Today's recipe of creamy corn and shrimp chowder is exactly that dreamy soup recipe which will not only fill your tummy but also calm your soul on a chilly wintery night!

There is already a nip in the air in my city especially from evening onwards and I get drawn towards the hearty soups for my dinner during this winter-round-the-corner-but-not-there-yet season!

This shrimp chowder has been on my bucket list since ages and I finally served it on our dinner table last week after perfecting the recipe for you all and us too!

Chowder is a soup primarily made of seafood with lots of veggies, potatoes being one of the key components. The soup broth of chowder is of creamy consistency thanks to milk and cream.

Even though the chowder broth is creamy, it is still quite light on your tummy and that’s a fantastic reason to include this insanely flavorful soup in your weekly meals this season!

If you love a good stir fry then you will love my shrimp noodles stir fry recipe that I’m sharing today! This was due for long as it is quite a common affair at my home!

This is one such recipe which comes around in about 30 minutes or so but promises big flavors on your plate!

That's why it's not an ordinary stir fry but a classic restaurant style shrimp noodles stir fry and you will come back to it again and again!

What is shrimp noodles stir fry?

Like a good stir fry recipe, my shrimp noodles stir fry also follows the standard grammar of an authentic one!

You have your choice of noodles, your choice of protein which is shrimp in this case and a killer sauce that brings everything together in the most irresistible way possible!

You can of course add a few veggies in your shrimp noodles stir fry that increases the fiber quotient of the dish while also making it more hearty and fulfilling!

I only added shredded cabbage today to keep things simple and fast as I wanted to bring the dinner from kitchen to table in thirty minutes!

Our hot tropical summer demands a cool & refreshing salad to start our every meal and this smashed cucumber salad is just the perfect one to fit in! Plus it gives us the much needed spicy kick that we Indians always crave for!

Since the time I have started my lifelong fitness journey, I don't remember a single meal that I have started without a large bowl of fresh salad! Whatever season it may be!

And now it has been a default part of our daily meals!

On regular days, we start our meals with a generous serving of freshly cut cucumber, tomatoes, carrots, beetroot and whatever other seasonal salad we can source.

Then on a fine day I stumbled upon this unique cucumber salad which the internet was going nuts over! Smashed cucumber salad!

A smashed salad? Really? Am I reading it right?

Well it turned out that I was reading it right and therefore was no way other than trying it myself and see why it is going so viral!

What is smashed cucumber salad?

I am sure you have seen multiple viral videos of smashed cucumber salad on various platforms, so I guess I do not need to explicitly describe what this salad actually means!

I don’t know how this trend started or who got the idea of smashing the cucumbers before tossing them in that incredible chilli oil dressing.

But whoever brought this into existence, we must thank them for their innovation!

The cracks created due to the smashing absorb the spicy salad dressing beautifully making the salad taste insanely addictive!

And that’s what has made this salad viral; I am completely ignoring the weird satisfaction we get from smashing the cucumbers!

Khimchi - Asian Cuisine

Β If you are a Chinese food lover, then Khimchi is not a new item.Β  I was introduced to khimchi when I first dined at Mainland China years ago. Mainland China is one of the most popular Asian Fine Dine restaurant in India that serves many authentic Asian dishes .

For the uninformed, Khimchi is a way of preserving veggies like a pickle and is served alongside the main course meal . Mostly when fresh veggies aren't available either due to weather or any other factor, then this Khimchi comes to the rescue.Β 

Β I had Googled many recipes on how-to make Khimchi at home and had been wanting to try from a long time.Β  Finally I narrowed down on a recipe from a popular food channel and prepared using that recipe . I was quite happy with the outcome as it was just like the one I have tasted. I made it using cabbage but there are many variants where you can add carrots, daikons etc as well.

This month in our food bloggers' group Shhh cooking secretly Preethi Tandon suggested we explore jams,chutneys ,jellies or preserves from non Indian Cuisine and viola it was the best time to make and enjoy this yummy Khimchi which was a long over due to present itself on the blog.

My partner for this month is the enthusiastic blogger Seema who gave me the versatile ingredients soy sauce and sugar while I gave herΒ  Cumin and lemon as the secret ingredients. with Seema has made a lipsmacking Quince Chutney.. If only I could lay my hands on that chutney now,I would be in the 7th heaven relishing it :-)Β 


Preparation Time - 3 to 4 hrs
Cooking Time - Nil
Complexity - simple

IngredientsΒ 

3 cups finely chopped Cabbage
1/4 cup Dark soy sauceΒ 
1/4 cup VinegarΒ 
2tbsp Chili flakes
Salt as neededΒ 
1 tbsp SugarΒ 
2 tsp Little garlic powderΒ 
1 tbsp FinelyΒ  grated ginger
Sesame oil while servingΒ 

Method


  • In a wide mixing bowl , take the cabbage and mix it with salt and some chilli flakes . Let this rest for 3 to 4 hrsΒ 
  • After 3 to 4 hrs the cabbage will appear wilted and soggy.Squeeze outΒ  as much juice you can from the cabbage and transfer it to another bowl.
  • In this bowl,now add in all the ingredients except the oil and mix it well.
  • Store it in sterilized glass jar,cover it properly and let it ferment for 24hrs .this step is very important to get the perfect taste and texture.Β 
  • Refrigerate after 24hrs and always use a dry spoon while scooping out from the jar.
  • Drizzle some sesameΒ  oil over the khimchi just before you serve.
