How to Make Ganja Gingerbread Christmas Cookies

Freshly baked gingerbread cookies are an integral part of Christmas. I love anything flavored with ginger—it’s one of my go-to spices. Just another reason why the so-called silly season is my favorite time of year. Speaking of being freshly baked, this year, I decided to add a little extra sprinkle of marijuana magic to my Christmas cookies. So, I reached out to my good friend—and highly regarded cannabis chef— Cheri Sicard for some inspiration. She recommended I try making her famous Ganja Gingerbread.

In Sicard’s recipe, these traditional cookies are given an extra helping of festive fun with her homemade cannabutter. Sweet and lightly spiced, the cannabutter ratio in this recipe means they aren’t overpowered by that tell-tale weedy taste you often get with edibles. Instead, it allows the ginger to shine bright like Rudolf’s nose (figuratively speaking.)

“Each of the 36 cookies in this cannabis-infused gingerbread cookie recipe will have about 15 mg THC, if you made your marijuana butter from average cannabis (10% THC) and used 1/2 ounce of marijuana to make one cup butter,” Sicard states on her website.

As with all edibles, start low and slow and build up, especially since you might forget that these delicious treats are infused, as you can’t really taste the bud butter.

Why You’ll Love These Ganja Gingerbread Cookies

Quintessentially Christmas: Gingerbread cookies are the essence of the holidays and are deeply flavored with aromatic spices including nutmeg, cloves, cinnamon and ginger and sweetened with molasses and brown sugar.

Fun to Decorate: Get creative with the decorating! You can use cannabis leaf cookie cutters as I did, or you can use traditional gingerbread person shapes, stars or whatever you like. Bear in mind that using the cannabis leaf shape will help remove the potential risk of people not knowing that these cookies are infused. Pro tip: Use store-bought colored icing pens to decorate.

Freezer-Friendly: These delicious Ganja Gingerbread cookies will keep for up to three months in an airtight container or freezer bag—not that you’ll have any leftovers.

In the recipe, you’ll have to chill the cookie dough for at least two hours. Trust me, you need the dough to be chilled so it’s manageable to roll out, and it also helps the cookies maintain their shape. If you don’t have chilled cookie dough, you won’t have either!

After rolling out my chilled dough, I used the same cannabis leaf cookie cutters on Sicard’s recommendation. Once they were out of the oven, I let them cool before decorating them, which was super fun.

I’ll have to wait until Christmas morning to see if these Ganja Gingerbread cookies are Santa-approved, but I do know that these fun and festive treats are a delicious way to enjoy cannabis during the holiday season. They also make excellent gifts for your edible-loving friends and family.

Let’s get baked!

Italian Cream Cake (Italian Wedding Cake)

By: Richa

Italian cream cake, also called Italian wedding cake, is a fabulously moist cake with flavors of coconut, pecans, and almond. It’s slathered with cream cheese frosting, and all the flavors come together beautifully. (soy-free and gluten-free options)

slice of Italian wedding cake on a plate

Italian wedding cake is normally much more decadent, with a cream cheese buttercream frosting with tons of sugar. I converted it into a lighter, vegan version.

Traditionally, Italian cream cake is supposed to be dense, but I aimed for a texture that’s still moist and fudgy, but with a little airiness. For the cream cheese frosting, I kept it less sweet, but you can always add more sugar if you prefer.

This cake it absolutely delicious and perfect for special occasions! It’s moist and fluffy with a rich texture and tangy, sweet cream cheese frosting. The toasted coconut and pecan toppings add texture and an incredible flavor.

The cake comes together quickly with everyday ingredients. If you don’t have almond extract, you can omit it. There’s still plenty of flavor without it!

Why You’ll Love Italian Wedding Cake

  • lightened up version of the traditional recipe, but still moist and decadent-tasting
  • delicious combination of textures and flavors – fluffy cake, creamy frosting, and toasty coconut and pecans on top

  • easy to make gluten-free and soy-free

It’s fall, and it’s time for some comfort food. And what’s more comforting than this casserole, which has a stewy mushroom gravy with beans and veggies, topped with potatoes smothered in garlic butter? There are lots of fall herbs, like fresh thyme and sage, and it all comes together really quickly.

This is a super easy one-pan casserole. No need to sauté or stand around the kitchen for long periods of time cooking the onions and mushrooms. Everything goes right into the baking dish, and the oven does all the work.

Sesame Crusted Tofu Bowls

By: Richa

This Crispy Sesame crusted Tofu is Quick and super delicious! Tofu cubes are tossed in the peanut sauce then coated in sesame seeds and baked until crispy. Serve over greens dressed in peanut sauce, in a wrap or over noodles! Peanut-free  & soy-free version included.

a salad bowl topped with sesame crusted tofu and drizzled with peanut sauce

I’ve developed a full-blown obsession with these sesame-coated tofu bowls!

I don’t know whether it’s the nutty, crunchy sesame-crusted baked tofu that does it for me or the totally addictive peanut sauce…it’s most likely the combination of both because I would not want to do without any of these additions.

a salad bowl topped with sesame crusted tofu and drizzled with peanut sauce

I love that the sesame-crusted tofu is baked in the oven and turns out super crispy without having to add any flour or breadcrumbs the to coating.

Before coating the tofu in sesame, we toss the tofu cubes in some of our peanut sauce to allow the seeds to stick to them properly. This works way better than egg wash AND adds a bunch of flavor to our baked tofu.

These bowls are perfect for meal prep and the spicy peanut dressing keeps in the fridge for a whole week.

Irish Soda Bread

We are going through a history where the world is witnessing a pandemic episode of Covid-19.  As the world reels in the #StayAtHome concept lots of new ideas are popping up on internet to keep oneself busy and sane. One of them being Baking YES... Baking Breads, Cakes, Muffins, Brownies, Pastries is at its peak and is being enjoyed thoroughly across the globe as we silently fight against the Virus and pray that it dies down.

Irish Soda Bread

I venture into baking once in a while. This time it was so tempting for me to just  not to ignore the call of baking a bread. But sigh!! I had to be patient as I did not have yeast in my pantry. Going to grocery stores at the drop of the hat is a big NO NO now, to add to it I kept forgetting to add that ingredient on my list of next home delivered order.

So I was left with no option but to look for something that used no Yeast. Something that was quick, simple and no fermentation recipe for my bread as I craved to make one!

And voila came across Irish Soda Bread in a 5 year old magazine which I was browsing while having my tea.
As befitting many of the best breads in the world – Irish Soda Bread is a traditional Irish speciality- it was made with only the most basic of ingredients: flour, baking soda (used as a leavening agent instead of yeast), soured milk to moisten and activate the soda, and salt.
Irish Soda bread remains an international favorite.  Before baking, a cross was cut on the top with a knife, to ward off the devil and protect the household.
Something about it, when you mark that X just before the bread goes in the oven, makes you smile and you know it will come out right :)

You are going to love it I promise.

Made this in like 50 mins [included baking time] and it was ready to be relished with your butter/jam/marmalade.....

Here goes the recipe:

Ingredients:

  • 3 tbsp honey
  • 1 1/4 cup buttermilk
  • 1 egg
  • 2 tsp orange zest ( optional)

  • Pour this mix into dry flour ingredients. Bring everything together with a spoon.
  • On a parchment paper transfer the dough n knead it gently (sprinkle flour on top if needed) should be soft and little sticky.
