Ingredients

For paan milk

  • 6 paan leaves Betel leaves
  • 1 teaspoon saunf
  • 1 tablespoon gulkand
  • Β½ teaspoon elaichi powder
  • 3 scoops vanilla icecream
  • 6 ice cubes
  • 1-2 tablespoons milk

For Faloods shots

  • 8 shot glasses
  • Β½ cup soaked sabja sweet basil seeds
  • Β½ cup cooked vermicelli
  • ΒΌ cup vanilla icecream
  • 1 tablespoon dried rose petals
  • 1 tablespoon crushed pista

Instructions

  • Chop off the stalk & thickest part of the vein from paan leaves as it tastes pungent/bitter.
    6 paan leaves
  • Add all the ingredients for paan milk to a blender and blend till smooth.
    1 teaspoon saunf, 1 tablespoon gulkand, Β½ teaspoon elaichi powder, 3 scoops vanilla icecream, 6 ice cubes, 1-2 tablespoons milk
  • Add 2 teaspoons of sabja seeds to a shot glass, add 1 teaspoon of vermicelli as the second layer, fill ΒΎ of the glass with paan milk. Add a teaspoon of vanilla icecream, garnish with a few rose petals & crushed pista. Repeat the same for all the shot glasses and serve immediately.

Who says you need an oven to bake a great cake? This eggless marble cake proves you don’t. It’s soft, chocolatey, and comes together right on your stovetop! It’s one of those recipes that look complicated, but are actually surprisingly easy. The mix of vanilla and cocoa gives it that classic β€œbakery” flavour, and those marbled swirls make it look festive and super tempting! Trust me, once you try this version, you’ll make it again (and again).

Eggless Marble Cake Ingredients

  • Maida (All-purpose flour): This is for theΒ  base of the cake, to keep it soft and light. Sift it once to avoid lumps.
  • Sugar powder: For sweetness. Powdered sugar mixes better than granulated.
  • Baking powder & salt: Your rise-and-balance duo. Baking powder makes it fluffy, and salt brings out the flavours.
  • Oil: Keeps the cake moist without making it heavy. Any neutral oil like sunflower or vegetable oil works fine.
  • Curds (Yogurt): Adds moisture and gives a soft crumb. Use fresh, slightly thick curd β€” not sour.
  • Vanilla essence: Adds that classic bakery aroma and balances the cocoa flavour.

Ingredients

  • Β½ cup maida
  • ΒΌ cup powdered sugar
  • ΒΎ teaspoon baking powder
  • β…› teaspoon salt
  • β…› cup oil
  • 1 Β½ tablespoons curds
  • 1-2 drops vanilla essence
  • ΒΌ cup + 2 tablespoons milk divided
  • 1 ΒΌ teaspoons cocoa powder
  • 1 ΒΌ cups table salt for baking

Instructions

  • Take maida, sugar powder, baking powder, β…› teaspoon salt in a bowl & give a quick mix to combine all the ingredients. Add oil, curds, vanilla essence, ΒΌ cup of milk and mix to make a smooth batter.
    Β½ cup maida, ΒΌ cup powdered sugar, ΒΎ teaspoon baking powder, β…› teaspoon salt, β…› cup oil, 1 Β½ tablespoons curds, 1-2 drops vanilla essence, ΒΌ cup + 2 tablespoons milk
  • Divide the batter into 2 bowls. Add cocoa to 1 of the bowls with Β½ – 1 tablespoon of milk and give a good mix.
    1 ΒΌ teaspoons cocoa powder, ΒΌ cup + 2 tablespoons milk
  • Take a large, thick bottomed kadai or pan, add 1 ΒΌ cups of salt, spread to cover the kadai base well. Place a trivet on the salt and close the lid. Heat the kadai on medium for 5 minutes & on low for 5 more minutes for preheating the kadai.

  • Grease the cups well with oil and pour the batter as shown in the video. Make a marble pattern with the toothpick.
  • Place the cups on the trivet, close the lid and bake on low for 25-30 minutes or till the toothpick inserted in the cake comes out clean to indicate the cakes are baked.
  • Rest for 10-15 minutes and unmould.

Amazing Sooji Halwa

My mum’s sooji halwa is special because it’s got this gorgeous caramel-ly nuttiness that comes from roasting the semolina (sooji) in ghee. You’ll never make it any other way!

There is nothing that screams Indian festivities quite like sooji halwa does (okay and maybe also Malpua, Rabdi and Kheer!), and I think this recipe is really special. There’s a gorgeous caramel-like glaze on this suji halwa that coats every little bit of sooji – it’s my mum’s trick and the only way I like to make it now!Β 

The magic lies in patiently roasting the sooji in ghee for 20-25 minutes till the colour changes from white to a deep brown. That deep, toasty flavour combined with the smooth, melt-in-your-mouth texture makes it an instant family favourite. Whether it’s a festival, puja, or just a sweet craving on a weeknight, this halwa is just the thing to make and it that always hits the spot!

Sooji Halwa Ingredients Overview

Sooji (Semolina/Rava) – The star ingredient; use fine sooji for a smooth texture and rich flavour. Bombay sooji works best here because the grains are neither too big nor too small. Bansi rawa will also work.

Besan (Gram Flour) – Adds depth and enhances the nutty aroma.

Ghee – The key to flavour and richness β€” use good quality ghee for best results.

Sugar – Balances the nutty flavour with sweetness.

Water – Helps cook the semolina into a soft, smooth halwa.

Nuts (Almonds/Pistachios) – For crunch and garnish.

How to make sooji halwa

1. In a pan, roast the sooji and besan together over low flame, stirring continuously for 5-6 minutes. Add the ghee and continue cooking on low flame.

2. Stir constantly until the mixture changes to a light chocolate brown colour and becomes fragrant.

3. Continue roasting until the brown becomes a little deeper and darker.

4. Add the sugar and mix it in.

5. Slowly pour in the water while stirring continuously. Increase the flame. Be cautious as the mixture may bubble and splutter.

6. Keep stirring until the halwa thickens, and you see ghee starting to ooze out from the sides. Garnish with slivered pistachios or almonds.

Frequently Asked Questions

Which is the best type of sooji to make halwa?

For a smooth, melt-in-the-mouth halwa, use Bombay sooji (fine semolina). For a nuttier, coarser texture with more bite, use Bansi rava. Both work, it just depends on the texture you prefer!

Can I replace sugar with jaggery for this recipe?

Yes! Jaggery gives the halwa a deep, earthy sweetness and a slightly different colour. Just make sure to melt and strain the jaggery first (to remove impurities) before adding it in.

Why is my sooji halwa lumpy?

This happens if water is added too quickly. Always add water slowly while stirring continuously to prevent lumps.

Can I make this halwa without ghee?

You can use butter or oil, but I’d really suggest you don’t! The ghee is what makes this Sooji Halwa!

Is Sooji Halwa the same as Sheera or Rava Kesari?

They’re variations of the same dish. Rava Kesari includes saffron or food color, while sheera may include milk instead of water.

Can I make sooji halwa ahead of time?

Yes! Store in the fridge for up to 2–3 days. Reheat with a splash of water or milk to soften.

Can I reduce the sugar?

Absolutely, feel free to adjust to taste. Just remember that less sugar means less stickiness in texture.

Richa’s Top Tips

  1. Don’t skimp on the ghee. That’s where the flavor and that glistening texture come from.
  2. Always roast sooji on medium heat β€” too high and it will burn, too low and it won’t develop flavour.
  3. Bombay sooji works best here because the grains are neither too big nor too small. Bansi rawa will also work.
  4. Be patient and pay attention. Be prepared to spend half an hour in the kitchen. Sooji can burn pretty quickly or brown unevenly if not stirred often. So keep stirring every minute or so for the best, even results.
  5. Remember the halwa will thicken as it cools, so take it off the heat slightly before your desired consistency.
  6. Add the sugar before the water or the sugar will caramelize and harden when it hits the water.
  7. The consistency should be thick but runny. If its too thick, it’ll start to become gloopy.

Serving Ideas

  • Offer as prasad during pujas or festivals – I love to pair this halwa with kala chana, vrat wale dahi aloo, and pooris!
  • Serve warm, garnished with almonds, cashews, or pistachios.
  • Add saffron strands soaked in warm milk for colour and aroma.

Storage Tips

Store in an airtight container and refrigerate for up to 2-3 days. Reheat with a splash of water or milk to soften.
