This is a wow-worthy, super easy vegan cheese log that you can whip up for any party, potluck, or holiday gathering. It’s delicious, cheesy, and creamy with a fantastic pecan-herb crumb which adds wonderful texture and flavor. 

The holiday cheese log pairs beautifully with all kinds of veggies, crudites, crackers, fruit, or even spicy jams and chutneys. It’s perfect on a charcuterie board served with mango chutney and paired with one of my cheese balls, like my Jalapeno popper cheese ball.

You can also use this creamy cheese as a spread for baguettes or bagels or even to make grilled cheese, quesadillas, or mac and cheese. For mac and cheese, just add some stock to a pan, heat it up with the cheese log to make a sauce, and toss in your cooked pasta of choice. 

This vegan cheese log recipe is flexible and easy to adapt to your flavor profile. Try adding paprika and jerk seasoning, Cajun spices, or extra red pepper flakes for a spicy version.

There are lots of fall herbs, like fresh thyme and sage, and it all comes together really quickly.

This is a super easy one-pan casserole. No need to sauté or stand around the kitchen for long periods of time cooking the onions and mushrooms. Everything goes right into the baking dish, and the oven does all the work.

Smoky Cajun Veggies & Smashed White Beans (All on One Sheet-Pan)

Crispy smashed white beans and Cajun veggies roasted on one sheet pan, then tossed in a creamy, tangy chipotle-lime dressing. A versatile meal you can serve in bowls, tacos, or wraps.

This is a super easy and absolutely delicious meal that comes together fairly quickly. You just chop up all of the vegetables and add them to a pan. Smash the beans using a bowl, and add them to the pan as well. Add some spices, oil, and lime juice, toss well, and then bake until the veggies are tender and the beans are lightly crisp.

Meanwhile, you make this creamy, delicious, spicy, lightly sweet, and tangy dressing. It goes amazingly well over these roasted veggies. I mean, this is a dressing you can use on any salad, wraps. burritos, or any which way. It’s just fantastic with all of that smoky chipotle spice flavor, the tang from the lime juice, the creaminess from the non-dairy yogurt, and some cheesiness from the nutritional yeast. It’s just fantastic.

You can serve this roasted bean and veggie mixture as a bowl, in wraps, stuffed into pita bread, or over a baked potato or rice. There are so many ways to serve this! You want the beans to be sort of lightly flattened but not entirely smashed. You’re just trying to increase the surface area, so they can bake up nice and crispy in the oven.

If you don’t want to smash them, that’s fine, too. Just add them directly to the veggies on the sheet pan and bake. The beans on the edges will still get crisp. If you want all of the unsmashed beans to get crisp and act like croutons, then bake them on a separate sheet so that they crisp up nicely.

This dish is spicy, smoky, creamy, and tangy. It’s just an amazing blend of flavors! It has protein from the beans, nutritional yeast, and yogurt.  You can up the protein by adding hemp seeds into the dressing or as a topping.

These tacos! They celebrate gochujang in a way you’ve never experienced! Crispy gochujang tofu! Creamy gochujang sauce for the slaw and for dressing! And a sweet spicy gochujang glaze to finish! Triple gochujang.

These tacos are super delicious and amazing! They come together fairly quickly and use many same ingredients in the different components of the taco. Despite that, there’s so much overall texture and flavor that they’re fabulous to whip up and enjoy on any weekday or on the weekend.

I love to make this tofu. It’s just super flavorful. You’ll want to double or triple the tofu recipe, so you’ll have leftover tofu handy to use in salads, wraps, sandwiches, bowls, etc. throughout the week.

Gochujang tacos are very simple to make. We take some tofu and marinate it in a gochujang, ginger-garlic, soy, and maple mixture, and then bake it.

Meanwhile, make the crunchy, creamy slaw. We make a quick, creamy dressing using gochujang again along with some lime juice, maple syrup, and non-dairy yogurt or vegan mayo. You use that dressing to make the slaw and to dress the tacos later on, so you don’t have to make multiple dressings.

I usually like to finish it off with a gochujang-maple drizzle. You don’t have to do this, but it adds some extra heat and a flavor punch—so definitely try to make that one as well.

These tacos are fantastic when the slaw is fresh and crunchy, the tofu is spicy and chewy and crisp! The creamy dressing adds richness, and the gochujang drizzle adds sweet heat. The pickled jalapeños bring a tangy heat that ties it all together.

Aam Ka Panna (Raw Green Mango Drink)

Aam ka Panna (Raw Green Mango Drink) is a refreshing mango drink that is made from raw green mangoes and some mild spices. This chilled drink is great for hot summer days as it has a very nice cooling effect.

Ingredients

  • 2 cup raw cooking mango peeled and cubed,
  • 3/4 cup sugar adjust as needed
  • 1/2 tsp salt
  • 1/2 tsp black salt
  • 1 tsp dry roasted cumin seed powder
  • 1/4 tsp black pepper
  • 1/4 cup mint leaves

For Serving

  • Few fresh mint leaves for garnishing
  • 2 cup crushed ice

Instructions

  • Peel the mango, slice it into large pieces and remove the seed.
  • Boil the mango slices in about 2 cups of water until the mango slices are well cooked. It should take about 10 minutes.
  • After the mango cools off, blend the mango with all the ingredients except use ½ cup of sugar we will add the sugar as needed.
  • Add about 2 cups of water, taste the panna and adjust the salt and sugar. Panna should have the consistency of orange juice. 
  • Serve over ice and use fresh mint leaves as a garnish.

How to make horse gram recipe ?

kollu paruppu recipe is very famous in Kongunadu. People prefer horse gram for weight loss in ayurveda also horse gram good for diabetes. we used to prepare kollu paruppu recipe often especially to treat cold which goes well with white rice. lets see how to cook horse gram recipe now.

Ingredients:

  • kollu paruppu ( known as horse gram tamil & kulthi beans in hindi ) – 1 cup
  • Water to cook horse gram
  • Castor oil – ½ spoon
  • Country tomato – 1(big)
  • Turmeric powder – ¼ spoon
  • Shallots – ¼ cup (cleaned)
  • Red chilli – 3 no’s
  • Curry leaves – 1 sprig
  • Garlic – 4 cloves
  • Cumin seeds – ½ spoon
  • Coriander seeds – 1 spoon
  • Coriander leaves – 4 stalks
  • Required salt

Steps to cook kollu paruppu recipe in pressure cooker:

  1. To begin take a bowl add horse gram and wash them thoroughly.
  2. Switch on the stove place a cooker then add 2 ½ cups of water, ½ spoon of castor oil, ¼ spoon of turmeric powder, one big country tomato.
  3. Now close the pressure cooker and cook kollu paruppu up to 3 whistles.
  4. Steps to cook kollu paruppu in earthen pots and normal pan:
  5. Switch on the stove place earthen pot or steel pan, add 3 cups of water then is hot add in washed horse gram.
  6. Followed by ½ spoon castor oil, one big country tomato then cook up to 15 minutes
  7. After horse gram half cooked add turmeric powder then cook until horse gram fully cooked.

Steps to grind kollu paruppu:

  1. At first switch off the stove drain the excess water in horse gram and keep it aside.
  2. Next add cleaned shallots, red chilli, curry leaves, coriander leaves, cumin seeds, coriander seeds, required salt in cooker, earthen pot or normal pan.
  3. Leave it all spices for 10 minutes.
  4. Now take a mixer grinder put all things in to it and grind them as semi coarse paste. (No need to add water if you want add drained water from horse gram)
  5. You can also add kollu paruppu in Aattu kal and grind well as semi coarse paste. (Taste will be super good)
  6. Spicy authentic Kongu special kollu paruppu recipe is ready to serve.
  7. Drizzle some homemade ghee or coconut oil on the top of the kollu paruppu and serve with hot white rice.

  • Kollu Paruppu is known ashorse lentil or horse gram, horse gram beans in english (also Cowpea)

  • It is called as Muthira in Malayalam

Tips:

  • This is authentic Kongu style kollu paruppu; there also another way.
  • The only difference is seasoning, after grind the kollu paruppu, take a kadai add some ground nut oil when it is hot add mustard seeds, one red chilli and curry leaves then fry for a second and add kollu paruppu and cook up to 5 minutes. (This process will help to avoid spoilage of kollu paruppu)
  • As of now you need kollu paruppu in semi streaming consistency implies include water at that point cook well.
