This firecracker shrimp rice has simply flabbergasted me with its insanely delicious flavors thanks to its firecracker sauce! I had no idea a simple sauce can be so incredibly tasty that you can make such a stunning meal in under 30 minutes!

With an unavoidable disruption in my blogging schedule, I came back today with an extraordinary recipe to make up for the couple of days delay!

This firecracker shrimp rice will make your home dining a special affair and I can vouch without an iota of doubt that everyone in your family will love it!

I will be honest with you that before trying it on my own, I was also not expecting something as mind-blowing as it proved to be.

I was drawn to it for my favorite thing which is, surprise surprise, shrimp! LOL! The secret behind the crazy deliciousness of this firecracker shrimp rice is not in shrimp; it is in its sauce!

Let’s deep dive into it, shall we?

What is Firecracker Shrimp Rice?

You may have assumed from its name that firecracker shrimp rice is a hot & tangy fried rice topped with sweet & salty shrimps!

Well, you are partly right! This firecracker shrimp rice is indeed a hot & tangy fried rice topped with soft & succulent shrimps! But there is more to it!

It won’t be justified if we simply describe this firecracker shrimp rice as another fried rice! Nope, it’s much more than that!

Let’s talk about the secret sauce of this dish and you will know why I'm claiming it to be so special!

The firecracker sauce is an amalgamation of sweet, tangy, spicy and salty ingredients which come together to make a stir-fry sauce which is beyond perfection!

When the rice & shrimps are stir fried in this incredible sauce, they take a makeover which is way too delicious than anything I had ever imagined!

This firecracker shrimp rice truly turned out to be a pleasant surprise for both of us! My better half was just assuming it to be another shrimp fried rice!

But when he saw its gorgeousness he guessed that it might be something different. And then came the final taste test!

Voila! We both loved it so much that we had to recreate it again to share it with all of you guys as this firecracker shrimp rice is just a must-have!

Being a one pot recipe, this one pot chicken drumsticks and rice is perfect for a weeknight meal and will not only save you from those unhealthy takeaways but also will satiate your taste buds beautifully!

Why must you try this one pot chicken drumsticks and rice?

If you are a chicken lover then chances are that you have already tried many versions of chicken and rice, one of which may already be your absolute favorite!

However, I would urge you to try my version of one pot chicken drumsticks and rice which is so minimalistic yet so powerfully flavorful that you can’t help but fall in love with it!

The key flavor of my chicken and rice comes from the aromatics which is why I used a generous amount of it.

The only spice I used was two heaped teaspoons of cumin powder which imparts an earthy tone to the dish complementing the flavors of the aromatics. And it turned out to be a match made in heaven!

Chicken drumsticks are seared in oil to seal in the flavors of the spices into the meat and develop the brown crust on top that makes the drumsticks irresistibly tasty!

Finally the chicken drumsticks and rice are cooked together in the pot leaving you with chicken flavored fluffy rice and juicy chicken legs!

I could not believe that I haven't yet shared everyone’s favorite and an almost staple veg fried rice recipe in my 10+ years old blog! That’s unpardonable!

Let’s fix that now, shall we? This veg fried rice is one such recipe that you would have made so many times that you actually lost count of it and don’t even think of it as a recipe anymore while making it!

Dipping your feet into Korean food? Here’s gochujang fried rice that you must not miss. quick and easy, this brown rice fry is gluten-free,  vegan and above all delicious.

The current bonding with my teens is learning the ropes of Korean pop. As I am getting educated on the song list, moves, selfie trends etc my brain runs fueled by flavours. Here is the first and easiest, gochujang fried rice. Hopefully, this imperfect gochujang fried rice version will be accepted by my teens. 

What is gochujang?

I am sure you all are familiar with fried rice. Gochujang takes fried rice to a whole new level, the one that you don’t want to put your fork down.  Gochujang is a unique fermented chilli paste made from taeyancho Chili peppers. It is not a ground chilli paste like gochugaru, rather has fermented soy paste, glutinous rice etc, that contributes to the umami flavour it develops. Gochujang does not have the fiery flavour of the chillies. Yes, there is the spiciness,  yet a bit of sweet mellowness comes from the fermentation. Gochujang is used in combination with gochugaru for heat in many recipes. In this fried rice, we have only used the gochujang to create the flavour.

What rice is best for gochujang fried rice?

Medium to long-grain rice is what is best for making gochujang fried rice. The key idea is that the rice is nonsticky, not a glutinous variety. Today I have used brown basmati to make this recipe. The brown basmati has a bite when cooked and fluffs ups perfectly making it easy to stirfry.

Prepping the rice for the perfect texture

Ideally, soak the rice after washing it for 10 minutes. Depending on the method you choose to cook the rice you will need 1l to 2 times of the water to get fluffy rice. Either cook and drain the excess liquid or use the absorption method. Once the rice is cooked, use a fork to fluff it so the rice grains separate better. To be fair, the best-fried rice makes use of leftover rice as it has dried out a little bit keeping the grains separate, yet soft.

Let’s get cooking

Once you have the rice ready, the gochujang fried rice comes together quickly.
Chop up some veggies you have like onions, capsicum, peas, cabbage, carrots etc. I have used sliced leeks, chopped carrots and capsicum to make it. This keeps changing based on what I have at hand.
Next comes the sauce. So, into the bowl goes gochujang paste, soy sauce and  2 tablespoons of hot water. Whisk this to get a smooth sauce.
I guess you are in ready-set-go mode. Fire up that wok and grease it well with oil. Fry the veggies and add the fluffed rice.  Pour the sauce and quickly start mixing. Use two turners to achieve this. So, it is dug and tossed, not stirred. In this way, the sauce and the veggies get evenly mixed without the rice turning mushy. Once all is mixed, the fried rice is ready to be served.

Ingredients

  • 2 tbsp oil
  • 1 tbsp garlic minced
  • 1 tsp fresh ginger root chopped
  • 1/2 cup leeks sliced
  • 1/2 cup carrots chopped
  • 1/2 cup capsicum  chopped
  • 1/2 cup tofu crumpled
  • 3 cups brown rice cooked and fluffed
  • 2 tbsp gochujang
  • 1 tbsp dark soy sauce
  • 1 tsp Toasted sesame seeds

Instructions

  • Stir together the soy sauce and gochujang paste with a bit of water to form sauce. Set this aside till needed.

  • Chop the carrots, capsicum and leeks. Set it aside.
  • Fluff the cooked brown rice and keep it ready.

  • Into the wok add the oil and let it heat up.
  • Once heated, add the garlic and ginger and stirfry to flavour the oil.
  • Add the tofu and stir fry for minute.
  • Now stir fry the veggies.

  • Once the veggies are crisp but sauteed, add the rice.

  • Once the rice is well coated and heated up, sprinkle the sesame seeds and mix well.

  • Taste test and adjust seasoning or salt if needed.
  • Remove from heat and the rice is ready to be served.

Serving suggestions for gochujang fried rice

The best dishes to serve with this gochujang fried rice are roasted tofu, some spicy cucumber salad. Pair with chilled baesook and the meal is complete.

Flattened rice, commonly known as poha, is rice which is flattened into flat, light, dry flakes originating from the Indian subcontinent. These flakes of rice swell when added to liquid, whether hot or cold. The thickness of the flakes varies between almost translucently thin to thick Poha and used in varieties of Indian dishes. It is called by different names in different regions, such as Avalakki (ಅವಲಕ್ಕಿ) in Kannada, Atukulu in Telugu,  Aval in Tamil & Malayalam, Poha in Hindi.

Avalakki Rasayana/Sihi Avalakki/Sweet Poha is a famous dish from Karnataka, usually prepared during festivals to offer as a Prashad to Lord during Tulasi festival or Krishna Janmashtami. Poha/Aval is Lord Krishna’s favorite food, so avalakki kayi bella is prepared for his offerings. Avalakki Rasayana is a very simple dish, involves no cooking, so could be a great energy dish for ones who are fasting for festivals


Red Poha vs White Poha! How to use RED POHA?

Most Indians kickstart their day with Poha for breakfast. So why not try your breakfast with healthy Poha. A healthier variation to the everyday poha is the red poha, which is made from red rice. Moreover, unlike white rice, red rice doesn’t undergo excessive processing, and as such the other bran layer remains intact. Red poha is slightly coarser in texture as compared to white poha.  Red poha can be used pretty much the same way as white poha. You need to rinse the poha 2-3 times and soak it in water first, for at least 10 minutes, so that it softens and then use in many dishes such as salads or stir fry with other vegetables and spices or use in cutlets. This rasayana recipe calls for Red Poha, but you could still use white Poha. It is really about making a healthier choice.

I Usually prepare rasayana as a side dish whenever I make avalakki oggarane (which is the spicy version of poha) for breakfast. Great to pack it in a lunch box too. This Rasayana is a mixture of Red Poha, Jaggery, Coconut, Banana, and Cardamom powder. I call this recipe as 5-ingredient Rasayana that could be prepared within 5-mins.

We had a lot of jackfruits this summer and was finding ways to use in recipes. So thought why not dump into sweet Poha dish and trust me, it tasted so good and made an awesome combination with banana and Poha. Make sure to use only ripe Banana and Jackfruit for this recipe. Jackfruit is purely optional, skip if unavailable. Make this simple no-cook yummy rasayana for breakfast or pack it for lunch box.

Avalakki Rasayana is a very simple, tasty no-cook dish, prepared as a prashad for festivals or even everyday breakfast. 5-ingredient Rasayana!! in 5-mins!!

Ingredients

  • 1 cup Red Poha flattened rice
  • 1 Banana finely chopped
  • ¼ cup Fresh Coconut grated
  • 4-5 Jackfruit thin strips-Optional
  • 1 Tbsp Jaggery Powder add more/less as per taste
  • tsp Cardamom Powder elaichi powder

Instructions

PREPARATION:

  • Rinse 1 cup thick Red Poha/Flattened Rice 2-3 times and soak in water for 10 mins. Skip Soaking if using thin Poha flakes.
  • Tear or cup Jackfruit into thin strips and set aside.
  • Finely chop 1 ripe banana into small pieces and set aside.

METHOD:

  • Strain the soaked Poha and add in a mixing bowl.
  • Add 1 Tbsp Jaggery(or more as per taste), chopped Banana, Chopped Jackfruit and grated coconut.
  • Add a dash of Cardamom Powder and give a good mix.
  • After a few mins, jaggery melts and blends well with the poha. Add ¼ cup milk if you feel it still dry.
  • 5-ingredient Rasayana is ready in 5-mins! Serve this Rasayana as a side-dish with spicy poha(Avalakki Oggaranfor breakfast.

Notes

Many variations can be made to this dish,
  • Red Poha can be replaced with white Poha too.
  • Add more or less of jaggery as per taste. You could also replace with sugar or add half Jaggery and half sugar. You could also add a spoonful of honey.
  • Jackfruit is optional. Add only if available for the season. Traditional Rasayana is done just with banana.
  • Roast few finely chopped cashews and almonds in ghee, along with dry grapes and add to Rasayana.
  • No need Soaking if using thin flakes of Poha. The juice from the sugar/Jaggery and banana is sufficient enough to make it soft.

How to make kara pori recipe ?

kara pori recipe a simple, tasty snack that is made out of puffed rice. kara pori recipe is also known as Garlic Kara Pori Recipe, Garlic Murmura Recipe, masala pori recipe and spicy puffed rice recipe. This Spicy murmura recipe is an easy snack recipe for tea time and one of my favorite recipes used to prepare in rainy season.

Ingredients:

  • Puffed rice – 2 cups
  • Coconut nut oil – 3 spoons
  • Mustard seeds – ½ tea spoon
  • Garlic – 6 cloves (crushed)
  • Roasted Peanuts – half hand full
  • Roasted chana dal – half hand full
  • Red chilli – 3 no’s
  • Curry leaves – 2 sprigs
  • Turmeric powder – ½ tea spoon
  • Required salt

Steps to cook Kara Pori recipe:

  1. To begin, switch on the stove place a kadai when it is heated add coconut oil.
  2. Now add mustard seeds when it is splutters add crushed garlic fry till it become golden colour.
  3. Add roasted pea nuts, roasted chana dal (Pori kadalai or pottu kadalai) then fry till it become crispy (for about 1 minute)
  4. Next add red chilli, curry leaves, turmeric powder and required salt then fry for 1 minute.
  5. Now add puffed rice and mix well up to puffed rice nicely coated in masala.
  6. Check the spicy and salt level of masala Pori or Kara Pori if you want add it now and mix well then switch off the stove.
  7. Spicy and tasty evening snack Spicy murmura recipe is ready to serve.
  8. Serve this spicy puffed rice recipe with hot tea this is the best combination.
