According to a case report in the New England Journal of Medicine, a skin biopsy showed swelling between his skin cells and inflammation around blood vessels, but testing came up negative for other common signs of skin conditions, leaving doctors with few leads. The doctors ultimately came to a diagnosis not by analyzing his skin further but by hearing about his diet.

  • 270 g shirataki noodles
  • 1 tbsp olive oil
  • Β½ onion chopped
  • Β½ red bell pepper chopped

Instructions

Prep Noodles

  • Before cooking begins, drain your shirataki noodles and rinse them under running cold water.
    270 g shirataki noodles
  • Light shake off the excess water from noodles and keep them aside.

Make Spicy sauce

  • To prepare the spicy ramen sauce, whisk some soy sauce with Sriracha, peanut butter, Tahini paste, salt and chili flakes.
    2 tbsp Soy Sauce, 2 tbsp sriracha sauce, 1 tbsp peanut butter, 1 tbsp tahini paste, 1 tsp chilli flakes, 1/4 tsp salt
  • Then add a splash of water and mix everything into a uniform consistency.

Cook the veggies and Noodles

  • Heat some olive oil in a pan and toss chopped onions, both red and green bell peppers and saute for 3-4 minutes just until the veggies begin to soften but still stay crisp.
    1 tbsp olive oil, Β½ onion, Β½ red bell pepper, Β½ green bell pepper
  • Next, toss in sliced mushrooms and cook for 2 more minutes. Now, toss the diced tofu and give everything a quick stir.
    5 mushrooms, 200 g tofu
  • Next, get the Shirataki noodles in the pan and pour the prepared sauce. Gently roll the noodles so its evenly coated in the spicy sauce.
  • Turn off the heat and pour some lemon juice. Tear in some fresh basil leaves for aroma.

  • Lastly, garnish with sesame seeds, roasted peanuts and green onion leaves before serving. Serve hot and enjoy!

If there is one recipe that I can blindly vouch for helping me stick to my healthy eating habit, then that has to be this avocado toast! Topped with eggs, this avocado toast is not only the healthiest breakfast (or lunch!), but also the tastiest among all my other options!

Avocado is my new found love and I make sure I include this superfood in my meals at least twice a week!

I savor my avocados in various ways but the most common one is this avocado toast! I am wondering why I took so long to share this go-to recipe of mine!

Even though the title says this avocado toast is for breakfast, I will share my secret with you! I love this avocado toast so much that I have it for lunch at least thrice a week!

It is best paired with eggs if you want to have it for breakfast. For lunch with avocado toast, I usually pair it up with grilled/air fried chicken and loads of salad.

What is avocado toast?

As the name suggests, avocado toast is the most humble yet most delicious and nutritious meal of crunchy toast with mashed avocado spread over it!

The creamy avocado complements the crusty bread so beautifully that it creates an unforgettable eating experience that will keep dragging you to it again and again.

If you think chicken breast can only give you dry and boring chicken kebabs, then here I am to prove you utterly wrong with these chicken keema kebabs of mine which are made in an air fryer with minimal oil and turn out super juicy & tender!

Air fryer has become my right hand which is handling most of my healthy cooking these days! If you own an air fryer but haven't yet checked my air fryer recipe collection, you are definitely missing out a lot!

Hence air fryer chicken keema kebabs came into existence when I was trying to make something realistically quick & easy for my own lunch or dinner.

What are chicken keema kebabs?

Chicken keema kebabs are the Indian version of chicken patty or chicken cakes which are essentially of flat round shape.

I call them chicken keema kebabs as they are grilled in an air fryer and not deep or shallow fried in oil. These are also called chicken tikkis sometimes as they resemble the popular aloo (i.e. potato) tikkis.
