Today I am sharing a recipe of Instant Idli Mix. This mix is helpful for bachelors and of course for the morning hectic schedule. This gives us an easy and quick way to prepare soft, fluffy and delicious idlis. This will not work for Dosa, there is a different recipe for the Instant Dosa Mix.

This mix will be helpful when you have strong craving for authentic idli but does not want to do much hassle of fermentation and grinding process. The whole process will take less than 30 minutes means now you can enjoy the authentic taste of idlis in just 30 minutes.

Instant Idli Mix 3

Discussing in detail about the mix: I am dry roasting all the things which is a necessary step here as the main purpose to roast all the things is to remove the moisture content from everything to improve the shelf life.

Next, I am using Flatten Rice/Poha (can use either thick or thin) which provides the softness to idlis. Lastly, I am using Fruit Salt to eliminate the fermentation process. You can use baking soda as an alternative.

So, if guests are at your place you can serve it to them. You can also make your kids happy as serving it in their lunch box. Serve these idlis with the authentic chutneys of South or with Sambhar. You can also make Fried Idlis with this.

Step by step instructions

Preparing Instant Idli Mix

  • Take a pan and add 1 cup of urad dal in it. Roast it for 2-3 minutes on low- medium flame. Take it out on a plate.

  • Now, roast flattened rice(poha) and 1 tsp of fenugreek seeds(methi dana) for a minute. Take it out on a plate.

  • Put all three things in a grinder.

  • Grind well to make a fine powder.

  • Again, take a pan and add 2 cups of rice flour to it. Roast for 2 minutes on low medium flame.

  • Mix rice flour along with the prepared powder. Mix it well.
  • Instant Idli mix is ready. Store it in an airtight container for about 2 months in the refrigerator.

Preparing Idli with the Instant Idli Mix

  • Take 2 cups of Idli mix in a bowl.
  • Add 2 tbsp of curd in it.

  • Add salt according to your taste to it.

  • Mix it well. With the help of water, make a batter neither too thick nor runny.

  • Allow the batter to rest for 10 minutes.

  • After 5 minutes, mix the batter again and if needed add 1-2 tbsp of water.
  • Add 1 tsp of fruit salt to the mixture and mix well by mixing in one side only.
  • Fill the molds with the batter.

  • Steam them on a medium flame for 10-15 minutes. Check-in between with the toothpick or knife.

  • If done, take out the molds and allow it to cool down completely.
  • Take out the idlis with the help of a knife.
  • Serve with sambar or coconut chutney.

Ingredients

  • 2 cups rice flour
  • 1 cup urad dal
  • 1/2 cup flattened rice poha

  • 2 tbsp curd
  • oil for greasing idli stand
  • water as required
  • 1 tbsp fruit salt/ baking soda

Instructions

Preparing Instant IdliMix

  • Take a pan and add 1 cup of urad dal in it.

  • Instant Idli mix is ready. Store it in an airtight container for about 2 months in the refrigerator.

Preparing Idli with the Instant Idli Mix

  • Take 2 cups of Idli mix in a bowl.
  • Add salt according to your taste to it.
  • Add 2 tbsp of curd in it.
  • Mix it well. With the help of water, make a batter neither too thick nor runny.
  • Allow the batter to rest for 5 minutes.
  • After 5 minutes, mix the batter again and if needed add 1-2 tbsp of water.
  • Grease the idli molds with oil and put the water in steamer to boil.
  • Add 1 tsp of fruit salt to the mixture and mix well by mixing in one side only.
  • Fill the molds with the batter.
  • Steam them on a medium flame for 10-15 minutes. Check-in between with the tooth pick or knife.
  • If done, take out the molds and allow it to cool down completely.
  • Take out the idli's with the help of a knife.
  • Serve with sambar o rcoconut chutney.

Notes

  • This mix is only for the making of idli's, not for dosa.
  • Store it in an airtight container for 2 months in the refrigerator.
  • You can replace fruit salt with baking soda.
  • Put the batter in the molds immediately after adding fruit salt/ baking soda.

Mathri is a flaky biscuit originated from Rajasthan but now it is popular across India in many variations. Today I am sharing a new version of this flaky biscuit which is flavored with green peas and is spiced up with few spices like cumin seeds, carom seeds, etc.

Like some other deep-fried snack, these mathris can be stored in an airtight container for the next few weeks. Also, these are travel-friendly and definitely, matar mathris will give good company with tea so it can be considered as a tea time snack. It goes well with chutney, ketchup, and pickle too.

How can a mathri be crispy and perfectly textured? The answer to this question is the way you knead the dough, the way you fried it. So, let’s discuss the recipe in detail to understand each important step in a better way.

Basically, it is made with plain flour but you can adopt a healthy version and replace it with wheat flour, with this, there is a slight difference in texture. As this deep-fried so for good digestion, we add carom or cumin seeds or both in it. To make mathris soft from the inside, we have to add oil/ ghee into it. As we are making matar mathris, I am adding fresh green peas to which I have coarsely grind. Along with it, some fresh coriander leaves also enhance the color and taste of it.

While kneading the dough, a point which is to keep in mind is you have to need stiff dough- it helps in proper texture. What happens if we need a soft dough? you will find it difficult to roll mathris. Pricking it with a fork prevents mathris to puff up which is another necessary step to follow.

Mathris should be fried on low- medium flame only then it becomes crispy. Frying on high flame makes mathris soggy, uncooked, and also it will not survive for long.

Lastly, I would like to focus on a few tips which I followed while making these delicious Matar Mathri:

  • While grinding matar (peas), do not add water. You can add some green chilies if you like the spicy flavors.
  • Try to knead the dough without adding water, as lots of moisture present in peas. If you still feel it difficult to knead, just add 1- 2 tbsp water not more than that.
  • Prick it carefully, otherwise, matar mathris will result in matar puris.
  • Let them cool down properly before storing it.

  • In a mixing bowl, add refined flour (maida).
  • To this, add grinded green peas followed by freshly chopped coriander leaves.

Mango Kulfi: Stuffed Mango Icecream: Kulfi in a mango: Mango Icecream is basically rabri filled inside the mango. So, basically, the idea behind this unique version of kulfi is to have a different flavor in each bite. When you have the first bite of this ice cream, you feel the real taste of mango and when you take the second bite, you feel the fusion of kulfi and mango which will increase the level of taste.

Mango Icecream is one of the most common icecreams which our mothers used to make as the availability of this King of fruit is high during summers. There are a lot of variations in this icecream like some make it by adding cornflour, some make mango shake and then deep-freeze it to set but this kulfi in a mango version is a little different and much tastier as well.

I saw this type of Mango Icecream in the market in my hometown. A shopkeeper is cutting down pieces of mango, I curiously saw and strange that he had cut down the seed also and people are enjoying it. Then my mother told me the procedure. This incident happen when I was 10 years old. From that time I always want to make this. Now, during every Mango season, I prepared it about 5-6 times and narrates the story to my husband every time.

Let us discuss the recipe in detail: Firstly, Use full-fat milk then only it enhances the flavors of Rabri. While making Rabri, I add Bread Crumbs to have instant Rabri but you can skip it and follow the traditional method to make rabri.

Secondly, Use of flavors totally depends on you, whether you want to use cardamom powder, rose water, or kewra water. All three tastes are good. Along with flavors, these have a nice aroma as well.

Thirdly, Make sure to place the mango correctly in the freezer, it is better to put mango in a glass and then in a freezer. Also, once it sets properly, take it out 5-6 minutes before cutting.

Last but not least, this much icecream is sufficient for 2 persons. So, adjust the quantity as per the number of people. Some of the amazing mango desserts are listed below:

Step by step instructions

  • Take milk in a wok and bring it to boil on high flame.
  • Once it starts boiling, reduces the flame to medium. Scrap the sides. Reduce the milk to half.

Nankhatai: Nankhatai in Kadhai: a shortbread or cookie or biscuit for tea time.

Nankhatai is basically a combination of two words: Naan which means bread and Khatai is a Dari Persian word which means Biscuit.

Nankhatai is a sweet cookie recipe that originated in the Indian subcontinent. Because of its soft, mouth-melting, and creamy flavor, it is loved by both kids and elders. My father used to bring it for me from the market when I was a kid and even now I am fond of this cookie. There are many variations of Nankhatais are available in the bakery shops depending upon the added flavors and texture, the recipe I am sharing here is the simplest, easiest and it is NO-FAIL recipe.

Let us discuss the recipe in detail: I prepared it with all-purpose flour, you can replace it with whole wheat flour for the healthier option. Next, I added gram flour in it to have a nice light yellow color in the nankhatai and it gives a very touchy earthy flavor which makes it really different from other biscuits and cookies. Also, I added semolina to have a good crunch in it. Though you can change the quantity of these ingredients, yet I recommend you to follow it as I am sharing a No-fail recipe.

Use of ghee takes the taste of this dish to another level, you can also use butter or oil instead of ghee. But while using oil, just assure that there should not be any kind of smell in the oil as it degrades the nice aroma of nankhatai.

For a good flavor, I added cardamom powder here, you can also opt for cinnamon powder or nutmeg powder. With this quantity of ingredients I made 15 medium sized nankhatais, so if you are fond of this cookie, then prepare them in bulk snd store for about 15 days in an airtight container.

   Points need to remember:

  • Ghee should not be melted, it should be in a semi-solid state.
  • Sieve all the dry ingredients before using them.
  • You can replace the cardamom powder with any essence.
  • Do not over bake otherwise the cookie will be too hard.
  • Let them cool properly before transferring from the plate.
  • Preheating is important as it saves time.

You can make these cookies on any festive occasion, can carry with you while traveling, and also give to your kid as a snack for school. This helps you to purchase outside food which might not be that much healthy as prepared by you.

  • Grease the plate with some oil/ghee.
  • After 15 minutes, knead the dough again.
  • Take a small ball fromthe dough and shape nankhatai. Gently press from the thumb in the center.
  • Likewise, prepare all.
  • Top with some chopped pistachios.

Baking Nankhatai

  • Place the nankhatai in the pre-heat wok.
  • Cover it with a plat. Cook on low flame for 10 minutes. After that, shift the flame to medium and cook for another 10 minutes.
  • Once cooked, turn off the flame and allow it to cool down completely.
  • Nankhatais are ready. Store in an air tight container for 10 days.

Notes

  • You can use butter/ oil also in place of ghee.
  • If the dough does not combine well, add some more ghee, and then form a dough.
  • Allow to cool down completely then only separate from the plate.

Mix Veg Soup

If your kids are not in the habit of eating vegetables, then you must give a try to this recipe. This is a bit long process but the result will definitely be wow. And I am damn sure your family will cheer you for this mouth-watering soup and ask to make you again.

Today, I am sharing a recipe for mix veg soup during winter we can have lots of colorful and healthy vegetables in the market. To keep our body warm and to strengthen the functions of the body we need to have food that makes us warm and active. No doubt Soup is one such dish that gives you much energy and warmness than any other food.

Talking about the recipe in detail, here I am using seasonal vegetables like broccoli, mushroom, french beans, carrot, spring onion, baby corn, etc. The most important ingredients while making this soup are ginger and garlic. You can use any vegetables which are easily available to you like cabbage, cauliflower, peas, capsicum. Also, you can replace the baby corn with sweet corn but add it a little later as corn takes less time to cook compared to other veggies.

Next, Boiling on low flame is mandatory as the vegetables need to release flavors. The soup tastes best if it’s boiled properly.

As a thickening agent, I used cornflour slurry here (2 tbsp of cornflour with a half cup of water) because here the soup is not in puree form. If we are making puree then you can use multiple options for thickening.

This is the simplest version of soup which is suitable for all aged people. You can use any other flavors like oregano, or any other herbs as per your liking.

Also, Mix Veg soup is the best way to use leftover veggies from the refrigerator.

Important Tip: While choosing vegetables, make sure to use vegetables in the proper amount otherwise the vegetable which contains a higher ratio than any other vegetables will degrade the taste and flavors of the soup.

Heat a wok, add butter to it.

Ingredients

  • 2 tbsp butter
  • 1/2 inch ginger finely chopped
  • 3 number garlic finely chopped
  • 1 small onion finely chopped
  • 1 small spring onion finely chopped
  • 1 number bay leaf
  • 2 tbsp broccoli finely chopped
  • 1 number carrot finely chopped
  • 8 number french beans finely chopped
  • 1 number baby corn finely chopped
  • 2 number mushroom finely chopped
  • 1 tbsp sugar
  • 1/2 tbsp black pepper powder
  • salt to taste
  • 2 tbsp corn flour
  • water as required

Instructions

  • Heat a wok, add butter to it.
  • As the butter starts melting, add ginger-garlic to this.
  • Add bay leaf and saute for a minute on low flame.
  • Add onion and white part of the onion.

  • Followed by salt as per your taste.

Rava Kesari: Kesari Bhath: Sheera- a popular and healthy sweet dish.

Rava Kesari is basically a popular sweet dish from the Southern part of India. The term rava signifies semolina and Kesari signifies “the yellow/orange color” of the dish. This is usually prepared with sooji(semolina), ghee, sugar, nuts, and saffron. Rava Kesari is made during festivals as well as during poojas or auspicious occasions. That’s why I am sharing this on the occasion of Basant Panchami. You can also opt for this for breakfast.

In different regions of India, Rava Kesari is known by different names like In Karnataka it is popularly known as “Kesari bhath. In Maharashtra and Gujarat, this same dish is called “sheera”Likewise, In North India, it is commonly called “Sooji ka Halwa”. But as the regions change, there are variations in this dish.

If we talk about the difference between Sooji ka halwa and Rava Kesari then, Rava Kesari is yellow in color and it is slightly on the sweeter side than the sooji ka halwa.

TIPS TO FOLLOW FOR PERFECT RAVA KESARI

  • Roast the Rava/ semolina well on a low- medium flame. This is the most important step in this dish. If it does not roast well, the raw flavor of sooji will degrade the taste.
  • Stir frequently while roasting Rava for even cooking. Do not change the color of the rava to brown.
  • When adding water to roasted Rava, make sure it is bubbling hot. And add water slowly and carefully as the Rava mixture splutters.
  • Stir continuously to make lump-free Rava Kesari.
  • You can adjust the sweetness as per your choice but the standard measurement is 1 cup rawa= 1 cup sugar.

Step by step instructions

Heat a wok, add 2 tbsp ghee in it.

  • As the ghee melts, add dry fruits and fry on low flame till color changes. Transfer the roasted dry fruits on the plate.

  • Add 1 cup of sooji to the ghee.

  • Roast it for 6-7 minutes on low flame. Or till the strong smell comes out.

  • Add hot bubbling water to the Rava mixture.

  • Stir frequently to avoid lumps.

  • As the sooji absorbs all the water, add sugar to it.
  • The mixture will again in running consistency. Allow the sooji to absorb moisture again.

  • Add 2 tbsp ghee followed by the saffron.

  • Add dry fruits. Mix well.

  • Add cardamom powder. Mix it well.
