Winter is just round the corner and so is the craving for that soulful bowl of warm soup that will perfectly fit the bill as a one pot meal!

So here I come with my homemade chicken noodle soup that not only looks gorgeous but can also give the restaurant version a run for its money in terms of its flavors and taste!

Asian chicken noodle soup is a widely popular soup and I am not surprised at all! If a single dish can work as an entree as well as main course, who wouldn’t love it?

I made this a week before Diwali when we were feeling a little under the weather; we loved it so much that we immediately decided to prepare it for our little blog and share it with ya’all!

Chicken Lollipops are everyone’s favourite party starter for a reason. And making them at home is so much easier than you think!

If there’s one appetiser that never lets you down, it’s Chicken Lollipop. Crispy edges, juicy meat, and that hint of spice that hits just right. There’s a reason you will find it at every celebration, from family get-togethers to late-night takeout orders.Β 

With this recipe you can bring that crunchy, flavourful magic straight to your kitchen. I usually serve this with my homemade schezwan sauce, or Thai sweet chilli sauce, but it tastes really good with ketchup, mayo, or any other dip of your choice.Β

  • Chicken Lollipops: These are the middle segments of chicken wings that are trimmed into a β€œlollipop” shape.

Ingredients

  • 500 grams Chicken lollipop
  • 2 tablespoons Soy sauce
  • 2 teaspoon Red chilli sauce
  • 1 tablespoons Vinegar
  • 1 tablespoons Tomato ketchup
  • 1 tablespoons Red chilli powder
  • 1 tablespoons Garlic paste
  • 1/4 tablespoons Salt
  • 1/4 cup Cornflour
  • 2 tablespoons All purpose flour
  • 2 tablespoons Rice flour
  • 1 Egg
  • 1 tablespoons Ginger paste
  • Oil for frying

Instructions

  • Whisk together soy sauce, red chilli sauce, vinegar, tomato ketchup, red chilli powder, garlic paste, salt in a bowl and toss the chicken lollipops in it. Marinade for half an hour.
  • In the same bowl, add cornflour, all purpose flour, rice flour, egg and ginger paste and mix well to create a thick batter and coat the lollipops in it.
  • Heat about two inches oil in a wok or kadhai to 350F/ 176C. Add the battered lollipops one by one to the oil in such a way that the meat is at the bottom and the bone is on top (watch the video to see how I do it). Fry these on medium high heat till golden brown – approx 3-4 minutes.
  • Take these out on a tissue paper to blot out any excess oil and serve hot with schezwan sauce.

  1. Cutting chicken lollipop: Chicken lollipops are prepared using the middle segment of the chicken wing. You can watch this video to learn how to do this at home or just buy them pre-prepared from the store.
  2. Marinade:Β marinade for at least 30 minutes. For the best results, marinate the chicken in the refrigerator overnight. Remove the chicken from the refrigerator 10 minutes prior to frying.Β Β 
  3. Oil temperature:Β Ensure the oil is at 350F/ 176C for frying the chicken. This temperature is ideal for perfectly cooked crispy chicken.Β 
  4. Make these in advance: You can also make these ahead by frying them once and storing them for a couple of hours. If there’s one chicken curry that never fails to impress me, it’s this Chettinad Chicken Curry. When you make this at home, there’s something magical about the way your whole kitchen comes alive with the smells of pepper, curry leaves, and that nutty coconut. aroma fills up every corner.

This recipe has strong spicy flavors but it’s also comforting in the way only homemade food can be. A slow-roasted spice paste and a touch of coconut bring everything together into a rich curry that’s perfect for when you want something hearty and deeply satisfying.Β 

Chicken Chettinad Curry Ingredients

  • Chicken: We have used boneless thigh chicken pieces as they remain juicy through the cooking process. You can use bone-in chicken, however I would not recommend using breast pieces. Β 
  • Coconut oil: For that nutty, authentic South Indian flavors. You can use a neutral-flavored oil or ghee in a pinch, but it will alter the flavors slightly.Β 
  • Whole spices: Mustard seeds, fennel seeds, and curry leaves for an earthy fragrance.
  • Aromatics: Sliced sambar onions (or shallots), green chilli, red chilli, and ginger-garlic paste.
  • Tomato puree: To bring slight sweetness and tang.
  • Chettinad spice paste: Freshly ground cumin seeds, coriander seeds, dried red chillies, black pepper, fennel seeds, cinnamon, green cardamoms, and grated coconut; this is what gives the curry its peppery kick.

  • 500 grams chicken boneless thigh, cut into 3/4th inch cubes
  • Β½ teaspoon turmeric powder
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • Β½ teaspoon fennel seeds or saunf
  • 3 – 4 sprigs curry leaves divided
  • 25 sambar onions approx. ΒΎ cup thinly sliced
  • 1 green chilli slit
  • 1 red chilli whole
  • 1 teaspoon ginger garlic paste
  • ΒΌ cup tomato puree
  • ΒΎ teaspoon salt
  • 1 – 1 ΒΌ cup water divided
  • 1 tablespoon chopped coriander leaves

  • 1 tablespoon cumin seeds or jeera
  • 1 tablespoon coriander seeds or dhaniya
  • 6 byadgi or kashmiri red chillies dry
  • 1 teaspoon black pepper whole or kali mirch
  • Β½ teaspoon fennel seeds or saunf
  • 1 inch cinnamon
  • 4 green cardamoms
  • ΒΌ cup grated coconut
  • ΒΌ – Β½ cup water

Instructions

  • Marinate chicken with turmeric powder and set aside.
    500 grams chicken, Β½ teaspoon turmeric powder
  • Add all the ingredients under spice paste except water and dry roast on a low flame for 3-4 minutes till they start smelling nutty and the coconut is a light golden. be careful not to burn the spices. grind with ΒΌ – Β½ cup of water into a fine paste.
    1 tablespoon cumin seeds, 1 tablespoon coriander seeds, 6 byadgi or kashmiri red chillies, 1 teaspoon black pepper, Β½ teaspoon fennel seeds, 1 inch cinnamon, 4 green cardamoms, ΒΌ cup grated coconut, ΒΌ – Β½ cup water
  • in a pan, heat coconut oil and add mustard seeds and fennel seeds. Once they start crackling, add 3 sprigs of curry leaves, onions, green chilli, red chilli and ginger garlic paste. Cook until the onions are a light pink. add the ground spice paste and cook for 5-7 minutes. Add tomato puree and cook for 5-6 minutes till the rawness goes & oil separates from the masala.
    2 tablespoons coconut oil, 1 teaspoon mustard seeds, Β½ teaspoon fennel seeds, 3 – 4 sprigs curry leaves, 25 sambar onions approx. ΒΎ cup, 1 green chilli, 1 red chilli, 1 teaspoon ginger garlic paste, ΒΌ cup tomato puree
  • Add marinated chicken and saute for 2 minutes. Add ΒΌ cup of water and salt, cover and cook on low for 15 minutes till the chicken is cooked well. Keep checking the gravy every 5-6 minutes as it tends to stick to the bottom of the pan. If so, add 2-3 tablespoons of water and continue cooking.
    1 – 1 ΒΌ cup water, ΒΎ teaspoon salt
  • garnish with the remaining 1 sprig of curry leaves and chopped coriander leaves.

Instructions

  • Take all the ingredients for the sauce mix in a bowl, mix well & set aside.
    3 tablespoons mayonnaise, 2 tablespoon chilli sauce, 2 tablespoons sweet chilli sauce, 1 tablespoon soy sauce
  • Add chicken to a bowl. Add garlic, salt, pepper & chilli powder, 2 tablespoons of sauce mix and mix well to marinate the chicken. Set aside for 25-30 minutes.

  • Thread the marinated chicken pieces onto the skewers. Make 3-4 skewers.

  • Pre-heat the airfryer to 200C and brush the basket with oil. Place the chicken skewers on the basket with some gap in between, spray or drizzle oil and air fry at 200C for 3 minutes until they are cooked through. brush with sauce mix & air fry at 200C for 2 minutes, flip the skewers, brush with sauce mix and air fry at 200C for 2-3 minutes until they are slightly browned around the edges.

Sesame chicken is an Asian-cuisine-inspired recipe that was invented in North America and has become super popular thanks to its flavor, taste and ease of prep!

Now like any other Asian stir fried recipe, a typical sesame chicken is also fried in a generous amount of oil before being tossed in the flavorful sauce.

The sauce! Yes, that’s the USP of this classic sesame chicken!

Instructions

Marinating chicken

  • Take all ingredients for marination in a bowl, mix to combine well. Set aside for 30 minutes.

Dredging chicken

  • Take maida, baking powder & salt in a deep plate or a flat bowl, sprinkle water and mix the flour to get large clumps in it. Dip marinated chicken and ensure it is coated well on all the sides. Place it on a plate and repeat the same process for all the marinated chicken cubes.

Deep Fry method

  • Heat Β½ cup of oil in a deep pan and once it’s medium hot, drop dredged chicken into the oil & fry on medium heat for 4-5 minutes or till they turn crisp. Set aside.

Airfryer method

  • Pre-heat airfryer at 180 C. brush the airfryer basket with oil. Place the dredged chicken with some gap between each other and air fry at 180C for 13 minutes while flipping and brushing oil on chicken every 7 minutes. Air fry at 200 C for 2 minutes till they turn crisp.

Honey garlic sauce

  • Take all ingredients under honey garlic stir fry except oil & garlic in a bowl & mix to combine well. Set aside.

  • Heat 1 tablespoon oil in a pan or wok, add garlic & saute on high for a minute. Add the honey garlic sauce & cook for 1-2 minutes. Add the fried chicken, toss well for 1-2 minutes and serve.

Chicken Lettuce Soup

A one-pot soup meal made with leftovers and greens, this is great for a working day dinner

  • 250 grams Smoked chicken (shredded/boneless)
  • 200 grams Lettuce
  • 1 Carrot
  • 1 cup Cooked noodles/spaghetti (optional)
  • 1 Onion
  • 1/2 inch Ginger (grated)
  • 6 cloves Garlic
  • 3 tablespoon Olive Oil
  • 3 Chicken stock cubes
  • Salt (as required)
  • Black pepper powder (as required)
  • 1 litre Water
  1. Peel and mince the onion and garlic cloves.
  2. Peel and cut the carrot into cubes
  3. In a large pot, heat olive oil.
  4. Add onion, garlic, ginger and sautΓ© till the onion is slightly translucent.
  5. Throw in the carrots.
  6. Pour in the water, add the chicken stock cubes, cover and simmer for 7-10 minutes, stirring frequently to ensure there are no stock cube lumps.
  7. Cube or tear the cooked chicken and add to the simmering pot of soup.
  8. Wash the lettuce well, tear and add to the soup.
  9. Add the cooked noodles/spaghetti if using.
  10. Check the seasoning and add salt and/or pepper if required.
  11. Adjust the consistency of the soup with water if required.
  12. Simmer for another 7-10 minutes.
  13. Serve hot with bread of choice.

Butter chicken has a reputation for being tricky, but I am here to tell you it doesn’t have to be! This recipe keeps all the rich, smoky, restaurant-style flavour we love, without needing to spend hours in the kitchen or use buckets of cream and butter. The chicken stays juicy, the gravy turns out velvety, and you’ll probably want to wipe every last drop off the plate with some naan.

What makes it extra fun is how simple the process of making this murgh makhani actually is. A quick marinade, a good sear, and then everything simmers in that luscious tomato-cashew sauce until it’s deep, bold, and comforting.Β 

Ingredients To Make Butter Chicken

To start with, here’s what you’ll need to marinate chicken for the butter chicken masala:

  • Chicken thighs (boneless, skinless) – Juicy and tender, perfect for holding flavour.
  • Hung curd or Greek yogurt – Acts as a tenderiser and helps the spices stick.

Recipe Tip

If you don’t have cashews, feel free to substitute with blanched almonds (almonds soaked in water and skin taken off). Cashews and almonds naturally add creaminess to the gravy.Β 

Origins of Butter Chicken

Butter Chicken is an β€˜accidental’ dish. It was developed by Kundal Lal Gujral of the famous Moti Mahal restaurant in Delhi who wanted to make use of leftover tandoori chicken. So he would throw in tomatoes, spices and leftover shredded tandoori chicken in a pot and slowly this came to be called β€˜butter chicken’ or chicken makhani or murgh makhani.

Now it’s one of the most popular and loved Indian dishes across the world. A restaurant favourite, but if you ask an Indian, it’s probably a β€˜special occasion’ dish at home.

Step by Step Butter Chicken Recipe

Here’s a step by step breakdown of this easy chicken curry. It’s a really simple dish that actually doesn’t take too much time or effort to recreate at home.

Marinating Chicken

Start by mixing all the ingredients under marinade and adding the chicken to it.

Mix well, cover and set aside for 15-30 minutes while you make the gravy.

Making Gravy

Heat 1 tablespoon oil and 1 tablespoon butter in a skillet or pan. Add cinnamon, cardamom, cloves, whole red chilies and garlic. Saute for a minute or so till fragrant.

Add onions and saute on high heat for 2-3 minutes till pink and translucent.

Add tomatoes and cashew nuts. Mix once, reduce the flame to a simmer and cover and cook for 10-15 minutes till the tomatoes start breaking down and becoming slightly pulpy. Switch off the flame. Let the mixture cool completely.

Once the mixture is cool, transfer to a blender or liquidiser, and blend till smooth.

Transfer the puree back to the pan. Add chilli powder, ketchup, salt and 1/4 cup water. Bring this to a boil. Reduce the flame to low, and cover and cook for 20-25 minutes. The colour of gravy will change as it cooks and become a deep orange

Gently stir the gravy to incorporate all the masalas.

Skewer the marinated chicken and keep them ready to cook.

Cooking chicken

In another pan, heat a tablespoon of oil. Add the chicken pieces and sear them on each side for 2-3 minutes on high heat, till theres a char on them. Remove them from the pan and set aside.

Preheat your air fryer and then air fry at 190C for 5 minutes. We want to cook the chicken partially because it will continue to cook in the gravy.

Making Butter Chicken

Add the chicken pieces and simmer for 10 minutes.

Stir in the kasuri methi and fresh cream.

Naturally orange gravy

I have to forewarn you about this. If you’ve always had reddish butter chicken gravy, it’s because of food colour. The butter chicken gravy is naturally orange-ish because of the tomatoes and the spices.Β 

This recipe makes lots of sauce or gravy, so you can always reserve some for later. Use the same makhani gravy to add tofu, paneer, cauliflower etc. That butter chicken sauce is sooo good!

  • Don’t skip the marinade – It makes sure every piece of chicken is flavourful all the way through.
  • Thighs over breasts – Chicken thighs stay juicy even after simmering in the sauce, unlike breasts which can dry out.

Ingredients

  • 1 kg Chicken Thighs skinless and boneless , cut into 1.5 inch pieces (or use bone-in Chicken pieces)
  • 1 tablespoon Oil

For the Marinade

  • 1/2 cup Hung Curd or Greek Yogurt
  • 1 tablespoon Kashmiri Chilli Powder sub with 1/2 tbsp paprika + 1/2 tbsp cayenne
  • 1 tablespoon Coriander Powder
  • 1/2 teaspoon Turmeric
  • 1 1/2 tablespoons Ginger Garlic Paste
  • 1 teaspoon Garam Masala Powder
  • 1 teaspoon Salt

For the Gravy

  • 1 tablespoon Oil
  • 1 tablespoon Butter
  • 1 inch Cinnamon
  • 2 Green Cardamom Pods
  • 3 Cloves
  • 5 Kashmiri Red Chillies dried chillies
  • 6 Garlic Cloves
  • 1 Onion roughly chopped
  • 1/4 cup Cashew Nuts
  • 7 – 8 Tomatoes approx 500 grams, roughly chopped (or 1 (15-ounce) can canned diced tomatoes)
  • 1/2 teaspoon Red Chilli Powder
  • 2 tablespoons Ketchup
  • 1 tablespoons Kasuri Methi dried fenugreek leaves
  • 1/2 teaspoon Salt taste and adjust
  • 3-4 tablespoons Fresh Cream

Instructions

  • Pre heat your air fryer and then air fry at 190C for 5 minutes. We want to cook the chicken partially because it will continue to cook in the gravy
  • Transfer the puree back to the pan, add chilli powder, ketchup, salt and 1/4 cup water. Bring this to a boil. Reduce the flame to low, and cover and cook for 15-20 minutes. You'll notice the colour of the gravy change to a deep orange.
  • Add the chicken pieces and simmer for 10 minutes. Stir in the kasuri methi and fresh cream.
  • To smoke the chicken, place a small steel bowl (please don’t use plastic) in the middle of the butter chicken while it’s still in the pan. Heat a piece of charcoal or lump coal on an open flame till red hot and then place it in the bowl. Pour a teaspoon of oil or ghee over it, and as soon as it starts smoking, cover the pan with a lid. Smoke for 3-4 minutes. Remove the bowl and serve with naan or rice.

  1. Chicken: Boneless, skinless chicken pieces work best. The pieces should be cut into 1.5 inch size. You can also use skinless, bone-in chicken thats cut into medium sized pieces
  2. Tomatoes: Substitute fresh tomatoes with a 15 ounce can of diced tomatoes. Or use 1 1/2 cups Tomato Puree or Tomato Passata
  3. Garam Masala: I use homemade garam masala, but you can substitute it with any store bought garam masala. Please note that garam masala is different from curry powder
