An analysis published this week in JAMA Internal Medicine found that most participants in a clinical trial who were assigned to stop taking tirzepatide (Zepbound from Eli Lilly) not only regained significant amounts of the weight they had lost on the drug, but they also saw their cardiovascular and metabolic improvements slip away. Their blood pressure went back up, as did their cholesterol, hemoglobin A1c (used to assess glucose control levels), and fasting insulin.

  • 1 tbsp olive oil
  • ½ onion chopped

Prep Noodles

  • Before cooking begins, drain your shirataki noodles and rinse them under running cold water.

Make Spicy sauce

  • To prepare the spicy ramen sauce, whisk some soy sauce with Sriracha, peanut butter, Tahini paste, salt and chili flakes.

  • Then add a splash of water and mix everything into a uniform consistency.

Cook the veggies and Noodles

  • Heat some olive oil in a pan and toss chopped onions, both red and green bell peppers and saute for 3-4 minutes just until the veggies begin to soften but still stay crisp.

  • Next, toss in sliced mushrooms and cook for 2 more minutes. Now, toss the diced tofu and give everything a quick stir.

  • Next, get the Shirataki noodles in the pan and pour the prepared sauce. Gently roll the noodles so its evenly coated in the spicy sauce.
  • Turn off the heat and pour some lemon juice. Tear in some fresh basil leaves for aroma.

It is best paired with eggs if you want to have it for breakfast. For lunch with avocado toast, I usually pair it up with grilled/air fried chicken and loads of salad.

As the name suggests, avocado toast is the most humble yet most delicious and nutritious meal of crunchy toast with mashed avocado spread over it!
