A Tale of Two Tenderloins: Beef Vs. Pork

It was the best of times, it was the worst of times….

The best of times if you happen to be an AI billionaire.

The worst of times if you look at how much your grocery bills have increased since 2024.

Which brings us to holiday roasts, and in particular, one of the most prized roasts of all: tenderloin. This is the little-used muscle that runs near the spine of pigs and cattle. In both animals, it’s lean, tender, and versatile with the potential to be the meaty star of your holiday table.

But the current difference in price is stupefying: A price check at a local supermarket revealed pork tenderloin was $2.99 per pound while beef tenderloin was $26.99!

Once trimmed of fat and silverskin, beef tenderloin can be cut into individual steaks (filets mignon) or grilled whole, then sliced. Pork tenderloin can be treated the same way, though when sliced crosswise, the cuts are known as medallions. Grilling tenderloins whole is our preferred method of cooking to ensure the meat remains juicy and tender.

Feeling indulgent this holiday season? Here is one of our favorite recipes for beef tenderloin. It uses the reverse-sear method of cooking—a very effective way to treat this exceptionally lean cut of meat. Serve as a main course with Three Hots Horseradish Sauce, or slice thinly and serve on cocktail breads as an appetizer.

Alternatively, take a financially conservative approach with Coffee-Crusted Pork Tenderloins with Redeye Barbecue Sauce. A new holiday tradition is born!

Outdoor Thanksgiving Setup Tips

  • Back yards can be totally transformed with a few patio heaters, string lights, and seasonal decorations. Set up your tables with small-ish pumpkins, gourds and tree branches liked cedar and pine. Position colorful fall flowers (like mums) around the periphery of the party. Provide inexpensive fleece blankets in case the temperature drops.
  • As weather can be very variable this time of year, consider renting tents for your guests.
  • Consider where guests will park and notify neighbors and local authorities that you are planning a party.
  • Many Thanksgiving dishes can be made a day or two ahead. Take advantage when you can.
  • Stock up on party supplies—and don’t forget fuel for your grill!
  • Offer your guests a cocktail, hot apple cider, or a soft drink when they arrive. For the former, we recommend this Santa Fe-inspired beverage: Cider-pressed Chimayó Cocktail. Warmed sangria is also an option.
  • A warm grilled appetizer will endear you to your guests. Keep it on the light side as Thanksgiving is a hearty meal. Skewer large shrimp (three to a skewer) and keep on ice. Coke-Glazed Pork Steaks: A Cheap But Satisfying 3-Ingredient Meal

Yikes! As anyone who’s shopped for groceries lately knows, meat has become shockingly expensive. Ground beef is over $7 per pound. Two rib-eyes command upwards of $30. So it’s supremely satisfying to champion a cut of pork that’s less than $2 per serving AND requires only 2 additional ingredients—both of which you undoubtedly have in your pantry—to make it a memorable main course that will satisfy everyone at your table. I speak of pork steaks, the under-appreciated , underutilized version of pork shoulder. (If you can’t find this cut at your meat counter, ask your butcher to slice a small pork shoulder into steaks.)

But the co-star of this simple dish is Coca-Cola.

A Brief History of Coca-Cola

In 1886, Atlanta pharmacist John Pemberton whipped up a “nerve tonic” (popular in Victorian times) made from coca leaves and kola nuts—thus, Coca-Cola was born. And yes, the whispers are true: early formulas contained trace amounts of cocaine. It wasn’t quite the party you’re imagining; back then, it was just another “medicinal ingredient.”

Why does Coke work so well with pork? When heated, Coca-Cola is transformative: Its sugars caramelize, the carbonation tenderizes the meat, and its gentle acidity breaks down fat and muscle fibers. The result? Pork that’s fall-apart tender with a glossy, mahogany glaze.

I’m sure you’ve found yourself in this position—spontaneously inviting guests without thinking much about the food you had on hand. I did that one Sunday, then panicked. My freezer calmed me down. Several hours later, my friend (who was at my house for “movie night”) ate what she declared “the best sandwich she’s eaten.” She couldn’t believe the meat was made with 3 ingredients!

But let’s be honest, what we really want to grill—what we need to grill—is the perfect hamburger. You know when you taste it: crusty on the outside, juicy inside, sanguine, smoke-scented, and unabashedly luscious. Extra points for an unexpected element, like triple steak or aged wagyu.

Well, our friends at the Barbecue Bible 500 Club spent the summer in quest of the perfect burger. And just in time for tailgating season, they’ve shared with us their favorites.

Confronting a Cooking Conundrum with Creativity

Back in 1982, my late husband Reg and I were newly married living in a rental home without a kitchen stove, but we did have a charcoal grill. The only issue was that we kept losing our favorite foods to the flames. So, Reg fashioned a simple fix using a flat piece of expanded metal to place on the grates. Suddenly, we were grilling shrimp, fish, and veggies without worry. We had no idea that we were reinventing outdoor grilling with a product that would change our lives.

We loved grilling with family and friends and, one of our dear friends, Oscar Sullivan, a proud member of the Grand Ole Opry, saw us using our expanded metal topper and asked if we would make a few to sell at his little store at Singing Hills Campground near Mammoth Cave, Kentucky. Wildfire Presents The Five Best Techniques For Cooking on a Griddle

Most griddling is done in a pretty straightforward manner. You heat the griddle and oil it well. Add the food. Cook until sizzling and browned on the bottom, then cook the other side the same way until done in the center. It’s as simple as that. The short list of foods that can be griddled in this way includes eggs, pancakes, French toast, thin steaks and chops, burgers, chicken breasts, fish fillets, shrimp and crabcakes, thinly sliced vegetables and fruits, noodles, rice, and more – which isn’t such a short list after all. Now, here’s how to griddle them.

Griddle Technique #1: Divide-And-Conquer Griddling

Best for thick sandwiches, like medianoches and muffulettas. Build the sandwich in two halves, with the cold cuts on top. Layer a sheet of parchment paper atop the cold cuts, and start griddling the meat with the parchment paper side down. When the meats are hot and sizzling, carefully turn the half sandwich so the bread side is down. Peel off and discard the parchment paper. Put the two halves together and your sandwich is ready.

Technique #2: Dome Griddling

This method is used for cooking larger or slower-cooking foods, like thicker steaks and chops, chicken pieces, fish steaks—any food that requires a little more heat and time to cook. Place a griddle dome or metal bowl over the food while it’s on the griddle to hold in the heat. Use dome griddling for melting the cheese in a grilled cheese sandwich and speeding up the cooking of a sunny-side up egg.

Technique #3: Steam Griddling

This is a technique developed in Asia to facilitate griddling dense vegetables, like broccoli and winter squash. Work over a medium-hot to hot griddle. Start by cooking the vegetables in oil. Then squirt a tablespoon or two of water on the vegetables. It will boil rapidly, steaming the vegetables in the process. Add more water as needed until the vegetables are sizzling and lightly browned. To intensify the effect, place a griddle dome over the food.

Technique #4: Salt Griddling

A unique method for griddling that Spanish chef José Andrés uses to cook carabineros—Spain’s supernaturally succulent scarlet shrimp. (They take their name from the scarlet uniforms once worn by Spanish carabineros, or police.) Spread out coarse sea salt in a .4-inch-thick (1 cm) layer over your plancha. Heat it well, then lay the shrimp on top. Note: The Spanish like their shrimp barely cooked (make that half-raw) in the center.

Technique #5: Smoke-Griddling

In this method, you smoke right on the surface of the griddle. Heat one zone to high and one zone to medium. Mound a handful of hardwood chips or pellets or a couple of tablespoons of hardwood sawdust directly on the griddle over the hot zone. When it starts to smoke, slide the wood to the medium zone and place the food to be griddled next to it (oil it first). Cover with the griddle dome. Griddle the food covered—the smoldering wood will provide a delicate smoke flavor.

Third-in-a-Series: Sauce Goddess; a Legacy of Wholesome, Healthy and Flavorful Sauces and Spices

For as far back as I can remember, my Dad, not being enamored of liquid smoke flavor, made a special BBQ sauce for our family’s enjoyment. I had no idea it was special until I left home and tried a store-bought off of the shelf product. My disappointment in that inspired me to get my dad measuring cups so I could replicate the recipe and start making it for my friends.

Once, having enjoyed the sauces, they threw down a challenge, “don’t get old and wonder what if I’d done something with my Dad’s recipe.”

With that, I started planning my company, Sauce Goddess in October 2000 – and we’re now celebrating our 25th anniversary! The rest of the story is now history – we’re in over 2,100 retail locations, we’ve been featured on QVC and GMA’s Deals and Steals, and we sell everywhere online.

Revising the Original Recipe, but Retaining the Essence of Flavor

In evolving Sauce Goddess products, I revised my Dad’s recipe to make it vegan friendly and more suited to consumers seeking all-natural products. Oddly, it would seem – because it is a BBQ sauce – I removed Worchester sauce to make it vegan (which it always has been). I also wanted to eliminate high fructose corn syrup. Yes, 20 years ago we were well ahead of the no HFCS and plant-based vegan!

Scaling Up and Branching Out

The biggest difference between our sauce and the majority of all store-bought BBQ sauces is that not one of the 6 flavors we make have any liquid smoke or smokey flavor at all (knowing that the best place to get smoky flavor is from the wood itself). Subsequently, none of our sauces clash with the wood chips or pellets the barbecuer chooses to use. The lack of smoky flavor also means you can use our sauces for meat or fish or veggies, making it perfect for baking, sautéing or simply grilling.

All this said, making my sauces commercially proved to be a bit tricky. The tomato paste we can buy in the store as consumers is nothing like the commercial variety used for large-scale food manufacturing – so the recipe had to be converted into a formula, something our co-packer could use to repeatably make our sauce over and over.

The other enormous obstacle was finding room on the shelves of retailers. Local stores were very open to new, locally-produced products, but national retailers were and still are an ongoing and challenging proposition.

7 Pro Tailgating Tips for Game Day Success

Tailgating isn’t just parking lot BBQ—it’s a carefully choreographed production. Up your game with these advanced tips for a tailgate that’ll be the talk of the parking lot.

1) A laminated checklist (including tickets and parking pass, besides other gear, is a lifesaver: It will prove its worth over and over. (Just ask the guy in the next parking space who left his grill gloves at home.) Update periodically as needed. Load your truck or SUV strategically so the stuff you need first (griddle, cooler, canopy) is nearest the trunk.

2) Bring thick towels, aluminum foil, and an insulated cooler to improvise a holding oven for roast chicken, pulled pork, ribs, etc.

3) Invest in extra tongs, gloves, spatulas so you don’t continually cannibalize the grilling equipment you use at home. Store in a plastic drawer bin or toolbox.

4) Do as much prep work as you can at home to cut down on game-day chaos. Depending on your menu, some foods can be prepared at home the day before the game, then reheated as needed. One of our favorites is Pulled Pork Sandwiches with Mustard Slaw—always a crowd pleaser.

5) Develop a “signature dish,” one guests at your tailgate will always look forward to. Suggestions:

6) Add a griddle to your equipment repertoire. It’s great for sandwiches like smash burgers or Cubanos, breakfast sandwiches, pancakes, fajitas, side dishes, and desserts. Its versatility will impress you. Lacking an independently-fueled griddle, put a large cast iron skillet on your grill grate.

7) Bring a sturdy side table or two to accommodate seasonings, sauces, and grilling tools.

BONUS: Advanced Cleanup & Efficiency Hacks

  • Wrap the inside bottom of your grill with foil before lighting—it makes cleanup way faster.
  • Use disposable drip pans under fatty meats to prevent flare-ups.
  • Keep a small bucket of sand or a metal coal bin to safely dispose of hot coals.
  • Overestimate your charcoal, propane, or whatever. Plus, pack a small metal trashcan for ashes and charcoal. Note: Dispose of them properly before heading home.
  • Use a dedicated cooler for cold drinks (freeze water bottles instead of ice), and another for perishables.
  • Honestly, cleaning at the end is a buzzkill. Keep a spray bottle of cleaner, a roll of paper towels, and a tub for dunking utensils in hot soapy water. You can wrap and haul out a neat kit instead of a greasy disaster.

Battle of the White Meat: Chicken vs. Pork – The Tailgating Showdown

Here at Barbecue Bible, tailgating is one of our favorite times of the year. There’s just something about parking-lot smoke, the clink of cold drinks, and the smell of barbecue drifting through the crowd that makes game day unforgettable.

Passions-to-Profit: Celebrating the Barbecuing Entrepreneur

As the traditional end of summer, Labor Day also serves to celebrate the American work force and their commitment to productive, inventive and important contributions to our society. In this spirit of honoring America’s hard-working heroes, we’d like to dedicate the entire month of September to applaud the entrepreneurs who’ve applied their talents to making your barbecuing adventures more engaging…and tasty!

Second-in-a-Series: Hitchfire; We Can Build a Better Mousetrap (or, in this case, a hitch-mounted grill)!

Years ago, there was a company that manufactured a hitch-mounted grill, and it was quite successful, until it just disappeared from the market around 2007-2008. After conducting some serious market analysis, we’d determined that, perhaps, the financial crisis and subsequent layoffs, had an outsized effect on the existing market for this product, but still felt that the concept was valid and ripe for further development.

Working in stealth mode for about a year, Hitchfire started developing product in 2019, with hopes of launching in early 2020. Unfortunately, the pandemic began to unravel life as we knew it in early 2020, and, needless to say, everything became increasingly more complicated. Tradeshows where we had planned to launch Hitchfire, showcasing our new hitch-mounted grill, had to be scrapped and, eventually, we were forced into virtual launch mode in September 2020.

Patience Played an Outsized Role in Our Success

The pandemic presented a huge obstacle for launching a new company, but everyone was rewriting their playbook, so we had company in figuring out how to reach consumers and launch the Hitchfire brand. The bigger, secondary problem, was a huge spike in demand for outdoor goods, as everyone was turning toward outdoor recreation as a pandemic ‘coping’ strategy. Typically, that wouldn’t be considered an issue, but the demand for goods across the outdoor industry made freight costs skyrocket. As a young small cash constrained company, paying $20k or more for a container was unsustainable and potentially catastrophic. Luckly, we survived, but it took a lot of creativity and patience.

A Unique Selling Proposition: ‘Redefining Life at the Hitch!’

Our entire product line is hitch-mounted, and, although our flagship product is a hitch-mounted grill that deploys in seconds and allows you to keep grease and unwanted smells out of your vehicle, we also offer other hitch-mounted products like kitchens, cook stations and storage solutions. We like to say that we are redefining life at the hitch!

Hitchfire

The primary feature of our products is a proprietary dual swing arm that allows our equipment to easily swing out to the passenger or driver side of the vehicle. The grill mounts to the top of this swing arm offering quick deployment and a convenient place to store your grill so you don’t have it sliding around your truck bed or inside, fouling up your vehicle. When you are ready to head to the big game or wild outdoors, you just turn it off and swing it shut. Tailgating has never been easier!
