice
  • pinch salt
For the quick chorizo chili
  • 4.5 ounces Mexican chorizo (raw, not the smoked style)
  • 1/4 cup finely diced onion
  •  1 ounce finely diced red bell pepper (I used 1 mini-sweet red pepper)
  • 1 ounce finely diced jalapeno

INSTRUCTIONS

  1. Preheat a grill to 450f°. I used a Big Green Egg Mini-Max with a full Kick Ash Basket of coal. I used a propane torch to light the coal in 3 spots and when it hit 350f, I gradually started shutting the lower vent to bring it to 450f°. 
  2. Form the burgers.  I used a burger press to create three 6-ounce burgers.
  3. Make the avocado mash. Smash the avocado together with lemon juice and salt. 
  4. Make the quick chorizo chili.  Preheat a grill-safe skillet for 5 minutes. Add a splash of oil and then cook the chorizo until the fat begins to render out, about 1-2 minutes. Then add the jalapeno, onion, jalapeno, and red bell pepper and saute until they are tender. Remove from heat. The total time should be about 5 minutes.
  5. Grill the burgers.  I cook the grilled burger for about 4 minutes per side and the griddled burger for about 3 minutes per side. I season the burgers when I flipped them. I used maybe 1/2 teaspoon of The Classic. I top it with a slice of pepper jack cheese during the last 90 seconds.
  6. Build the burgers. Put the burger on the toasted bun bottom, and top it with the avocado mash, chorizo, and the bun top.

Yield: 3 burgers

Prep Time: 00 hrs. 10 mins.

Cook time: 00 hrs. 10 mins.

Total time: 20 mins.

Coconut Egg Curry - South Indian Style [Anda Curry]

Who doesn't enjoy a delicious lightly spiced flavorful coconut based egg curry? Egg is one quintessential breakfast food loaded with proteins- liked and consumed by all - good thing being a lot of vegetarians also consume it and are known as Eggetarians 😆  Eggs are the most nutritious food on the planet! There is no doubt about it! On top of everything else, they are also cheap, easy to prepare, go with almost any food and taste awesome.


Egg Curry from coastal southern regions of India is made using garam masala and coconut as its main ingredients. I have tried hard to get that exact taste like my mom's, but its tough 😊  I am close to it and have made my peace with it. ✊
I feel restless when I dont have eggs in my refrigerator. I have to stock it up as soon as I see around dozen left. Boiled eggs, scrambled eggs, puffs, egg burji, omelettes, french toast, cakes etc- thats how Eggs are consumed in a healthy and regular basis in my household. It comes to my rescue when I am short on meat at home or for that matter even veggies. There used to be this famous jingle in India- Sunday ho Ya Monday Roz Kaho Ande 🥚 ... a good one indeed :)



 Back home Eggs are treated like a second class citizen 😂. No kidding, when I am chatting with my Mom and if I ask her- "what did you cook for dinner?" There is a sigh in her tone when she says.. just made some egg curry- followed by WHY that decision was made ---like didn't have time to get chicken OR no good variety of fresh fish was available in the market OR due to bad weather she was not able to go get fresh veggies etc etc. So you see what I am saying- justification on why egg curry was made ... 😛
Where as for me here - Egg curry day is like a celebration :) My son is thrilled as he is an ardent and loyal fan of eggs. My husband is neutral - he doesn't enjoy coconut curries so much ...yeh go figure 🙄 ! and Me- full focus on getting the curry taste right just like my Mom's... so its a fun affair.


As a kid, my sister and Mom loved full boiled eggs in the curry whereas me and my Dad loved fresh broken eggs in the curry. Till this date that has not changed. Separate 2 broken eggs always go in my funky-licious Egg Curry/Anda Curry! 

I do not know anyone around me that dislikes eggs. I have a cousin who couldn't eat it due to allergies and I used to feel so bad for her. While growing up my younger cousins gang loved my version of  Plain Omelette. My mom and aunts used to make us omelette loaded with onion/tomatoes/veggies which most of them did not like it then 😁  The same ones that we relish like crazy on Cruises now- 😎

Anyways, Lets get started with the recipe:

Please feel free to modify ingredient quantity as per your taste for spiciness and thickness of curry!

Ingredients:
4 boiled eggs + 2 fresh eggs
3 tbsp oil
1 big onion finely chopped
1 tomato chopped
1 tsp each ginger and garlic paste
salt as per taste

Masala Paste:
  1. 5 cloves
  2. 1 cardamom
  3. 3-4 black pepper
  4. 1/2 inch cinnamon
  5. 1/4th tsp cumin seeds (jeera)
  6. 1/4th tsp sesame seeds 
  7. 1/4th tsp poppy seeds
  8. 3 tsp coriander seeds
  9. 7-8 red dry chillies [adjust as per your taste]
  10. 1/2 cup grated coconut + 3 tsp dry grated coconut
  11. handful of cilantro leaves
  12. 1/4th tsp turmeric

Preparation:
  • Roast ingredients from 1-9 in a tsp of oil for few minutes till its fragrant and put it in a blender.
  • In the same pan roast coconut  till it is slight brown in color on low heat and then add it to the blender. Add turmeric , cilantro and make a paste by adding water sparingly. Keep aside.
  • In a wide mouth utensil heat oil, add finely chopped onions and saute till light brown. Add ginger garlic paste and saute further till the raw smell goes away. Add tomatoes and cook till everything comes together. 
  • Now pour the ground masala paste and mix everything nicely. Bring it to a boil. Let it simmer for few minutes. Adjust water and add salt.
  • Add the boiled eggs in the curry. You can lightly score the eggs from top to bottom with a knife or you can even lightly roast it in oil with garam masala powder [or chili pwd and turmeric pwd] before adding to the curry, or cut in halves and slide it in the curry- choice is yours! 
  • Once the curry starts to simmer again - slowly break the remaining 2 fresh eggs and slide it in the curry. Leave it alone for 5-8 mins on low-med flame till the eggs are done. You can give it a light handed stir in between.
  • Enjoy it with rotis or just plain rice or jeera rice. It super yum!

Chapli Kabab (Chicken)



Kabab or Kebab has a nice ring to it, it brings a smile on my face whenever someone utters that word. My mind starts getting images of get-togethers, fun with friends, with some beer or wine in the vicinity(yaasss),  jamming sessions, or a fancy restaurant, sometimes dhaba style restaurants too :) etc. etc. So in short, this dish brings happiness to me. It is served as an appetizer mostly during parties and get together's!
Of course, one shouldn't stop at that,  make it at home, in your kitchen whenever you feel like :)
I call it a 'Happy Side Dish'

It is a cloudy rainy day today in my town and I was craving for some chatpata (spicy peppery) snack. Had some minced chicken in the fridge, thought of making these chapli kebabs. Very easy to make, use the spices on hand, make patties and fry it in the oil!




  


Chapli kebab is a Pashtun-style minced kebab, usually made from ground beef or mutton with various spices in the shape of a patty. It originates from Peshawar in Northwest Pakistan and is also known as the Peshawari kebab.

The chapli kebab is a popular barbecue and street food in parts of Northern India, Pakistan, as well as in eastern Afghanistan. It can be served and eaten hot with naan bread, rice, or in burgers and sandwiches such as a Bun kebab or stuff in Pita Bread. Or just have as an appetizer with chutney dip, sliced onions and lemon wedges on the side.
Can't wait to dig in, every time I make something like this!

Here is the recipe for Chapli Kababs,



Ingredients:
  • 1 16 0z  minced chicken pkt (or get chicken thigh or breast and grind using the blender)
  • 1 med size onion chopped finely
  • 2 tomatoes chopped finely (squeeze the water out)- I used cherry tomatoes :)
  • 2-3 green chilies chopped
  • 1 tsp ginger garlic paste
  • 1/2- 1tsp chili powder flakes (if you don't have, take dry red chili and crush it)
  • salt to taste
  • 1/2 tsp pepper powder
  • 1 tbsp coriander seeds crushed in a mortar n pestle ( coarse coriander seeds pwd, a must step in chapli kababs)
  • 1 cardamom crushed
  • 2 cloves crushed
  • 1 egg
  • 2 tbsp whole wheat flour ( optional, if your mixture gets little soggy, add this)
  • Oil to fry

Preparation:
  • Take a mixing bowl, add all the ingredients except oil. Patties mixture should be dry enough. 
  • Take a bowl of water at the side to dip your hands, while making patties. 
  • Heat a pan with little oil in it. You can either deep fry it, which will taste awesome or shallow fry it(I like it this way)
  • Take a small portion of the meat mixture and make patties by flattening it, you can give any shape you want. Traditionally it is given an oval shape. 
  • Place in on the hot pan, it should sizzle. Let it cook for 3 minutes. Then flip and again cook for another 3 minutes or till done. Cook on medium flame. 
  • Strain it out and place on the paper towel to absorb extra oil. 
  • Serve hot with sliced onions, chutney etc.

Irish Soda Bread

We are going through a history where the world is witnessing a pandemic episode of Covid-19.  As the world reels in the #StayAtHome concept lots of new ideas are popping up on internet to keep oneself busy and sane. One of them being Baking YES... Baking Breads, Cakes, Muffins, Brownies, Pastries is at its peak and is being enjoyed thoroughly across the globe as we silently fight against the Virus and pray that it dies down.


Irish Soda Bread



I venture into baking once in a while. This time it was so tempting for me to just  not to ignore the call of baking a bread. But sigh!! I had to be patient as I did not have yeast in my pantry. Going to grocery stores at the drop of the hat is a big NO NO now, to add to it I kept forgetting to add that ingredient on my list of next home delivered order.

So I was left with no option but to look for something that used no Yeast. Something that was quick, simple and no fermentation recipe for my bread as I craved to make one!

And voila came across Irish Soda Bread in a 5 year old magazine which I was browsing while having my tea.
As befitting many of the best breads in the world – Irish Soda Bread is a traditional Irish speciality- it was made with only the most basic of ingredients: flour, baking soda (used as a leavening agent instead of yeast), soured milk to moisten and activate the soda, and salt.
Irish Soda bread remains an international favorite.  Before baking, a cross was cut on the top with a knife, to ward off the devil and protect the household. 
Something about it, when you mark that X just before the bread goes in the oven, makes you smile and you know it will come out right :)





You are going to love it I promise.

Made this in like 50 mins [included baking time] and it was ready to be relished with your butter/jam/marmalade.....

Here goes the recipe:

Ingredients:

  • 1 1/2 cup +2 tbsp - all purpose flour
  • 1/4 cup whole wheat flour
  • 2 tbsp regular rolled oats
  • 1/2 tsp baking pwd
  • 3/4 tsp baking soda ( preferably fresh)
  • 3/4 tsp salt
  • 2 tbsp cold u salted butter cut in small cubes
  • 3 tbsp honey
  • 1 1/4 cup buttermilk
  • 1 egg
  • 2 tsp orange zest ( optional)
  • 1/2 cup nuts or dried currents or cranberry


Preparation:

  • Take all dry ingredients in 1 bowl and mix it with cold butter. Keep mixing the flour with butter till all cubes crumbles n become one with the flour ( you can flatten the butter with a spatula or use hands as you mix the butter with flour)
  • Then in another bowl take egg, honey, buttermilk and whisk till everything comes together. Add nuts, zest and give a stir.
  • Pour this mix into dry flour ingredients. Bring everything together with a spoon.
  • On a parchment paper transfer the dough n knead it gently (sprinkle flour on top if needed) should be soft and little sticky.
  • Give the dough any size you want like rectangle or round or square. Then with a knife make X sign on the loaf.
  • Bake it on 350F/180C for 40-45 min ... Let it cool down before u slice and enjoy this beautiful loaf of bread.

Eggs are such a versatile food, goes well with any vegetable and enhances the taste of any dish with it. If you are bored of normal egg bhurji try it with an add-on veggie to it, for a more healthy and tasty version. 

Broccoli Egg Bhurji is nothing but a combination of scrambled eggs and broccoli. Broccoli with egg is an awesome combination, makes a drool-worthy side-dish, filling and protein-rich food, good to go with steamed rice and rasam or chapatis/roti/bread. As broccoli needs less cook time, this side dish can be prepared in mins. This could be a quick breakfast recipe and also a perfect dish for the lunch box.

Broccoli ?  is an edible green plant from the cabbage family whose large flowering head and stalk are eaten as a vegetable. Every part of broccoli, the stalk, small leaves, and florets are edible. My kids are not a big fan of broccoli. I somehow wanted to incorporate more broccoli in our diet. Luckily this method worked for me. Kids loved this combination of broccoli ? egg ?and I have no hard time giving broccoli to my kids. They even love it for their lunch box. It a great way to add this nutritious veggie to our diet, by making it more healthy, tasty and delicious. We like this bhurji as simple as in the recipe. But you could add spices like garam masala, crushed garlic, and chili powder to enhance the flavor.

1.Cut the broccoli florets as small possible, to tiny florets(4 cups) and set aside.

2. Finely chop 1 onion and slit 5-6 green chilis.

3. Heat 1 Tbsp oil in a pan/kadai, add in 1 tsp chana dal and ½ tsp jeera/cumin. Sauté until chana is light brown.

4. Next, add the chopped onion, slit green chili and 1 spring curry leaves. Sauté until onions turn translucent.

5. Add 4 cups broccoli florets and salt as needed, give a stir and add ¼ cup water. Close lid and cook on med-high flame for about 3 mins.

Notes

  • Add more or less of the green chilis mentioned in the recipe, according to spice level required.
  • Broccoli cooks very fast in mins, so do not overcook as it will turn mushy. Tastes best when crunchy with its shape retained.
  • Broccoli is finely chopped for faster cooking and bhurji is tastier with tiny florets and scrambled eggs. 
  • You could also add spices like garam masala, crushed garlic, and chili powder to enhance the flavor.
