how to make idli batter at home ?

Idli batter is prepared with idli rice and urad dal. In south India, vegetarian recipes index without idli dosa with sambar is incomplete. Idli recipe and dosa recipe has very important place in South India . IR 20 rice variety or vellaikar rice are best rice for idli. soft idli recipe goes well with coconut chutney, sambar, Kara chutney and tomato chutney

Idli ingredients:

  • Idly rice (vellaikar rice) – 1 kilogram
  • Ponni rice – ½ kilogram
  • Black Urad dal – 175 gram
  • White urad dal – 75 gram
  • Fenugreek seeds – 2 spoons
  • Water to soak and grind idly batter

Steps to grinding idli batter/ making batter :

  • To Begin soak idli rice in a bowl for minimum 4 hours
  • Soak white and black urad dal separately for 4 hours (add fenugreeks seeds in last 15 minutes).
  • After 4 hours, wash white urad dal two times and keep it aside.
  • Mean while take a black urad dal then remove black part of the urad dal and keep it a side.
  • Now put both urad dal in to grinder (table top grinder is best grinder for dosa batter preparation), and then grind up to 20 to 30 minutes till urad dal become fluffy.
  • At middle interval add ice cubes instead of water in urad dal, it will increase quantity of urad dal and reduce grinding heat.
  • Take a idli batter container and pour urad dal batter, and then pour washed rice in grinder and grind up to light semi coarse consistency by adding little amount of water(should not add too much water. consistency should be light thick).
  • Next mix urad dal batter and rice batter with required salt and ferment up to minimum 10 hours.
  • Once fermentation completed mix again and well and keep it a side.
  • The perfect batter is ready to make soft and spongy idllies.

How to make horse gram recipe ?

kollu paruppu recipe is very famous in Kongunadu. People prefer horse gram for weight loss in ayurveda also horse gram good for diabetes. we used to prepare kollu paruppu recipe often especially to treat cold which goes well with white rice. lets see how to cook horse gram recipe now.

Ingredients:

  • kollu paruppu ( known as horse gram tamil & kulthi beans in hindi ) – 1 cup
  • Water to cook horse gram
  • Castor oil – ½ spoon
  • Country tomato – 1(big)
  • Turmeric powder – ¼ spoon
  • Shallots – ¼ cup (cleaned)
  • Red chilli – 3 no’s
  • Curry leaves – 1 sprig
  • Garlic – 4 cloves
  • Cumin seeds – ½ spoon
  • Coriander seeds – 1 spoon
  • Coriander leaves – 4 stalks
  • Required salt

Steps to cook kollu paruppu recipe in pressure cooker:

  1. To begin take a bowl add horse gram and wash them thoroughly.
  2. Switch on the stove place a cooker then add 2 ½ cups of water, ½ spoon of castor oil, ¼ spoon of turmeric powder, one big country tomato.
  3. Now close the pressure cooker and cook kollu paruppu up to 3 whistles.
  4. Steps to cook kollu paruppu in earthen pots and normal pan:
  5. Switch on the stove place earthen pot or steel pan, add 3 cups of water then is hot add in washed horse gram.
  6. Followed by ½ spoon castor oil, one big country tomato then cook up to 15 minutes
  7. After horse gram half cooked add turmeric powder then cook until horse gram fully cooked.

Steps to grind kollu paruppu:

  1. At first switch off the stove drain the excess water in horse gram and keep it aside.
  2. Next add cleaned shallots, red chilli, curry leaves, coriander leaves, cumin seeds, coriander seeds, required salt in cooker, earthen pot or normal pan.
  3. Leave it all spices for 10 minutes.
  4. Now take a mixer grinder put all things in to it and grind them as semi coarse paste. (No need to add water if you want add drained water from horse gram)
  5. You can also add kollu paruppu in Aattu kal and grind well as semi coarse paste. (Taste will be super good)
  6. Spicy authentic Kongu special kollu paruppu recipe is ready to serve.
  7. Drizzle some homemade ghee or coconut oil on the top of the kollu paruppu and serve with hot white rice.

kara pori recipe a simple, tasty snack that is made out of puffed rice. kara pori recipe is also known as Garlic Kara Pori Recipe, Garlic Murmura Recipe, masala pori recipe and spicy puffed rice recipe. This Spicy murmura recipe is an easy snack recipe for tea time and one of my favorite recipes used to prepare in rainy season.

Ingredients:

  • Puffed rice – 2 cups
  • Coconut nut oil – 3 spoons
  • Mustard seeds – ½ tea spoon
  • Garlic – 6 cloves (crushed)
  • Roasted Peanuts – half hand full
  • Roasted chana dal – half hand full
  • Red chilli – 3 no’s
  • Curry leaves – 2 sprigs
  • Turmeric powder – ½ tea spoon
  • Required salt

Steps to cook Kara Pori recipe:

  1. To begin, switch on the stove place a kadai when it is heated add coconut oil.
  2. Now add mustard seeds when it is splutters add crushed garlic fry till it become golden colour.
  3. Add roasted pea nuts, roasted chana dal (Pori kadalai or pottu kadalai) then fry till it become crispy (for about 1 minute)
  4. Next add red chilli, curry leaves, turmeric powder and required salt then fry for 1 minute.
  5. Now add puffed rice and mix well up to puffed rice nicely coated in masala.
  6. Check the spicy and salt level of masala Pori or Kara Pori if you want add it now and mix well then switch off the stove.

Finger Millet is a nutritious grain which is staple food in most of the South India. This Ragi Dosa also know as Finger Millet Dosa and Nachni Dosa. Instant ragi dosa made with homemade sprouted ragi flour is a healthy breakfast/Dinner for babies, toddlers and kids. Lets see how to prepare Instant Ragi Dosa with simple steps

Ingredients:

  • Ragi flour – 1 cup
  • Water to mix ragi flour
  • Salt to taste

For seasoning:

  • Oil – 3 spoons
  • Mustard seeds – ½ tea spoon
  • Chana dal – 1 spoon
  • Big Onion – 1 (finely chopped)
  • Red chilli – 1 no
  • Curry leaves – 1 sprig

Steps to cook instant ragi dosa:

  1. Take a bowl add one cup of ragi flour, required salt then mix well and keep it aside.
  2. Turn on the stove. place a fry pan when it is heated add oil, after one minute add mustard seeds when it is splutters add chana dal fry for a second.
  3. Now add finely chopped onion fry till it become transparent, then add red chilli and curry leaves then fry for a minute then switch off the stove.
  4. Next take a ragi mixture in bowl add these fried item into ragi flour.
  5. This is time to add required water in to ragi flour then mix well.
  6. Ragi dosa batter should be in not thick and not thin consistency.
  7. Switch on the stove place a dosa tawa, when it is heated sprinkle some water and pour the instant ragi dosa batter and make dosa.
  8. Turn other side and cooked well both sides of ragi dosa.
  9. Healthy, easy and instant ragi dosa is ready to serve.

Thattai Vadai recipe – how to make thattai Murukku – Thattu vadai, Nippetu

How to make Thattai Vadai recipe ?

Thattai Vadai recipe is a popular snack that is quite popular in South India. Also known as Thattai Murukku, thattai recipe, nippattu recipe, nippat and Thattu Vadai. We used to prepare this often for Pongal, diwali, Krishna Jayanthi and other festival.

Ingredients:

  • Ponni rice – ½ kilogram
  • Roasted Bengal gram – ½ kilo gram
  • Red chillies – 15 no’s
  • Channa dal – 2 spoons (soaked in water for 15 minutes)
  • Salt as required
  • Water to grind the rice
  • Butter – 50 gram (in room temperature)
  • Oil – for deep frying

Steps to cook Thattai Vadai recipe:

  1. In a bowl add half kilogram ponni rice, wash twice then soak in water for two to three hours.
  2. Next take a roasted Bengal gram in a mixer grinder then grind up to light coarse powder. (Don’t grind a fine powder)
  3. Now take soaked ponni rice and drain the water completely, then put into grinder, now add required salt and water then grind.
  4. Next grind three spoons of soaked rice and chillies and grind up to semi coarse.
  5. After five minutes add semi coarse red chilli paste in a grinder then grind up to fine paste like idly rice batter consistency. (at middle of grinding add required water )
  6. Now take another bowl, pour Thattai murukku batter and then add lightly coarse roasted bengal gram powder then mix well.
  7. Add butter in Thattai murukku batter and mix well.
  8. Now add soaked channa dal and mix well the Thattai murukku batter.
  9. It’s a time to check salt and spicy, if required add it now and mix well the Thattai murukku mixture.
  10. The dough should be like poori dough consistency.
  11. Next take a white cotton cloth, spread in reverse portion of any steel silver plate.
  12. Take a small portion of the Thattai murukku mixture and make a ball and spread in the cotton cloth with help of your palm.
  13. Make Thattai murukku shape and keep it a plate for deep frying.
  14. Use same procedure for until all Thattai murukku dough finished.
  15. Make two batches of Thattai murukku and then mix well the remaining dough to avoid hardness.
  16. Don’t press much the Thattai murukku ball, just use your palm and finger gently in a Thattai murukku balls.
  17. Next switch on the stove place a kadai and pour enough oil for deep frying.
  18. Take a pinch of the dough and put into oil whether oil is heated or not.
  19. When it is rise up, oil is heated then put Thattai murukku in oil one by one carefully.
  20. Now wait for 5 minutes then turn Thattai murukku another side then fry till it become crispy. (Don’t burn the Thattai murukku)
  21. Put the fried Thattai murukku in tissue paper to absorb extra oil and then transfer Thattai murukku in to air tight container after cooled completely.
  22. Spicy Thattai Vadai recipe is ready to serve.
  23. Enjoy this Thattai Snack as evening snack with tea.

Ingredients:

  • Milk – ½ litter + 2 spoons
  • Sugar – 4 spoons
  • Custard powder – 2 spoons
  • Cardamom powder – ½ tea spoon
  • Apple – half (cut in to cube)
  • Ripped banana – 1 (sliced)
  • Panner grapes – half handful

Steps to prepare Fruit custard recipe:

  1. Take a heavy bottom pan add half litter cow milk.
  2. Switch on the stove and place a pan then heat.
  3. When it is rise up slow the heat in to low flame then add four spoons of sugar and mix well.
  4. After sugar dissolved completely, take a bowl add two spoons of custard powder and add two spoons of milk then mix well without any lumps.
  5. Now turn the flame in low, it is a time to add custard mixture in to milk.
  6. Mix well the custard mixture and boil for 10 minutes in a medium flame until it turns thick consistency (not too thick).
  7. switch off the flame and cool the custard mixture completely in a room temperature.
  8. Add cardamom powder and mix well.
  9. This is right time to add fruits like apple, ripped banana, Panner grapes and mix well the custard recipe.
  10. Flavorful homemade Fruit custard recipe is ready to serve; you can save now as it is.
  11. Put this custard recipe in to fridge in 20 minutes and then served as chill custard recipe.

How to make thuthuvalai rasam recipe for cold and cough ?

thuthuvalai rasam recipe is a healthy, spicy and a medicinal south Indian rasam recipe, good remedy for cold, fever and cough. Thuthuvalai Soup For Cold-Cough is easy to make and very tasty. Lets see how to prepare thuthuvalai rasam for rice.

Ingredients thuthuvalai rasam recipe:

For grinding:

  • Thuthuvalai leaves – 10 leaves
  • Ground nut oil – 2spoons
  • Small onion – 1 cup
  • Garlic -10 pods
  • Red chili – 2 no’s
  • Dry ginger – small piece
  • Horse gram – 1 spoon
  • Coriander seeds – 2 spoons
  • Cumin seeds – 1 spoon
  • Pepper corns – 1/2 spoon
  • Turmeric powder – 1/2 tea spoon
  • Curry leaves – 1 sprig

For seasoning:

  • Ground nut oil – 2 spoons
  • Mustard seeds – 1/4 tea spoon
  • Small onion – 1/4 cup (cleaned and crushed)
  • Curry leaves – 1 sprig
  • Salt as required
  • Water as required

Steps to prepare thuthuvalai rasam recipe:

  1. First wash the thuthuvalai leaves thoroughly (it has thorns at back side of the leaves so wash carefully)
  2. Switch on the stove take a kadai add two spoons of groundnut oil when it is heated add cleaned shallots and garlic pods then fry till it become transparent.
  3. Next add red chili followed by horse gram, coriander seeds, cumin seeds, pepper corns, dry ginger, turmeric powder then fry for two minutes.
  4. Finally add cleaned thuthuvalai leaves and curry leaves then fry well.
  5. Now switch off the stove and cool the mixture completely.
  6. Take a mixer grinder add the mixture and grind a fine paste.
  7. And then switch on the stove place a casserole on a stove and heat, then add ground nut oil when it is heated add mustard seeds, then it is splutters add cleaned shallots then fry for two minutes then add curry leaves and fry.
  8. Its a time to add grounded masala then fry for a minute.
  9. After that add required amount of salt and water then bring to boiling.
  10. After 10 minutes check salt and consistency of rasam, if the thuthuvalai rasam is thick means add some water and adjust salt also.
  11. Healthy, hot and spicy thuthuvalai rasam (soup) is ready to serve.
  12. Transfer this thuthuvalai rasam in to soup bowl and drink.
  13. We can in take directly this thuthuvalai soup and it goes well with white rice only.

  • Pirandai – 20 sticks (your finger sized Pirandai)
  • Ground nut oil – 4 spoons
  • Chana dal – 3 spoons
  • Coriander seeds – 2 tea spoons
  • Cumin seeds – 1 tea spoons
  • Red chilli – 2 no’s
  • Tamarind – small piece
  • Shallots – 1 cup (cleaned)
  • Curry leaves – 1 sprig
  • Coriander leaves – 2 stalks
  • Salt to taste
  • Water to grind chutney

Steps to cook pirandai chutney recipe:

  1. Pirandai cleaning method: At first take a coconut oil then apply your both palm fully (to avoid itching). Now take a Pirandai, remove the skin and wash them thoroughly then keep it aside (like drumstick cleaning)
  2. Now switch on the stove place a kadai when it is heated add 2 spoons of groundnut oil and then add cleaned Pirandai then fry till it become crispy(don’t burn).
  3. Take a fry pan add remaining ground nut oil then add chana dal fry for two minutes then add coriander seeds fry for a minute, then add cumin seeds followed by red chilli, tamarind.
  4. Next add cleaned shallots fry till it become transparent then add curry leaves, coriander leaves fry for a two second then add already fried Pirandai and required salt then fry for a minute.
  5. Now cool the mixture completely then transfer Pirandai mixture in to mixer grinder and grind well with little amount of water.
  6. Healthy and tasty pirandai chutney recipe is ready to serve.
  7. Serve this Pirandai Thuvaiyal recipe with hot white rice.

  • Water – ¼ cup water
  • Salt to taste

Steps to prepare masala butter milk:

  1. Take a mixer grinder add lightly sour curd (without milk cream) and water grind well for 1 minute.
  2. Now take a serving glass and add one glass of butter milk, required salt then mix well.
  3. Next take a mortar and pestle at first and then add green chilli crushed well put in to butter milk.
  4. Now add cumin seeds then crushed well and add in to masala butter milk and mix well.
  5. Next add ginger and crushed well then put it in to butter milk.
  6. At last tear some curry leaves and put in to butter milk then check salt, if less means add and mixed well.
