  • Milk - I add full cream milk for rich taste and creamy texture. You can also use toned milks.
  • Custard Powder - I used this as main thickener and gives that soft creamy texture. I like vanilla flavor, but you can try mango or butterscotch also.
  • Sugar - This add sweetness and it balances the mild taste of custard. You can add more or less on it how you want.
  • Jelly - I just added rose jelly cubes, it gives a pretty color and fruity taste. You can use any flavor like strawberry or orange or even mix few.
  • Cardamom Powder - Optional, but it gives mild aroma that goes well with custard flavor. I add only little sometimes.
  • Water - Needed for making jelly. You can follow as per jelly packet instruction.

7.Close with lids and freeze at least for 6-8 hours. I freeze it over night. Then carefully show the bottom part in running tap water, set aside undisturbed for at least 2-3 minutes then slowly pull out the lid.

  • Custard - I usually cook it till slightly thick but still pourable. Once it cools down, it becomes thicker, so don't overcook.
  • Mixing jelly - Always cool the custard completely before adding jelly cubes, else jelly will start melting. I made that mistake once.
  • Sweetness - I always taste the custard before freezing because after freezing sweetness reduces little bit. You can add little more sugar if needed.
  • Unmolding - When removing, I dip the bottom part of mold in water for few seconds and wait before pulling out. It comes out clean and neat.

Kulfi is a rich, creamy and frozen dessert, perfect for summer or for any festive meal. It is made by reducing milk slowly to thick malai and adding nuts, khoya, sugar and little saffron. The texture is dense, smooth and melts slowly in mouth, giving that traditional kulfi feeling.

You can try this when you want special dessert that looks fancy but is actually simple to make. Kulfi take some time because milk needs to reduce slowly, but taste is totally worth it. Kids and adults both love it, because it is sweet, nutty and very creamy. It is bit of work, but so satisfying when you serve and see everyone enjoying it.

About Malai Kulfi

Kulfi is a creamy ice cream, that's rich, flavorful and loaded with nuts. This is made from milk reduced to thick consistency along with khoya and nuts which gives it rich taste. Saffron and cardamom gives it lovely aroma and bit golden color. I usually top it with chopped nuts for extra crunch and taste.

The texture is smooth but also slightly grainy from nuts. You can grind the nuts coarsely or fine depending on your preference. It is thick enough to hold shape in popsicle molds and melts slowly in the mouth. The sweetness is balanced by the natural creaminess of milk and richness of khoya.

Many variations of kulfi exist. Some are flavored with mango, rose, or pistachio, some use condensed milk for faster preparation. But malai kulfi is classic and gives that traditional taste which feels very homely and special. You can even serve it with falooda or just plain after meals.

I usually make kulfi when I have some time in the evening. I prefer to freeze overnight so it sets properly. Showing the mold under running water makes demolding easy.

Malai Kulfi Ingredients

  • Milk - I just used full cream milk for rich taste and creamy texture. You can use low fat milk but malai will be less creamy and a bit thin.
  • Sugar - I used sugar which adds sweetness. You can adjust it to taste, little more or less as you like.
  • Almonds - I have used almonds, ground with sugar and pistachios. This adds crunch and nutty flavor. You can also roast them slightly before grinding, it gives nice aroma.
  • Pistachios - I used pistachios with almonds. This adds color and rich taste. You can also use only almonds if you prefer, it still tastes good.
  • Cardamom - I have used half cardamom. This adds lovely fragrance.
  • Saffron - I added a pinch which gives color and mild aroma. You can increase little more for deeper golden color.
  • Khoya - I used unsweetened khoya which gives richness and thickens to the kulfi. You can use fresh or store bought, both works fine.

How to make Kulfi Recipe Step by Step

1.Grind together sugar, almonds, pistachios, saffron and cardamom together to a slightly coarse mixture, Set aside. Boil milk in a pan.

2.Simmer for 15 minutes till milk reduces. Stir in between to avoid burning at the bottom. Now add nuts sugar mixture.

  • Grinding nuts - I usually grind almonds and pistachios fine. You can just make it a bit coarser if you want some crunch in kulfi.
  • Milk - I boil milk and simmer it slowly, stir often so that it does not burn. This adds natural thickness and creaminess to kulfi.
  • Adding khoya - I add khoya after nuts mixture. This helps malai collect and gives very rich taste.
  • Freezing - I usually wrap molds with foil and insert sticks. Freeze for 6-8 hours or overnight for best setting.
  • Demolding - Show popsicle mold under running tap water for few seconds, then slowly pull stick. Kulfi comes out clean and keeps shape nicely.

Pista Popsicle is one of those summer treats which is very refreshing and tasty too. It is nothing but frozen milk ice flavored with pistachios, essence for that nutty aroma. The creamy taste with pista flavor makes it more special than a normal ice pops.

On hot afternoons, I feel nothing beats a chilled homemade popsicle. It is very easy to prepare, needs just few ingredients and kids always ask for one more. This pista popsicle is also a nice idea to make after a heavy lunch on weekend to surprise family.

About Pista Popsicle

Pista Popsicle is a frozen milk based dessert flavored with pistachios. It is very common to make such ice pops during summer as it cools the body and gives relief from the heat. Pista adds a nutty flavor and also gives light green color which makes it very attractive to see.

In India, pista milkshake or pista milk is already very popular, so turning it into a popsicle is natural. The flavor is creamy, nutty and not too heavy, so you can even have two without feeling very full. Pista kulfi and pista ice cream are other popular variations but this one is more simple to make.

  • Milk - I added full cream milk here as it gives a creamy texture to the popsicles. You can also use toned milk too but it will not be very creamy.
  • Pistachios - Fresh pistachios give nutty taste and light crunch here. I usually grind them coarsely, you can make it fine if you prefer smooth texture. If pista is not available you can replace with cashew or almonds.
  • Pista essence - I have used pista essence which adds a very strong flavor and mild green color.
  • Sugar - Regular white sugar works fine and blends easily in milk. You can even use cane sugar or brown sugar but taste will slightly change.
  • Spice powders - I usually don't add but little cardamom powder can be mixed for extra aroma. It pairs well with pista flavor.

Vanilla chocolate Popsicle is a simple mix of two all-time favourites, vanilla and chocolate. The Popsicle just doesn’t look beautiful, but also the feel of both worlds together is completely special.

The combination of vanilla and chocolate is so good as it is a match made. Homemade popsicles are best as you can customize it according to your liking. This recipe is so simple that even kids can make their popsicles, This way, they are involved in the making and the restlessness involved while it is freezing.

The very first time I made this Popsicle, the idea itself was exciting for my little one. My little one kept opening the freezer door every half an hour just to check if they were ready.

The simple joy of making popsicles during summer is very special to me. I tried my hand with vanilla popsicles first to check if they were truly worth the try, and everyone at home was in love with the Popsicle.

This time, I wanted to add a twist to the Popsicle and added a chocolate layer. It was truly exciting to see both the flavors coming together, where vanilla is simple and light, while the chocolate adds a rich flavor.

Vanilla Chocolate Popsicle Ingredients

  • Milk – This forms the creamy base for our popsicles. For the chocolate layer, mix cocoa with milk. It keeps the base very light.
  • Sugar – It adds the sweet flavour to the milk without making it heavy and balances the bitterness of the cocoa powder.
  • Vanilla essence – This balances the aroma and enhances vanilla Popsicle flavour.
  • Cocoa powder – this brings the deep chocolate flavour to the Popsicle.
  • Choco chips – this tiny burst of melted chocolate adds extra indulgence to the Popsicle.

  • Boil the milk – it is advisable to boil the milk before using it. It gives a better texture.
  • Stirring is important – stirring is important to dissolve sugar and cocoa powder completely before using. Otherwise, it might taste grainy.
  • Freeze the first layer first – it is important to freeze the first layer completely before pouring the second layer. Freezing should be done for at least 1 hour.
  • Tap the mould – tap the mould after pouring to remove the air bubbles.
  • Variations – You can add nuts or sprinklers for variations.

Serving & Storage

You can serve straight from the freezer for the best taste. For easy serving, you can dip the moulds in water for a few seconds. You can gently pull the Popsicle from the moulds. Store the popsicles in an airtight container or cling wrap them inside the moulds so ice crystals don’t form. You can store it for a week for the best and freshest flavours.

Ingredients

For the vanilla layer

  • ΒΎ cup milk boiled and cooled

Notes

  • You can use paper cups for freezing too.
  • If the vanilla layer is not firm then it will mix with chocolate layer so pour the second layer only after the first layer becomes hard.
  • Freezing for at least 5-6 hrs is required but I kept it overnight.
  • For easy demolding – show the popsicle molds in warm water, then pull the stick out slowly to get the ice pops clean.
  • Adjust sugar according to your preference.
