Pista Popsicle is one of those summer treats which is very refreshing and tasty too. It is nothing but frozen milk ice flavored with pistachios, essence for that nutty aroma. The creamy taste with pista flavor makes it more special than a normal ice pops.

On hot afternoons, I feel nothing beats a chilled homemade popsicle. It is very easy to prepare, needs just few ingredients and kids always ask for one more. This pista popsicle is also a nice idea to make after a heavy lunch on weekend to surprise family.

About Pista Popsicle

Pista Popsicle is a frozen milk based dessert flavored with pistachios. It is very common to make such ice pops during summer as it cools the body and gives relief from the heat. Pista adds a nutty flavor and also gives light green color which makes it very attractive to see.

In India, pista milkshake or pista milk is already very popular, so turning it into a popsicle is natural. The flavor is creamy, nutty and not too heavy, so you can even have two without feeling very full. Pista kulfi and pista ice cream are other popular variations but this one is more simple to make.

The texture is smooth with little crunchy bites of pistachios if you grind them coarse. If you add pista essence it gives strong aroma and mild color too. Some people like adding cardamom also, but I usually keep it plain so that pista taste is more.

I usually make this pista popsicle on weekends or when kids have holiday. It hardly takes time to prepare, only the waiting for freezing is long. But once it is ready, the happy faces makes it worth the time.

Pista Popsicle Ingredients

  • Milk - I added full cream milk here as it gives a creamy texture to the popsicles. You can also use toned milk too but it will not be very creamy.
  • Pistachios - Fresh pistachios give nutty taste and light crunch here. I usually grind them coarsely, you can make it fine if you prefer smooth texture. If pista is not available you can replace with cashew or almonds.
  • Pista essence - I have used pista essence which adds a very strong flavor and mild green color.
  • Sugar - Regular white sugar works fine and blends easily in milk. You can even use cane sugar or brown sugar but taste will slightly change.
  • Spice powders - I usually don't add but little cardamom powder can be mixed for extra aroma. It pairs well with pista flavor.

Expert Tips

  • Milk choice - I have used full cream milk but you can use low fat milk if you like a lighter version. Just note the creaminess will be less.
  • Grinding pistachios - I usually grind it coarsely so that little nutty bites come in each lick. You can grind very fine for smooth texture popsicle.
  • Freezing time - I always keep it overnight for best result. Minimum 6 hours is needed for popsicles to set well.
  • Unmolding - I usually show the mold under running water for few seconds, then gently pull out the popsicle. Don't force as it may break.
  • Mold options - If you don't have popsicle molds, you can use small paper cups or even steel tumblers. Just cover and insert a stick in center before freezing.

Serving and Storage

Serve Pista Popsicle as an after-meal treat or as a refreshing snack during hot afternoons. This goes well with no accompaniments, just enjoy it as it is. You can store leftover popsicles in the freezer for a week.

If using paper cups you can keep them covered to avoid ice crystals forming. When ready to eat, take out and allow a minute at room temperature or dip the mold in warm water to remove easily.

1.Can I skip pista essence?

Yes, you can skip it. Popsicle will still taste good with just pistachios.

2.Can I use almonds instead of pista?

Yes, almonds or even cashews can be used. The flavor will change but it works.

3.Should I use boiled milk?

Yes boiling makes the milk slightly thick and creamy which gives better texture.

4.Can I reduce the sugar?

Of course you can adjust the sugar as per your taste. Just don't skip completely.

5.Can I make this in advance?

Yes you can prepare and freeze it a day before, it stays good in freezer for few days.
