I don't have a recipe for this one I just toss them on the smoker for a quick snack when I'm smoking a pork butt or whatever else that gives me the room (just another reason to upgrade to the Big Joe)

You can use your favorite rub for these or make your own. I drizzle some olive oil and season to taste. This latest round I used Meat Church's The Gospel All Purpose Rub. Let them sit in the smoker for a couple of hours and they good to go. If you like the extra toast version of the Cheez its you will love these.

This isn't your usual BBQ appetizer or BBQ side. The smoked Cheez It's seems to get questioned by your guests until they try them. Definitely a conversation piece so give them a try the next time you have some room on the smoker.

I've been on a bit of a Meat Church kick lately as I purchased all the flavors and haven't been making my own rubs. I've been trying all the different rubs on different recipes to see what all the hype is about and if they are worth it. So far the rubs have been and for about $10 a bottle it can be pricey so make sure to buy in the packs to save money.

This rib recipe is a great one packed with flavor. Has a nice bit of heat but not over powering.

This is like a 2-2-15 minute instead of the 3-2-1 method. Pro tip don't run out of foil or save the foil from the wrap to make the boat. I instinctively opened up and tossed the foil. Not a big deal but it will get messy in the smoker.

Ingredients

  • Pork ribs (preferably St Louis cut)
  • Meat Church's Holy Gospel BBQ Rub + Honey Hog Hot BBQ Rub
  • Meat Church Dia de la Fajita
    • Other great options Honey Hog, Gospel, Holy Voodoo
  • 1 cup of apple juice for spritzing
  • 1 bottle of squeeze butter or 5 pats of butter
  • 1 cup of brown sugar

Optional

  • Your favorite BBQ Sauce. We love Meat Mitch Whomp ( I had some Bone Suckin Sauce)
  • Texas Pepper Jelly Apple Cherry Hab Rib Candy

Prepare your smoker at 275 degrees. We recommend hickory wood for this smoke.

Nashville Hot Chicken Sandwich and Fried Corn on the Cob

What average Joe doesn't love a good Fried Chicken Sandwich? This recipe is by Matt Pittman of Meat Church fame. I've made this in the house in our fryer, a cast iron Dutch oven and my outdoor fryer. The fried corn recipe was an attempt to replicate Mark's Feed Store Barnyard corn. Instead I'm going to call this version Redneck Fried Driveway Corn.

The Recipe!

Ingredients

  • 4 chicken thighs, trimmed (you can sub white meat, but I prefer the flavor of dark. If you go with breast meat I like to slice it in half so it isn't so thick for frying).
  • 4 buns, buttered

Brine

  • 2 C, pickle juice (we use Best Maid)
  • Meat Church Holy Voodoo

Dredge

  • 1 package Meat Church Chicken Fried Breading (sub your own seasoned flour dredge recipe if you don't have ours yet)
  • 2 T Meat Church Holy Voodoo

Wash

  • 2 large eggs
  • 1 C buttermilk (sub milk)
  • 1 T your favorite hot sauce

Spicy Coating

  • 1/2 C hot frying oil (use this from your pan after you fry - or sub melted lard)
  • 2 T cayenne pepper (adjust to you heat preference)
  • 1 T brown sugar
  • 1 T Meat Church Holy Voodoo

Brine\Season the chicken

Brine the chicken in pickle juice for 2 hours completely submerged. I've tinkered with different lengths of time and 2-3 hours is all you need in my opinion. This will give you that Chick Fil A like taste. We source our pickle juice (Best Maid) by the gallon at our local Atwoods.

Remove the chicken from the brine, pat dry and season lightly with our Holy Voodoo.

Prepare your fryer I use a deep cast iron skillet at 325 with peanut oil. Certainly you can use a fryer or whatever you are most comfortable with.

Prep your chicken for frying Make a station with a pan of chicken and then 2 medium bowls where we will place the chicken into the dredge, then the egg wash, then the dredge again. Bowl #1 - Dump contents of 1 package of Meat Church Chicken Fried Breading + 1-2 T of Meat Church Holy Voodoo into a bowl and mix well. Bowl # 2 - Mix the eggs, milk and hot sauce.

Take each piece of chicken and coat it in the Chicken Fried Breading\Voodoo dredge. Then soak it completely in the wash. Then coat it thoroughly in the dredge again.

Next slowly place the chicken into the hot oil and fry until golden brown. We use our Thermoworks Instant Read Thermometer to make sure each piece of chicken reaches at least 165 internal temperature.

Remove the chicken from the oil and place on a paper towel lined plate or pan to catch the oil run off.

Prep your spicy coating Mix the hot oil (some people prefer to sub melted lard), cayenne (adjust this to your preference of heat level), brown sugar and Holy Voodoo in bowl. Careful as this oil is very hot. Spoon this mixture over each piece of chicken to your liking.

We serve these on toasted bun's simply with mayonnaise and pickles. Enjoy!

This is always a family favorite! The think the pickle juice brine is the secret ingredient the sets this recipe apart. The Meat Church Holy Voodoo adds a nice level of heat that isn't over powering. If you are ever wondering if Meat Church rubs are worth it, they definitely are! Which Meat Church rub is the best? That is hard to say as Matt Pittman seems to have a rub for every occasion.

Leonard Botello IVโ€˜s Truth Tater Tot Casserole Recipe

I was searching for the best BBQ side dishes you can make and Leonard Botello IVโ€˜s Truth Tater Tot Casserole Recipe one popped up and its been a staple since. Truth BBQ made Texas BBQ Monthly top BBQ list an Just like the homemade baked beans recipe this is a crowd pleaser. This recipe is curtesy of Inside Hook. Pretty easy to make and as always if you don't have room in the smoker it is great in the oven.

Enough of the Bone on to the Meat!

The Recipe!

Ingredients:

  • 1/2 lb butter, melted
  • 1 can cream of mushroom
  • 6 cups shredded cheddar cheese
  • 2 1/2 tsp Cajun seasoning ( I sub Cajun for Soul Food Seasoning from Food Lion and also add smoked paprika)
  • 2 cups of sour cream
  • 1 can of rotel (I use the fire roasted kind)
  • 1 cup white onion, diced
  • 1 cup bacon, diced, rendered
  • 1 bag frozen tater tots ( the picture above is of tater rounds but shredded works as well. For whatever reason Tater Tots have been hard to come by at my local grocer)

Instructions:

  1. Bake tater tots per directions and mix with all ingredients and four cups of cheese.
  2. Pour into a casserole dish and bake at 350 degrees until bubbly. (About 30-40 minutes).
  3. Top with remaining cheese and cook an additional 15 minutes, using the broiler for the last five minutes or so to get a nice browned top.
  4. Let cool slightly before serving in order to let the casserole set up a bit.

Best BBQ Sides!  BBQ Baked Beans with Meat and Bacon

Normally I try to pick a YouTuber or other "famous" recipe and try to replicate it. This one I've been making it for years. I picked it up at a friends New Years party when he was smoking a whole hog.

I know the picture doesn't do it justice as I'm an average Joe and not a photographer but this is a sure crowd pleaser. Enough of the bone on to the meat... the recipe!

Homemade BBQ Baked Beans Recipe!

! Medium Onion Chopped ( I use Vidalia's)

1/2 LB of bacon (use your favorite- I go for Applewood)

1 LB ground beef ( you can sub an over the top style here or use left over brisket, chuck roast, etc)

1 Can each of Kidney, Great Northern, Butter Beans the 16oz variety. (Bush's or whatever brand you prefer.)

2 Cans of Pork and Beans (I use Van Camps)

1/2 Sugar and a 1/2 Cup Brown Sugar

1 TBL Mustard

1 Cup of Ketchup

Fry up the chopped bacon then remove and toss in the chopped onion till cooked. I like a little char on mine.

Mix all the ingredients and toss on the smoker for 1 hour. If you don't have the room these work great in the oven as well.

Brisket prices to high and spent a little to much on that whole packer brisket? You can forgo the meat and bacon and use the store brand beans and this makes for a really cheap side that will go a long ways and still taste great.
