Kheer Ladoo (Indian Rice Pudding Truffles)

Creamy rich Indian rice pudding rolled into balls and coated in various toppings to make a perfect dessert that’s a hit at any dinner party. These kheer ladoos (rice pudding truffles) have an amazing texture and cardamom flavor! (gluten-free and soy-free)

These are an easy dessert for any festive season or for Diwali. I made this decadent rice pudding flavored with cardamom, which is basically Punjabi kheer. 

Then, I mix it with some cashew cream, chill it, scoop it into balls, and roll them in different toppings like pistachios, cocoa powder, almond slivers, rose petals, melted chocolate, toasted coconut, or anything else you like.

Ladoo are basically Indian truffles, and these are flavored with cardamom for a simple yet delicious dessert.

You can change up the flavor with things like cinnamon or vanilla, and you can play around with toppings and mix-ins to make all kinds of delicious variations! For extra decadent rice pudding truffles, melt some chocolate with a little bit of coconut oil in a double boiler, then coat them in the melted chocolate.

Kheer ladoo are great to serve either as a snack or dessert. They don’t need extra bowls or spoons, and they’re already portioned. You can also make them ahead of time, so you won’t have as much cooking to do on the day of your dinner party.

Vegan Chicken 555 Appetizer

Vegan Chicken 555 reimagines a beloved South Indian street-style appetizer. Crisp golden tofu is coated in a richly spiced sauce infused with fennel, ginger, garlic, coriander, and peppers,  and enough heat to make you reach for seconds (and maybe a cold drink).  gluten free, nut free. soy free option.

This is another one in my series creating vegan versions of these amazing, meat-heavy, regional Indian appetizers. There’s just so much variety in all of these super delicious snacks and appetizers, and sometimes you don’t find those flavors and that spice in the vegetarian appetizers.

You can use this recipe with tofu, soy curls, chickpea tofu, chickpeas, or vegetables, like cauliflower. Basically, you coat your protein or vegetables of choice with this amazing, flavorful batter, and either pan fry or bake it.

Then, we make this easy, spicy, and delicious sauce mixture. It’s kind of a dry sauce, and you toss the crisped tofu “chicken” in it. Oh my god, it’s so incredibly delicious and also pretty spicy!

You can adjust the spice level to your preference. There are four kinds of chilies in this tofu 555: Kashmiri chili powder in the batter, and green chilies, cayenne, and red pepper flakes in the sauce. To get the flavor with less heat, reduce any or all of those. The combination of peppers adds a ton of flavor, so you definitely want to use some of each, even if you don’t use the full amounts. You can use a milder green chili to manage the heat, too,  if you prefer.

Basically, adjust the heat based on your preference, but definitely try this vegan chicken 555. It’s just so fabulously delicious!

Tofu 555 is great on its own or in crunchy salads with juicy fruits like apples, pears, or mangoes, or with roasted or fresh vegetables. A cucumber salad with a simple lime, salt, and pepper dressing also pairs wonderfully with this Indian appetizer. Or, you can make wraps with lettuce, creamy dressing, and fresh green chilis or pickled jalapeños. 

No matter how you serve it, you have got to try vegan chicken 555!

High Protein Lentil Trail Mix, 3 Ways Peanut gochujang, Indian Chivda, Nacho cheese flavors

When I shared my red lentil granola recipe, quite a few of you asked for a savory version, and today I’m sharing three different ways to make savory lentil granola/trail mix! Make all three flavors of this delicious lentil trail mix, or triple your favorite flavoring and make one big batch.

Why three ways? Because I just couldn’t decide between these amazing flavors: Indian-spiced, peanut gochujang, and nacho spice. So, I decided to let you choose for yourself!

This trail mix/savory granola recipe uses split red lentils (aka masoor dal) as the base. You cook the red lentils on the stovetop until they are just al dente, and they roast up to be light and crisp in the oven with your seasonings of choice. 

The result is a protein-packed snack that is absolutely full of flavor, no matter which seasoning mix you choose! A serving of this trail mix has around 16 grams of protein and 16 grams of fiber. You can amp up the protein even more by folding in hemp seeds into the granola once it has finished roasting.

The Indian-spiced lentils are inspired by Indian chivda, which usually uses rice flakes or other flaked or puffed grains. It is spicy savory with some balancing sweet from raisins or dates and is fantastically delicious! 

For the nacho spiced savory lentil trail mix, a took inspiration from my nacho cheese granola bars. It’s your favorite snacking chip in crisp trail mix form! you can adjust it to your flavor preference. Add more cayenne for more heat or more nutritional yeast for more cheesiness.

Cilantro Mint Chutney White Beans over Crispy Tostadas (no-cook! Papri Chaat inspired)

These no-cook tostadas use canned beans, prepared tostadas, and lots of delicious sauces – no cooking needed! The only cooking you’d need to do is if you are making your tostadas from tortillas. Prepared tostadas are readily available in most grocery stores.

I wanted to make a fun dish with beans, and I took inspiration from chaat, which is a family of Indian snacks or street food characterized by these awesome combinations of different textures and flavors. Especially papri chaat which has crisp crackers paired with mashed potatoes or chickpeas or both and chutneys, sauces and yogurt for a fantastic salad like hearty nachos if you will. Many chaat recipes have crispy, spicy, sweet, and tangy all together. They’re great as snacks or can be a refreshing meal.

I took inspiration from those flavors and textures. Usually, I make this chickpea potato chaat with small crackers, where you take some cooked chickpeas and cooked potatoes, toss them with some spices and chutneys, and layer them with yogurt, more chutneys, and some chopped crunchy veggies.

I turned that dish into this tostada, where we take crispy tostadas and make marinated beans that are soaked in a delicious green chutney, instead of chickpeas, along with cucumber and onion. We top the tostadas with these beans and then add a good drizzle of seasoned non-dairy yogurt and this sweet, tangy, maple-lime sauce to bring all of those flavors together. It’s absolutely fantastic and delicious! The maple lime sauce is a sub for tamarind date chutney. If you have tamarind chutney, use that for more Indian chaat flavor.

This recipe is very versatile. If you want to control the heat, use less of the green chili, and choose a milder chili.  If you don’t have tostadas, you can make your own! Those instructions are in the recipe notes. If you don’t like cilantro, you can make a mint chutney with more mint leaves instead of the cilantro.

Chutney bean tostadas are just fabulously crispy, zesty, refreshing, and hearty. They are a perfect summer meal!

Chicken majestic is pretty popular in restaurants in the state of Andhra Pradesh, and especially in the city of Hyderabad. It is a spicy, crispy chicken dish that is usually fried or pan-fried and tossed in a thick, delicious, spicy sauce. It has elements from indo Chinese cuisine and the combination with South Indian flavors makes it a finger licking can’t stop good appetizer!

It is served as-is as a starter with a side of chutneys or a side salad. You can also add it to wraps or serve with rice. It is absolutely mindblowingly delectable and delicious. The tofu is crisped with some cornstarch and rice flour and some spices. Then tossed in a thick sauce to coat. If you want to keep these crisp, toss and serve immediately!

Tofu majestic is definitely hot with 4 heat elements in it, there’s green chilies, Kashmiri chili powder, black pepper and sambal oelek! It can get hotter depending on the green chilies that you use. To manage the heat, use milder green chilies and use less of the black pepper and Kashmiri chili powder.

I like to serve this with a side salad of onion and cucumber. It’s kind of like quick pickled onion with Indian spices called laccha pyaza. See the recipe notes for instructions for making the crispy, vibrant laccha onions. You can also serve with chutneys of choice or a creamy dip on the side to mellow the heat.

KANDA GADDA BAKSHALU

Kanda gadda bakshalu is an authentic sweet potato stuffed flatbread savored on Maha Shivaratri in the Telangana region. These Bakshalu have an utterly creamy, healthy and divine sweet potato stuffing, and my kid absolutely loved it. Sweet potatoes are a great source of fibervitamins, and minerals. Additionally, they support Healthy Vision, enhance Brain Function and Boost Your Immune System.

Sweet potatoes have a dense fiber composition, and it satiates the hunger for longer periods. Hence, in Indian subcontinent we widely use it as fasting food. On Maha Shivaratri, majority of devotees observe a special fast consisting largely of fruits along with plenty of water and milk which keeps them hydrated. And sweet potatoes are fast friendly, filling and healthy. So these Bakshalu makes a great recipe to make on this coming Maha Shivaratri.

Significance of Maha Shivaratri

The festival of ‘Maha Shivaratri’ which literally translates to ‘the greatest night of Shiva’ is one of the most revered Hindu festivals across the Indian subcontinent. The Temples across the nation witness an outpour of devotees who gather around the Shiva Linga with their abundant offerings to appease Lord Shiva. Prayers and vigils go on throughout the night of Maha shivaratri. But what makes the festival special is its characteristic fasting or the Maha Shivaratri Vratam. The vratam marks a very high significance for every Shiva devotee, with some opting to even go on fasting through the day without a single drop of water. But majority of the devotees observe a special fast consisting largely of fruits along with plenty of water and milk which keeps them hydrated.

What are Bakshalu?

Bakshalu are a traditional delicacy, that we make on festivals or special occasions as an offering to the deity. These bakshalu are stuffed flatbreads, which can be made sweet or savory. In the Telangana region, Bakshalu are a traditional dessert or sweet and it has various stuffings. And stuffings like chana dal, moong dal, sesame seeds, sweet potato, Kova, etc. are used.

Now call this bakshalu poli or Holige, obbattu, bobbatlu, burelu, polelu, vedmi, boli this one dish has many names and avatars across diverse India.

In certain regions of Telangana, people call these Kanda gadda bakshalu as Mouram gadda polelu or mouram gadda bakshalu. This Kanda gadda bakshalu are specially prepared for the Maha Shivaratri festival for the kids, as they are fasting friendly and filling too. 

Ingredients needed for Kanda gadda bakshalu

  • Kanda gadda – Sweet potatoes, they are also known by Mouram gadda, Ratnapuri gadda in the Telangana region. 
  • Jaggery / Sugar – As sweet potatoes alone are sweet enough, we will be using minimal amount of sweetener.
  • Cardamom – this is completely optional
  • Whole wheat flour – You can also use Maida / All purpose flour instead.
  • Oil
  • Ghee

How to prepare this Kanda gadda bakshalu?

 Like every other flatbread, this bakshalu can be either made with Maida/all-purpose flour or Whole wheat flour. And I like to use whole wheat personally as it’s more healthy and that’s what I have grown up eating. So if you prefer using All purpose flour or maida please feel free to use it according to your convenience.

Stuffing – First step steam the sweet potatoes, later mash them with jaggery / sugar, and keep them aside.

Now the kind of sweet potatoes we get in India are quite fibrous and stays firm when boiled or steamed. They doesn’t require any further cooking after steaming them. You can just steam/boil them, peel the skin, mash them with jaggery powder/sugar.

And as I’m staying in the US, the sweet potatoes, which I get here are quite soft, when I steam/boil them they turn very mushy. Hence, I cook the mashed sweet potatoes slightly until they turn firm.

Dough – This bakshalu can be made with two kinds of dough, One is the wet dough that has been soaked in oil for hours and the other is a semi-hard dough that we regularly use to make roti. If you are using slightly firm sweet potatoes that we get in India, I would recommend you to use the firm dough. And if you are using the American variety of sweet potatoes then go for the wet dough.

Is this recipe VEGAN ?

You can skip the ghee part while roasting the Bakshalu or stuffed flatbread to make it vegan-friendly. If you have Gluten-intolerance, please substitute the whole wheat flour with gluten free flour to make these Bakshalu.

Serving suggestion

These Kanda gadda bakshalu/polelu are  traditionally served with warm milk. But a simple drizzle of ghee on warm Bakshalu is good enough for savoring.

KANDA GADDA BAKSHALU

A divine sweet potato stuffed flatbread, which are utterly delicious, healthy and filling. Makes it a perfect fasting friendly food.

Ingredients

Stuffing

  • 3 Sweet potatoes
  • cup Jaggery powder
  • ¼ tsp Cardamom powder

Dough

  • cup Whole wheat flour
  • 2 tbsp Oil
  • ½ cup Water *more as needed to make pliable dough

Instructions

Stuffing

  • Heat a steamer, add water in the pan and place the sweet potatoes cut into discs on the steamer rack.
  • Cover the pan and let the sweet potatoes steam until they are soft and mushy. It may take around 15 min. Turn off the heat and let them cool down to room temperature.
  • Later peel the skin of sweet potatoes, mash them and add cardamom powder, jaggery powder/sugar as per your taste preference.
  • If the stuffing is too wet, then cook the mashed sweet potatoes on medium flame until it turns firm.
  • Later divide the stuffing into 10 equal portions, roll them into a ball and keep aside.

Dough

  • In a mixing bowl, add whole wheat flour/APF , tsp of oil and water. Bring everything together and knead until it is soft and pliable.
  • Add 2 tbsp oil and keep it covered for 2 hours. Let it remain soaked in oil. The more it rests in oil the more softer the bakshalu will be.

Let's prepare some KANDA GADDA BAKSHALU now !!

  • Take a silicon sheet/ziploc bag/banana leaf, grease the surface. Take handful of dough and place it.
  • Grease your fingers with oil and flatten the dough with your fingers to form a small circle.
  • Place a small ball of sweet potato stuffing in the center and seal it on all sides forming a small ball.
  • Now flatten the ball with the stuffing inside to form a thin Baksham.

Roasting the KANDA GADDA BAKSHALU

  • Grease the tawa slightly with ghee and heat it. Now invert the silicon mat/ziploc bag/banana leaf with the Baksham over the tawa. After a few seconds, gently remove the silicon mat/ziploc bag/banana leaf.
  • Now cook the Baksham both the sides until golden brown on medium heat.
    Once cooked, apply ghee all over the surface and remove from heat. Now Kanda gadda baksham is ready to be served. Enjoy it warm.

Serving suggestions

  • Serve hot Kanda Gadda bakshalu with some warm milk or drizzled with ghee.

Notes

  • If you are using the American variety of sweet potatoes, they tend to turn mushy or sticky when steamed/boiled. So cook the stuffing on medium flame until it turns slightly firm.

 Bread Bonda is a deep-fried Indian snack with spicy potato filling wrapped in a moist bread slice and deep-fried until crisp and golden brown. This is one of the nostalgic tea time snack I have grown up eating.  I remember tasting this irresistible snack at home, when amma saw it on a cooking show and tried at home. We all loved it, although we love eating traditional Aloo bonda that we grew up eating, this bread bonda has surely made its special place in our hearts.

What is Bread Bonda ?

Bread Bonda, an indulgent deep-fried snack, which is utterly crispy bread on the outside and flavor-packed soft filling on the inside. This dish is a twist to the traditional snack, Aloo Bonda which is also known Potato Vada, is flavor-packed with Indian spices. That one bite of these hot and crispy Aloo Bondas will surely make you fall in love with them. 

While You find Aloo Bonda in almost all the tiffin centers and in Many Indian restaurants across Telangana, Andhra Pradesh, Maharashtra, Karnataka popularly served for tea time snack. Bread bonda is more kind of made only at homes. This tea time snack will surely make your day brighter on rainy days. Also, this bread bonda makes a great snack to serve for guests or get togethers. 

What all ingredients do we need ?

For the Covering: Bread slices

For the Stuffing

  • Potatoes
  • Spices – Turmeric powder, green chilies, salt
  • Onion
  • Curry leaves
  • Cilantro
  • Lemon/lime
  • Mustard seeds
  • Cumin seeds
  • Ginger
  • Garlic

You can adjust the amount of green chilies, as per your taste. If making for kids, you can avoid adding green chilies and add some grated paneer or cheese.

BREAD BONDA

An indulgent deep-fried Indian snack with crispy exterior of bread and soft spicy potato filling.

Ingredients

For the covering

  • 10 slices Bread

For the stuffing

  • 3 Potato boiled and peeled
  • 2 tbsp Cooking oil
  • 1 Onion
  • ½ tsp Mustard seeds
  • ½ tsp Cumin seeds
  • 1 inch Ginger minced
  • 3 cloves Garlic optional, minced
  • ½ tsp Turmeric powder
  • Salt to taste
  • 3 Green chilies finely chopped
  • 1 sprig Curry leaves
  • 3 tbsp Cilantro finely chopped
  • 1 tbsp Lemon / lime juice

For deep-frying

  • Frying Oil

Instructions

Prepping

  • Boil the potatoes, peel the skin and keep them aside.
  • Chop the onions finely, coarsely mince the ginger and garlic, finely chop the green chilies, cilantro.

Let's prepare some flavor-packed Potato stuffing

  • Heat a wide skillet, add oil and once its hot add in mustard seeds, cumin seeds and let them splutter.
  • Now add in minced ginger minced garlic(if using), curry leaves, chopped green chilies and fry for until raw smell of ginger fades away.
  • Now add in finely chopped onions and cook until they turn translucent.
  • Add in turmeric powder, salt to taste and give everything a good mix. Gently mash the potatoes with your hands and add them to the onion mixture.
  • Give everything a really good mix and cook until have absorbed all the flavors.
  • Time to add in finely chopped cilantro, mix it and turn off the heat.
  • Now add in lemon/lime juice and mix until everything is well combined.
  • Let this stuffing cool down to room temperature. Later divide the stuffing into equal portions and roll them into balls.

Time to make Bread bonda now!!

  • Heat the wok / kadai, add oil enough for deep frying.
    Note : Use oil suitable for frying like sunflower or peanut or canola.
  • Now trim off the sides of the bread neatly using a knife. Give the bread, a quick dip on one side and take it out.
  • Take a broad vessel(wide enough to dip the bread) and add water say 1 inch high. Give the bread, a quick dip on one side and take it out.
  • Keep the rolled potato ball on the dry side of the bread and cover it as you squeeze it and roll into ball/ bondas. While shaping, make sure to squeeze out the water too.
  • Place the rolled bread bondas on a plate until oil is hot enough for deep-frying.
    Note : Oil shouldn't be fuming hot, else the inside remains uncooked and the outside burns easily.
  • Gently slide few rolled bread bondas into the oil at a time and keep turning gently with ladle to ensure even browning. Cook in medium flame to get crispy outside. 
  • Drain the deep-fried bread bondas on to a paper towel. 

Serving suggestions

  • Serve hot bread bondas with the dipping condiments of your choice. We love to have it with szechuan sauce, but these taste great with ketchup or mint chutney too.

Notes

  • If you are making for the kids, adjust the spice level according to their taste preference.
  • If you are comfortable with using diary, then add some grated paneer or cheese to make it more fun for the kids.
  • For added nutrition, you can also add in some steamed veggies like carrots, beans, green peas, beetroot to the stuffing.

Thattai Vadai recipe – how to make thattai Murukku – Thattu vadai, Nippetu

How to make Thattai Vadai recipe ?

Thattai Vadai recipe is a popular snack that is quite popular in South India. Also known as Thattai Murukku, thattai recipe, nippattu recipe, nippat and Thattu Vadai. We used to prepare this often for Pongal, diwali, Krishna Jayanthi and other festival.

Ingredients:

  • Ponni rice – ½ kilogram
  • Roasted Bengal gram – ½ kilo gram
  • Red chillies – 15 no’s
  • Channa dal – 2 spoons (soaked in water for 15 minutes)
  • Salt as required
  • Water to grind the rice
  • Butter – 50 gram (in room temperature)
  • Oil – for deep frying

Steps to cook Thattai Vadai recipe:

  1. In a bowl add half kilogram ponni rice, wash twice then soak in water for two to three hours.
  2. Next take a roasted Bengal gram in a mixer grinder then grind up to light coarse powder. (Don’t grind a fine powder)
  3. Now take soaked ponni rice and drain the water completely, then put into grinder, now add required salt and water then grind.
  4. Next grind three spoons of soaked rice and chillies and grind up to semi coarse.
  5. After five minutes add semi coarse red chilli paste in a grinder then grind up to fine paste like idly rice batter consistency. (at middle of grinding add required water )
  6. Now take another bowl, pour Thattai murukku batter and then add lightly coarse roasted bengal gram powder then mix well.
  7. Add butter in Thattai murukku batter and mix well.
  8. Now add soaked channa dal and mix well the Thattai murukku batter.
  9. It’s a time to check salt and spicy, if required add it now and mix well the Thattai murukku mixture.
  10. The dough should be like poori dough consistency.
  11. Next take a white cotton cloth, spread in reverse portion of any steel silver plate.
  12. Take a small portion of the Thattai murukku mixture and make a ball and spread in the cotton cloth with help of your palm.
  13. Make Thattai murukku shape and keep it a plate for deep frying.
  14. Use same procedure for until all Thattai murukku dough finished.
  15. Make two batches of Thattai murukku and then mix well the remaining dough to avoid hardness.
  16. Don’t press much the Thattai murukku ball, just use your palm and finger gently in a Thattai murukku balls.
  17. Next switch on the stove place a kadai and pour enough oil for deep frying.
  18. Take a pinch of the dough and put into oil whether oil is heated or not.
  19. When it is rise up, oil is heated then put Thattai murukku in oil one by one carefully.
  20. Now wait for 5 minutes then turn Thattai murukku another side then fry till it become crispy. (Don’t burn the Thattai murukku)
  21. Put the fried Thattai murukku in tissue paper to absorb extra oil and then transfer Thattai murukku in to air tight container after cooled completely.
  22. Spicy Thattai Vadai recipe is ready to serve.
  23. Enjoy this Thattai Snack as evening snack with tea.

Tips:

  • Main thing to notice here in this recipe is consistency of Thattai murukku dough; it should be in correct consistency like poori dough.
  • Here i am used butter; instead of butter you can also use hot oil.
  • You can also make Thattai murukku shape in milk cover or plastic cover, it will easy to take Thattai murukku in that cover.
  • Another one is careful while taking Thattai murukku from cotton cloth takes gently. (Don’t break that Thattai Vadai recipe shape.)
