Watermelon Berries Popsicles

Summer time and Popsicles are inseparable. Simple joys of life is what I say! AΒ sense of happiness, coolness, liveliness, and all that goodness bundled on a stick! Not to mention all the pleasing colors and flavors (of your choice) will definitely bring out the happy child in you. As summer holidays kicks in this season, what better way to start treating kids than a healthy fruity popsicle(s)? You may see many such colorful additions on my blog this season.

I am not an ice cream or a popsicle person (yes call me weirdo :)), but I take immense pleasure when I watch people enjoy it! Though these days I have taken aΒ liking for eating GodivaΒ and Magnums iceΒ cream bars a lot!


My kid is a crazy fan of popsicles. Any day better than other calorie loaded sweet treats. So thought of kickstarting it with watermelon berries popsicles. Watermelons have become synonymous with summer and picnics, and for a good reason. Their refreshing quality and sweet taste help to combat the heat and also provide a guilt-free, low maintenance dessert for kids and adults alike to enjoy. One of the easiest treats one can make for their kids :)

So here we go to check the recipe:

Ingredients:

  • 2 cups watermelon roughly chopped
  • 2 tbsp yogurt (dahi)*Β 
  • 1/2 cup berries (took black and blue berries half and half)
  • 2 tbsp honey (or add 1 tbsp sugar as per your taste)*

Preparation:

  • Blend all the ingredients together. (pour it over a sieve to take out any coarseness or seeds)
  • Fill 3/4th of the popsicle mold.
  • Add 4-5 wholeΒ blueberries in the molds.
  • Freeze it for aΒ couple of hours till it is set and ready to eat.Β

notes:* adjust theΒ quantity of honey(sugar) depending on how sweet you want and also theΒ sweetness of fruits that you are using. You can also substitute any ice cream in place of yogurt.

Watermelon, because of its water and fiber content, helps to prevent constipation and promote regularity for a healthy digestive tract. Made up of 92% water and full of important electrolytes, watermelon is a great snack to have on hand during the hot summer months to prevent dehydration.


Blueberries are believed to contain the highest antioxidant capacity of all commonly consumed fruits and vegetables. Low in calorie and high in nutrients, who doesn't want that in this diet conscious era:) They are so good for our health that just add it in your cereals, pancakes or just munch on it! But get it in your system :)

Mango Ice-cream Recipe

(Stuffed mango ice-cream)

Mango Kulfi: Stuffed Mango Icecream: Kulfi in a mango:Β Mango IcecreamΒ is basically rabri filled inside the mango. So, basically, the idea behind this unique version of kulfi is to have a different flavor in each bite. When you have the first bite of this ice cream, you feel the real taste of mango and when you take the second bite, you feel the fusion of kulfi and mango which will increase the level of taste.

Mango IcecreamΒ is one of the most common icecreams which our mothers used to make as the availability of this King of fruit is high during summers. There are a lot of variations in this icecream like some make it by adding cornflour, some make mango shake and then deep-freeze it to set but this kulfi in a mango version is a little different and much tastier as well.

I saw this type ofΒ Mango IcecreamΒ in the market in my hometown. A shopkeeper is cutting down pieces of mango, I curiously saw and strange that he had cut down the seed also and people are enjoying it. Then my mother told me the procedure. This incident happen when I was 10 years old.Β From that time I always want to make this. Now, during every Mango season, I prepared it about 5-6 times and narrates the story to my husband every time.

Let us discuss the recipe in detail: Firstly,Β Use full-fat milk then only it enhances the flavors of Rabri. While making Rabri, I add Bread Crumbs to have instant Rabri but you can skip it and follow the traditional method to make rabri.

Secondly,Β Use of flavors totally depends on you, whether you want to use cardamom powder, rose water, or kewra water. All three tastes are good. Along with flavors, these have a nice aroma as well.

Thirdly,Β Make sure to place the mango correctly in the freezer, it is better to put mango in a glass and then in a freezer. Also, once it sets properly, take it out 5-6 minutes before cutting.

Last but not least,Β this much icecream is sufficient for 2 persons. So, adjust the quantity as per the number of people. Some of the amazing mango desserts are listed below:

Step by step instructions

  • Take milk in a wok and bring it to boil on high flame.
  • Once it starts boiling, reduces the flame to medium. Scrap the sides. Reduce the milk to half.

  • Meanwhile, add green cardamoms to it. This will enhance the taste.

  • As the milk starts thickening, add sugar to it. Mix well.

  • Add chopped nuts. This step is optional. If adding, make sure to chop them finely.

  • Now, add bread crumbs to it. This will immediately give a thick texture to the milk.
  • When the milk reaches the desired thickness, turn off the flame. Allow it to cool down completely.

  • Take a mango, cut its top part. Keep it aside.

  • With the help of a knife, cut slowly from the sides of the seeds. We have to remove the seed without cutting the mango.

  • With thumb and first finger, remove the seed. It will be a little difficult for the first time.

  • Rabri cooled down completely.

  • Fill it in the mango.

  • Cover the mango with the top. Keep it in the freezer for 6 hours or till set.

  • After 6 hours, take the mango out from the freezer. Remove its peel.

Falooda Kulfi (Indian Ice Cream)

Falooda Kulfi is a refreshing dessert. β€œFalooda” looks like rice noodles and they are made with cornstarch or arrowroot.Β  β€œKulfi” is an Indian ice cream. This is a delicacy with street vendors all over India. One has to experience this delightful dessert to appreciate it.Β  You can also serve Falooda with any ice cream of your choice. Try this recipe to enjoy as one of my favorite summertime treats!

Recipe will serve 6.

Falooda Kulfi (Indian Ice Cream Recipe) by ManjulaIngredients:

  • 1/2 cup corn starch or arrowroot
  • 2 cup water
  • 1/2 cup sugar
  • 1/4 cup water
  • 12 strings of saffron
  • 1/2 cup kulfi for each serving, check my web site for kulfi recipe
  • Wide bowl of ice cold water with some ice

Also need sev maker

Method

  1. For syrup boil sugar, water and saffron together, as it comes to boil turn of the heat and stir the syrup making sure sugar has dissolved. Syrup needs to be chilled before serving, keep it in refrigerator.
  2. Add water to corn starch slowly making sure there is no lumps, batter will look like consistency of milk.
  3. Over low medium heat in a frying pan add the batter and cook stirring continuously till corn starch become translution and consistency of thick batter or soft lumpy dough. This will take about 10-12 minutes. Turn off the heat and remove from stove.
  4. Let the mix cool off little bit and pour the hot mixture into sev maker using fine sev attachment. Press the sev maker over ice cold water, and let the sev string drop into the bowl.
  5. Leave the falooda in ice cold water at least for 2 hours before using.
  6. Falooda will stay good for about a week in refrigerator, but make sure falooda stays in chilled water.

Serving the Falooda Kulfi

Use individual serving bowl, first layer the bowel with falooda, drizzle about 1 tablespoon of syrup. Put the kulfi then over the kulfi put some more faluda and finish off drizzling 1 tablespoon of syrup. Falooda kulfi is ready to serve! This just taste great.
