The Ninja Creami ice cream drops to $180 for Black Friday

Cold fall weather shouldn't get in the way of you enjoying a nice frozen dessert, and if you purchase our favorite ice cream maker for its discounted price of $180 for Black Friday, you could remove another obstacle between you and fresh ice cream every day. In our review testing, the Ninja Creami wasn't just good for ice cream, but could also make a mean sorbet in a pinch, and if you buy it today, you'll get if for the lowest price we've seen this year — $50 off its regular $230 starting price.

While you’ll definitely need a bit of space to accommodate it, the Creami is a more compact ice cream machine than some of its rivals. It works similarly to a food processor, only here you’ll be using strictly frozen liquid ice cream as a base. Once you have that (you’ll need to give the base around 24 hours in the freezer for the desired consistency) you use Ninja’s machine to blend in your chosen flavors. And if you make a mess (and let’s face it, you probably will), rest assured that most of the components are dishwasher-safe.

It’s admittedly a fairly loud machine during use, but as long as you’re willing to put up with the noise, you can choose between seven one-touch programs, including milkshake if you’re in the mood for a cold drink. And if you’re hosting people with allergies, they can be reassured that you have total control about what’s going into and coming out of the machine, which is much harder to guarantee when you’re buying dessert in a restaurant. This model also includes two pint containers with lids.

If you want the latest and greatest, though, the Ninja Swirl is the ice-cream maker to get. It can make regular and soft-serve ice cream, plus a number of other frozen treats. Right now, QVC has it for the best price we've seen, from $350 to $280.

Description

Juicy, smoky, and crisped to perfection — this smoked turkey is everything a holiday bird should be. Tender, flavorful, and kissed with just the right amount of smoke — it’s turkey done right.


Ingredients

  • 1 whole turkey (1218 lbs), thawed
  • HowToBBQRight Ultimate Brine Kit
    • OR
      • 1 bottle Malcom’s Bird Brine
      • 1 bottle Killer Hogs AP Seasoning
      • 1 bottle Malcom’s King Craw Cajun Seasoning
      • Meat Bag
  • Water (enough to completely submerge turkey)
  • 1 stalk celery, cut into chunks
  • 1 medium onion, quartered
  • 1 apple, quartered
  • 3 cloves garlic, smashed
  • Cooking spray or oil (for coating the skin)
  • Chicken Rack (optional)

Instructions

  1. Brine the Turkey
    1. Mix one bottle of Bird Brine with 1 gallon of water until dissolved. Place the turkey in a large brining bag or container and pour the brine mixture over the bird. Add enough cold water to completely submerge.
    2. Seal the bag (or cover the container) and refrigerate for 24 hours. For larger turkeys (over 16 lbs), brine up to 48 hours.
  2. Dry and Prep
    1. Remove the turkey from the brine and discard the liquid. Pat the skin completely dry with paper towels—this is key to getting crispy skin.
  3. Stuff the Cavity
    1. Place the celery, onion, apple and garlic (use whatever aromatics you like) inside the cavity.
    2. Tie the legs together and tuck the wing tips underneath so the turkey cooks evenly.
  4. Oil and Season
    1. Lightly coat the entire surface of the turkey with cooking spray or oil.
    2. Season the backside first with a medium coat of Killer Hogs AP Seasoning, followed by a medium coat of Malcom’s King Craw Cajun Seasoning.
    3. Flip the turkey onto a rack and repeat on the top side with the same layers of seasoning.
  5. Smoke the Turkey
    1. Preheat your smoker or grill to 275°F using pecan pellets (or your preferred wood).
    2. Place the turkey on the pit, centered for even airflow, and cook until the internal temperature in the deepest part of the breast reaches 160°F.
  6. Rest and Serve
    1. Remove the turkey from the smoker and rest for 20 minutes. The internal temperature will carry over to about 165°F in the breast and 175°F in the dark meat.

 

That’s how you smoke a turkey that comes out juicy every single time — with golden, crispy skin and that rich, smoky flavor you can only get from cooking it low and slow. Keep it simple, trust the process, and you’ll carve into the best turkey you’ve ever put on the table.

Description

Smoked tomahawk ribeye cooked start-to-finish on the pellet grill. No sear, just low heat, rich smoke, and juicy medium-rare steakhouse flavor every time.


Ingredients

  • 1 Tomahawk Ribeye Steak (about 3 lbs)
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp Willingham’s W’ham Original Mild Seasoning
  • 12 Tbsp Killer Hogs AP Seasoning (salt, pepper, garlic)
  • 12 Tbsp Killer Hogs Steak Rub (for texture & color)
  • ½ stick (4 Tbsp) unsalted butter, cut into pats

Instructions

  1. Trim the Steak
    Lightly trim any big pockets of fat around the edges and clean up the bone for presentation.
  2. Season Generously
    Rub the steak all over with Worcestershire sauce as a binder.
    Apply a medium coat of W’ham Original Mild Seasoning for color and base flavor.
    Add a layer of Killer Hogs AP Seasoning to build that salt, pepper, garlic profile.
    Finish with a layer of Killer Hogs Steak Rub for texture and crust.
  3. Rest & Fire Up the Grill
    Let the steak sit out while you fire up your pellet grill to 250°F. This gives the seasonings time to melt in and lets the steak come up to room temperature before cooking.
  4. Smoke the Tomahawk
    Place the steak on the pellet grill and insert a probe thermometer into the thickest part.
    Set your first target internal temp to 120°F.
    Once it hits 120, reset your probe to 128°F and monitor closely.
  5. Rest with Butter
    Place pats of butter and a light sprinkle of Steak Rub on a platter.
    Remove the steak from the grill at 128°F and place it directly on butter.
    Tent loosely with foil and rest for 10 minutes.
  6. Slice & Serve
    Remove the steak from the bone, then slice across the grain. The melted butter and drippings combine to make a rich, flavorful sauce—spoon that over the slices before serving.

That’s how you nail a tomahawk on the pellet grill—low heat, good smoke, and plenty of patience. Slice it up, drizzle that buttery rest over the top, and you’ve got steakhouse flavor right in your backyard.

Out of Office: From startups to spices, VC finds ingredients for inspiration in his love of cooking

Out of Office is a new GeekWire series spotlighting the passions and hobbies that members of the Seattle-area tech community pursue outside of work.

  • Name: Vivek Ladsariya.
  • Day job: General partner and managing director at Seattle’s Pioneer Square Labs, where he helps create and invest in startups as a venture capital investor.
  • Out-of-office passion: Cooking.

Growing up in India, food was a big part of the culture and something that Vivek Ladsariya was immersed in at home.

His family had a flour mill and would buy wheat grain to grind it into flour. He watched his mother and grandmother cook, and he ate and enjoyed their food.

“When I moved to the U.S., I missed it tremendously, and there was no real way to get some of that home food except to learn how to cook it,” Ladsariya said. “That’s when I started to really learn how to cook all of those things, because I needed that food to consume. So, it was very much born out of necessity.”

His taste and skill goes beyond making the dishes he loved as a boy. He makes pastas and Taiwanese food. He likes to slow cook meat or use his fancy pizza oven. During a recent potluck lunch he made scallion pancakes.

Ladsariya and his wife cook every meal at home, and with a 7-week-old daughter, he finds himself “wearing” her around the kitchen while he’s cooking, encouraging her to taste what he’s making.

During the pandemic while living in San Francisco, Ladsariya got the chance to work in two restaurants — Merchant Roots and Sushi Hakko — to stay busy while his wife was working her healthcare job.

“I think that’s when my cooking game really elevated,” he said. “Up until then I enjoyed cooking, but I’d create a mess. Then I got really organized in the kitchen. I became really efficient.”

With a friend, Ladsariya also put together a pop-up restaurant in which they spent two months researching and prepping a menu and cooking for guests over three days. The proceeds went to charity, and Ladsariya called it one of the favorite times of his life. It’s a process he plans to repeat in Seattle.

But Ladsariya, who enjoys hosting smaller dinners for startup founders, has no plans to leave his day job for a life in the kitchen.

“You’re standing on your feet the entire day and you are unbelievably exhausted,” he said. “I think it’d get old really quickly, and I’d lose the love for this.”

Most rewarding aspect of this pursuit: Ladsariya said that his day job is so high level and “in the brain” that it can sometimes can be abstract and lacking in the real-time feedback that he gets from working with his hands.

“I just fell in love with that aspect of cooking,” he said. “Everything you do is right there, you get the evidence of whether you did it well or not right away. The effort, the reward — that loop is just so instant and real and gratifying to work with your hands.”

And it’s not about feeding himself. For Ladsariya, the joy of cooking comes from feeding others.

“It’s the bringing people together, the community and all of that that food enables,” he said. “I’m able to provide a great meal and bring together people with something that scratches my creative desires.”

The lessons he brings back to work: Ladsariya finds a connection between how he thinks about cooking and how he thinks about startups.

“Cooking is really about high quality ingredients and not messing it up,” he said. “More often than not, bad food comes from bad ingredients. And I think the same is true for startups. As long as you have a good group of people, they can do something good. People are the ingredients of startup building.”

Furthermore, whether it’s a dish he’s never made or a startup idea that’s especially daunting, it’s best not to overthink things and just do it.

“It’s easy to be intimidated and say, ‘Oh, I have no idea how to do that or where to even start,'” Ladsariya said. “But with a little bit of research and work and just committing to it, you can do pretty incredible things.”

Looking for a sumptuous and moist chocolate cake? We have got one for you which is one of the quickest and easiest chocolate cake. Microwave chocolate cake is one-bowl cake recipe and is a savior for those who want to bake a super quick, easy, soft, moist and a rich chocolate cake.

This is a simple, fuss-free, easy to bake microwave chocolate cake perfectlybaked at 5 minutes. I’ve made this cake many times and each time it never disappoints me. So better late than never, finally I decided to shoot and blog it for my readers which was a long pending request. Trust me after the first trial, you are surely going to make this over again!

My very first baking experience was in microwave oven as I was not having the microwave convection oven or OTG. So I used to cook the cake in microwave. It was a great experience with cakes getting ready from 2 to 7 minutes depending upon the types of cake you’re making.

This recipe comes to your rescue. Make this microwave chocolate cake on your own in just 5 minutes. You can make layers and decorate with whipped cream, ganache, cream cheese or simply garnish with fresh fruits, nuts or drizzle homemade chocolate sauce/syrup just like I did.

This eggless microwave chocolate cake gets cooked in 5 minutes. So in total it takes only 15 minutes from preparation to cooking to get a scrumptious and delicious whole cake cooked in no time at all.

WHAT ARE THE INGREDIENTS NEEDED FOR MICROWAVE CHOCOLATE CAKE
Let’s briefly see what all ingredients goes inside this delicious cake and what are the ingredients substitution for making this microwave chocolate cake.
● Whole wheat flour – The recipe uses whole wheat flour. You can use all purpose flour or 50-50% ratio of both.
● Cocoa powder – Used Ossoro’s cocoa powder. ● Sugar – White sugar is used in the recipe. You can use healthier sweeteners like brown sugar, jaggery, cane sugar etc.
● Baking powder
● Baking soda
● Salt
● Oil – Used sunflower oil. You can use any neutral flavor oil.
● Milk – Used coconut milk to make it vegan chocolate cake. You can use any dairy milk as well. Recommend to use whole milk for extra richness.
● Vinegar – You can used lemon juice instead of vinegar.
● Chocolate truffle essence – I have used Ossoro’s chocolate truffle essence.  You can use other essence like vanilla or chocolate.
For serving:
● Homemade chocolate sauce
● 2 tbsp white chocolate melted

MICROWAVE CHOCOLATE CAKE VIDEO TUTORIAL

VARIATIONS
● If you want to make these microwave  cake even more decadent add in some chocolate chips in the batter.
● You can bake this microwave cake in mugs as well. Pour the prepared cake batter into individual coffee mugs and bake in microwave for 2  minutes.
● You can make this microwave chocolate cake with egg by replacing vinegar and baking soda with 2 eggs and will need to reduce the liquid by few tablespoons. ( 1 large egg will also work).
● You can add nuts and dry fruits in the cake batter.

WHICH BAKING DISH CAN BE USED
Since we are making this cake in a microwave mode and not microwave convection mode so it is very important to note that the container or pan used is microwave safe. Use microwave safe glass ware, silicone ware, plastic ware or ceramic containers. I prefer glass or ceramic ware.
Never use regular metal oven pans for any of your microwave baking.

CAN THIS BE BAKED IN MICROWAVE CONVECTION MODE AND OVEN (OTG)?
This recipe is a versatile recipe so YES you can bake it in microwave convection mode, OTG and even in pressure cooker over a stove. The cake turns out beautifully. If you like this recipe and want to bake it in an microwave with convection mode or OTG (oven toaster griller), you can bake it at preheated oven at 180 degree celsius for 30 mins or until a toothpick inserted in the middle comes out clean. Just remember to preheat the oven for 10 minutes before starting to bake.

PRESSURE COOKER METHOD
Put a stand inside the cooker or pan then preheat it for 5-10 minutes. Remove the gasket and whistle from the cooker cover. Place the cake pan on the stand and just cover the cooker with the lid. Bake at low heat for 40 minutes or until a toothpick or skewer inserted comes out clean.

HELPFUL TIPS WHEN BAKING CAKES IN THE MICROWAVE
● When cooking and baking on microwave at full power it’s important to stop in between and check because timing can differ slightly depending on the microwave. If you are baking a cake check your bake by inserting a toothpick in the middle of the cake, if the toothpick comes out clean, your cake is done.
● My microwave is 1000 watt so the baking time in my recipe is based on my microwave watt. This means that your baking time will vary by either a few minutes more or less depending on your microwave.
● Do not overbake. Keep in mind that in microwave cooking the dish continues to cook for at least another 2 minutes after it has been removed from the microwave.
● It is very important that the container or pan used is microwave safe. You can use microwave safe glassware, silicone ware and plastic ware.

TOPPINGS AND FROSTING SUGGESTIONS
These can be as simple as a tea cake or a snack drizzle with homemade chocolate sauce. Also you can elaborate and make it fancy depending on the occasion or your mood. Here are a few toppings if you would like to give it a try:
● You can use a simple sugar glaze for topping
● Simply dust with powdered sugar.
● Drizzle or spread a generous amount of chocolate sauce to make it more decadent and chocolatey.
● Sprinkle chopped nuts and dry fruits
● Make layer cakes with fresh fruits or fruit crush filling and frost it with your choice of frosting like whipped cream, cream cheese or buttercream.
● You can also top the frosted cake with seasonal fruits.
● You can use chocolate ganache for filling and frosting the cake.

9☆ 1 cup = 240 ml
☆ 1 tablespoon = 15 ml
☆ 1 teaspoon = 5 ml           
☆ Dish size = 1 litre capacity

Ingredients to make 5 minutes  chocolate cake:

1 cup (125 grams) whole wheat flour
¼ cup (30 grams) cocoa powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup sugar (100 grams)
¼ cup oil (60 ml)
200 ml coconut milk
2 tsp (10 ml) vinegar or lemon juice
¼ tsp Ossoro chocolate truffle essence (You can also use vanilla essence -1 tsp)
Homemade chocolate sauce as required for glaze
2 tbsp white chocolate chip melted

Step by step pictorial instructions to make 5 minutes chocolate cake:

Take a microwave safe bowl or pan and grease it with oil or butter.  You may line a parchment paper as well. Keep aside.

In a mixing bowl add in the milk, sugar and oil. Stir nicely and let the sugar dissolve.

Take a sift and add in the flour, cocoa powder, baking powder, baking soda and salt. Sieve the ingredients together. Gently fold and make a smooth batter.

Add in the essence and vinegar or lemon juice and give a gentle quick mix.Pour the batter into the greased cake pan and tap the pan couple of times to release any air bubbles.

Place the cake pan in the microwave and microwave on high powder for 5 minutes. A toothpick inserted should come out clean. If it’s not done then bake for 1 minute more. Keep an eye from 4 minutes onwards since the microwave heat differs from one another.

Take it out of the microwave and allow to stand for about 10 minutes. Demould it and allow to cool down completely.

Once the cake is completely cooled down, spread the chocolate sauce over the cake. Randomly drizzle the melted white chocolate and swirl it with a toothpick or skewer.

Cut and serve. Enjoy!

NOTES:

Ingredients

  • 1 whole Tri-Tip roast (untrimmed)
  • Killer Hogs TX Brisket Rub (or salt and coarse black pepper)

Instructions

  1. Don’t Trim a Thing
    Leave all the fat and sinew on that big, beautiful tri-tip. That’s how Mr. Al Frugoni—the king of live fire—does it, and we’re sticking to it.
  2. Season Heavy
    Hit it generously with TX Brisket Rub (or your favorite salt & pepper blend). Don’t be shy—we want a big crust.
  3. Build the Fire
    Start a fire using wood splits and lump charcoal. Once you’ve got a solid coal bed, rake the coals under your cooking grate and let it heat up.
  4. Sear Over High Heat
    Place the tri-tip directly over the hot coals and press it into the grate for good contact. Flip every 3–4 minutes to build a deep sear and bark on both sides.
  5. Finish Over Medium Heat
    Once seared, move it a bit higher above the coals or to indirect heat. Keep flipping every few minutes until the internal temp hits 125–130°F for medium-rare.
  6. Rest and Slice
    Let it rest for 20 minutes. Then slice it against the grain—split it down the middle crook first, since the grain runs different ways.

 

This tri-tip is all about cooking beef the old-school way—over a live fire. Season it heavy with salt and pepper, then drop it straight over hot coals on a Santa Maria grill to build that smoky crust. Flip it often, ease it up off the heat, and cook to a juicy medium-rare. Rest it, slice it thin against the grain, and you’ve got bold flavor, tender beef, and a recipe built for the backyard fire pit or grill.

This method cooks some FIRE ribs really fast. We use the charcoal and the grill to impart some serious flavor – and we baste the ribs the entire cook so they come out juicy, tender and oh so delicious!


Ingredients

  • 2 slabs St. Louis Cut Spare Ribs
  • 1/4 cup Killer Hogs Hot Rub
  • 28oz apple cider vinegar
  • 1/4 cup fine sea salt (feel free to add less salt to suite your taste)
  • 1/4 cup ground cayenne pepper
  • juice from one lemon

Instructions

  1. Trim the excess fat and remove the membrane from each slab of ribs.
  2. Season the ribs on both sides with a light coat of Killer Hogs Hot Rub.
  3. Prepare a charcoal grill for 2 zone cooking at 300°F.
  4. Place the ribs over the direct heat side of the grill – the cool zone is just in case you need to get them away from the fire. These ribs cook over the direct heat side the entire cook.
  5. Combine the vinegar, salt, cayenne pepper, and lemon juice in a quart mason jar. Shake it well.
  6. Flip the ribs every ten minutes keeping the grilll temperature steady at 300°F.
  7. Once the outside begins to dry out start mopping with the basting liquid using a bbq mop.
  8.  Continue to flip and mop until the internal temperature reaches 198-200°F.
  9. Move the ribs over to the indirect heat side for 5-10 minutes.
  10. Cut the ribs into individual bone pieces and serve with additional mopping sauce for dabbing.

Literally as simple as putting together peaches and cream this no-bake dessert is one that you will love for its simplicity. Enjoy this popular 90’s restaurant dessert, an under-10-minute dessert that can feed a crowd.

When it comes to any fruit, the simplest way appeals to the lazy me. Mostly it is cut and eaten. Otherwise, do something simple with it like add it to a salad. This is exactly what I plan with the first batch of peaches I have hauled. Once the first two or three peaches satisfy my appetite, I need to determine the future for the rest of them. The dessert that easily comes to my mind is peaches and cream.

Choosing the peaches

That perfectly ripened peach is an absolute must for this dessert as it relies on the lovely flavour of the peaches. Look for the round peaches as the tree-ripened ones tend to go round. Smell them! The aroma of that fruit permeates through the soft skin. Then, gently press them. If the fruit yields gently it is ready and juicy.
For this dessert, you can choose white or yellow peaches. yellow peaches give a classic look, that’s all. Flavour wise they are the same.

How to remove the pit from a peach?

There is a line running along the side of the peach. Cut the peach along this line. Now you have a cut to separate them into two halves. Twist one-half and gently pull it away from the other. That one-half separate. Now, wiggle the seed to loosen it. Pull it away from the other half. Remember not to squeeze the flesh much as the fruit is easily bruised.

Ingredients to make this peach dessert

The basic recipe for peaches and cream needs only 2 ingredients. However, this doesn’t do justice to the popular 90’s restaurant dessert. Hence here is my version
Peaches – Once you have chosen and pitted the peaches, slice them or dice them.
Sugar- unrefined sugar works perfectly fine in this case. It is only to keep the pears juicy while you get on further and prevent excessive browning.
Lemon zest-Thi is a small twist that adds a lot of freshness to the dish. As the cream can be pretty heavy the lemon zest helps to lighten the flavour.
Cream- Pouring cream is ideal in this recipe. We are not looking for soft whipped peaks, so no whipping cream is needed. If you want to cut down a bit the calories, try light cream or low-fat cream.
Vanilla- Scrape out a few bits from a vanilla pod and add to the cream. Without te addition of any sugar this gives the simple dessert a fantastic fragrance.

  • 2 medium peaches
  • 1/4 tsp lemon zest
  • 1 tsp brown sugar
  • 1 cup heavy cream
  • few vanilla scrapings

Instructions

  • Wash and slice the peach into pieces.
  • Add it to your mixing bowl and sprinkle the sugar and lemon zest.

  • Mix the vanilla scrapings into the heavy cream and mix well.

  • Scoop the peaches into a glass and top with the cream.
  • Serve immedietly.

Making it healthier

Honestly, this dessert is not for you if you are looking for a healthy dessert. I would rather dunk the fruit in chocolate tofu dip to keep it cleaner and simpler.

Make ahead

This is certainly an easy dessert to put together for a crowd. However, you cannot prepare and assemble this dish much in advance. Here is what you can do the previous day.

Prep the glasses ahead.

Cut the peaches, and mix in the sugar and zest. Keep them covered in the fridge.

Whip the cream with vanilla, slightly so you have a pouring consistency. Keep this covered in the fridge.

Once these are set it is as simple as spooning the fruit and cream into the individual glasses.

What other fruit can I try with the cream?

Given an opportunity, I wouldn’t hesitate to make the cream combo with strawberries, mango, grapes, bananas, melons etc. You can also mix a combination of fruits in this vanilla cream.

Quick, Easy and Delicious! This is a different take on a King Cake. Your traditional King Cakes are a sweet pastry with an sweet icing.

But I’m switching it up and doing a spicy, savory King Cake Recipe using Boudin Sausage and a Crawfish Cheese Dip. Then to really take it to the next level (and make it look awesome) I top it with green onions and crushed Pork Rinds!

Boudin & Crawfish King Cake


Description

Quick, Easy and Delicious! King Cake Recipe using Boudin Sausage and a Spicy Crawfish Cheese Dip, topped with green onions and crush Pork Rinds.


Ingredients

  • 3 cans Pillsbury Buttery Crescent Rolls
  • 4 links Boudin Sausage
  • 1# crawfish tails
  • 1 block cream cheese – softened
  • ½ small onion – diced
  • ½ red bell pepper – diced
  • 3 cloves garlic – minced
  • 16oz white queso (cheese dip)
  • 1 package pork cracklin’ or pork rinds – crushed
  • 45 green onions – thinly sliced
  • 1/4 cup Malcom’s King Craw Cajun Seasoning
  • 2 teaspoons Killer Hogs Hot Sauce

Instructions

  1. Preheat smoker to 350°F; Remove boudin links from casing and smoke for 10-15 minutes to warm through.
  2. Combine room temp cream cheese with half the crawfish tails and season with 2 Tablespoons King Craw Cajun Seasoning and 1 teaspoon Killer Hogs Hot Sauce.
  3. Arrange crescent rolls in an oval shape on a baking sheet covered with butcher paper or aluminum foil to prevent sticking.
  4. Spread cream cheese mixture on center of crescent roll dough and place boudin link over the top. Fold the crescent roll dough around the sausage and cream cheese mixture, forming into the shape of a King Cake.
  5. Place on smoker and cook for 45 – 55 min or until it browns on the outside.
  6. In a pan, sauté red bell pepper and onion until soft. Add garlic and sauce for 1 minute more. Add other half of the crawfish tails and season with remaining King Craw Cajun Seasoning and 1 teaspoon Killer Hogs Hot Sauce. Add white cheese dip and turn off heat. Remove King Cake from smoker. Drizzle the crawfish cheese dip. Top with pork rind crumbs and garnish with thinly sliced green onion.
  7. Serve and enjoy!

How to Cook the Best Baby Back Ribs

If you are looking for a recipe that is easy to follow and gives you restaurant-quality ribs at home, then look no further than these baby back ribs. 

Baby back pork ribs are a great option because they are such a versatile meal. For instance, if you are preparing to entertain your entire extended family and need a dinner that isn’t too labor-intensive, is widely popular among meat-eaters, and has a level of cultural heritage to it (always a great conversation starter at dinner parties). Ribs that fall off the bone are a good choice.

Of course, there is more than one variation of baby back pork ribs, as St Louis rib fans will attest to, so keep reading to find out everything you need to know about smoking baby back ribs.

Baby Back versus Spare and St Louis Ribs

It is important to establish the differences between baby back ribs and St Louis ribs, to avoid any confusion and ensure you aren’t accidentally following the wrong recipe. 

Baby back ribs are cut from where the ribs meet the pig’s spine. They are called ‘baby back’ ribs because they are cut from the upper spine, where the ribs are smaller. 

Spare ribs, on the other hand, are cut from the pig’s belly, so there is typically more meat on the bones. These are sometimes called St Louis ribs when the cartilage has been removed from the bone. Spare ribs are popular because they are easy to season (thanks to the flatter bones) and they have intramuscular fat, which adds flavor. Spare ribs either have a BBQ sauce or a dry rub to create a distinctive flavor.  

Preparation is Key

If you want to enjoy delicious smoked baby back ribs, then you need to start by removing the membrane (“silver skin”) from the bone side of the ribs.. 

Once this is done, season the ribs on a baking sheet. The exact seasoning ingredients will depend upon your tastes but can include ingredients such as black pepper, garlic powder, hickory salt, paprika, mustard powder or kosher salt. If you are in a more flavorsome mood, try seasoning the ribs with red pepper flakes  and onion powder. Alternatively, you can use a little brown sugar to add sweetness

How to Smoke the Ribs

Smoking the best ribs can be done by complete beginners or those more familiar with baby back ribs recipes. Start by smoking the ribs indirectly on the grill (off the heat) or in a preheated oven at 225F for about 120 minutes cook time until a rich mahogany color is achieved.

At this point, spritz the ribs with apple juice, add rub, and wrap with aluminum foil to cook for an additional 120 minutes. Unwrap the ribs, baste with your favorite BBQ sauce (like J-TOP’s Thick and Sweet) and place back on the grill or in the oven at 275F until the ribs are fork tender and the sauce is set.

Allow 10 minutes of rest time before slicing and serving the best baby back ribs to your guests.
